Janita Hinds, the event s sponsor and ramrod, always says that the 3rd weekend in February will be the windiest of the year. She should be given a job with the Weather Service, as February 21st was no disappointment in the wind department. But then wind has never been an obstacle to true blue chili cooks. The Chili Cook Off raises funds for the Richard Hinds Memorial Scholarship which funds scholarships to graduates of Comstock ISD. This year s Cook Off raised a total of $11,405. The first day s festivities were capped off with a Dessert and Art Auction which showcased works from area cooks and artists, which raised over $2000. The Scholarship Fund currently helps 10 Comstock graduates that are studying in 5 different colleges or universities. This fund would not exist if it wasn t for the hard work of Janita Hinds. Her dedication and hard work has made this scholarship fund into one of the best local scholarship funds in West Texas. The school s heartfelt gratitude goes to Mrs. Hinds for all of her hard work on behalf of the graduates of Comstock ISD. Thanks to all that made the Cook Off such a great success. Chili Appreciation Society International Inc. P.O. Box 859 Fredericksburg, TX Mountan bike riders at the CASI site lining up for the 2009 race TERLINGUA, TEXAS Weather perfection glowed on 441 mountain bikers pursuing the finish line of the 2009 Starlight Mas O Menos Mountain Bike Endurance Fest produced by Desert Sports. Rolling wheels and spectators filled the Chili Appreciation Society International site. 100K pro winners were Bryan Fawley (Austin, TX team Park Place Lexus) with a time of 04:08:05 and Rebecca Rusch (Ketchum, Idaho team Specialized/Red Bull), breaking the women s record by 6 minutes with a time of 04:45:25. Bryan and Rebecca also won the New Revolution King and Queen of the Hill, by being first to top the gnarly Tres Cuevas Climb a 15% grade of adult-size rocks. They also won the Starlight Theatre Fastest Man and Woman Award. Hula hoopers, cheerleaders and jammin musicians waved participants around the track including home turf Team Desert Spots. In the 100K, Mark Yuhas (BBNP, TX) placed 5 th with a time of 05:37:54. Mastering the 50K loop was Brad Butler (Alpine, TX) placing 2nd with a time of 02:28:42. 2 Page 2 Terlingua Trails April 2009 From the President Spring has sprung! You can always tell because the trees are budding, flowers are starting to bloom, and there s pollen everywhere. There s one other way to know it s spring. The Upcomings listings in the Terlingua Trails become longer and longer. Reflections from the ED Here it is; the chili year is half over!! Here is hoping that all of you are racking up the points and cooking a lot of chili. The weather in Texas has finally been nice enough that you can cook without your gloves and heavy coat. And it won t be long until we start complaining about how hot it is! This is good, as it indicates that even though the economy may not be the greatest, folks still are out cooking chili and helping those charities which the cookoffs benefit. From March through June, there are 11 automatic qualifier cookoffs and 23 Pod cookoffs. During this same period, a few of the granddaddy cookoffs include the 39 th Annual Texas Ladies State, 38 th Annual Howdy Roo, 36 th Annual SAP-CASI, 33 rd Annual Cowtown, 31 st Annual Pasadena Pod, 30 th Annual Top of Texas, 29 th Annual SOT Pod, 28 th Annual Rose City Pod, 27 th Annual Sightfest, 26 th Annual Colorado State, 25 th Annual Wichita Falls American Legion, and 24 th Annual Wyoming State Cookoffs. Houston Pod, the oldest CASI Pod, is also holding their annual Pod Cookoff; don t know which number it is, but I m sure it s a big one. It s enouraging to me when I see cookoffs of this caliber still being held after all these years. This indicates a commitment by Pod members and cooks alike which is not found in many organizations these days. Before you know it, the Great Peppers Meeting will be here. Bucky Seelig and Ken Rodd have announced that they will not be seeking re-election to the Board. Future issues of the Trails will include job descriptions, not necessarily for an office, but for the various jobs performed by the Board, as well as other information relative to serving on the Board. Please consider serving CASI as a member of the Board of Directors. If you have any questions, don t hesitate to ask one of us or even one of the past Directors. I ll be cooking at Texas Ladies State and in Louisiana, Alabama and Florida during the next month and hope to see you at one of these cookoffs. Important Insurance Notice If you are holding a cookoff, please make sure the venue has their own insurance before having them listed as an additional insured on the CASI certificate for that event. Holding a cookoff at a location that does not have insurance, and basically sharing the CASI insurance for their liability, could have catastrophic consequences to our insurance and ability to continue holding cookoffs. The purpose of CASI insurance is to protect CASI and is not to protect those too foolish to protect themselves. CASI Board Several things were brought to my attention last month. One is the rule about signing your ticket. The rule states Each chili cook must sign the secret ticket slip in ink with first and last name at the time the judging cup is issued and initial Official Entrants List that the cup was received. This does mean that it is to be signed. It should not be Our Regional Referees need to ensure that if they assign a referee to a chili cookoff they let the promoter know who it is and how to contact that person. This will help make the cookoff go a lot smoother for everybody. We have had several requests for new cookoffs in several areas. When I receive an inquiry about how to have a chili cookoff or where there is a cookoff in a specific area, I always send the answer back, not only to the person, but to the Regional Referee. Thank you to those Referees to whom I have sent these contacts for following up and not only contacting the person, but assisting them with their needs. I have had several comments on the blog. Please send me your comments and suggestions. I am still new at the process, but I am learning more about it every day. 3 April 2009 Terlingua Trails Page 3 TallyWhackers When I became the CASI TallyMaster, one of the things my predecessor, Elton Homesley, warned me about was the penmanship of the American people. I didn t worry about that too much. I thought Elton may have been exaggerating since I wouldn t get paperwork from everyone in America. Also, my career in the engineering field had exposed me to the worst handwriting in the English speaking world. But I soon learned he was right. We focused on that area in the early years and, while the problem hasn t been eliminated, it has become manageable. However, a couple of recent examples have made me think it s time to mention it again. First of all, let me say that having poor handwriting doesn t make you a bad person; it should just preclude you from recording winners at a chili cookoff. I should point out that CASI holds the cookoff referee responsible for the accuracy of the cookoff paperwork. The condition of the paperwork is a reflection on you. Poor legibility can create many problems, not the least of which is causing me to enter the wrong person as a winner. It is especially troublesome when the person in question is a new cook and I would be creating a new CIS record for them. Not being able to read a name correctly could cause me to create a new record for an existing cook. My backup system is the Entrants List. If it is in poor condition, that just increases the difficulty of getting the results right. It has now been ten months since we posted a delinquent cookoff. That is just outstanding work by our CASI referees. Keep up the great work. Bill Pierson CASI TallyMaster Wanted: Krazy Flats Coordinator The Board of Directors is soliciting applications from anyone interested in being the Krazy Flats Coordinator during TICC The Krazy Flats Coordinator will work under a CASI Board member and may solicit volunteers to work in Krazy Flats. Job duties include: > Cleanup of Krazy Flats Concession and Pavilion Areas prior to and after event > Set up of tables and chairs and tear down at conclusion of event > Securing ice from ice trailer to stock freezers prior to event > Securing beer and icing down stock > Stocking concession items for sale > Selling of wristbands to early arrivals in Krazy Flats > Replenishing ice and beer stock, when necessary > Work with CASI Treasurer on cash/inventory reconciliations and pickups > Ongoing cleaning of patio/concession area > Packing of all unsold merchandise and beer at conclusion of event > Preparing and coordinating Volunteer schedule > Meet and greet sponsors visiting Krazy Flats Saloon > Within two weeks after event, submit report to CASI Board outlining operations, suggestions, concerns, etc. If you are interested in further information or wish to submit your name for consideration, please contact Janice Miller at garjans@suddenlink.net or by phone at Remember Loved Ones CASI INSURANCE Please make note: the contact for obtaining insurance certificates for cookoffs has changed. The deadline for publication is the 15th of every month. The Trails goes to the press on the 16th. If information is not received by the 15th, your ad will not appear in the next edition of the Trails, it will appear in the following month.. The rule book states that your ad must appear in the month prior to the event. SO, if you are having a cookoff in the month of June, you must send in your information before the 15 th of April so that it will appear in the May Trails, which is the month prior to the event. Any cookoff that fails to appear in the month prior to the event will be placed on Advertising Probation. I am currently a senior at Texas Woman s University with an overall GPA of My major is Family Studies and upon graduation in December 2009, I will have completed my Bachelor of Science Degree in Family Studies in a short 3 1/2year period and have a Provisional Certification as a Family Life Educator. I plan to continue my education immediately following graduation to begin work on my Master s Degree in Applied Behavior Analysis. Upon completion of my ABA degree, I plan to work with autistic children and their families. I am very proud to represent CASI as a scholarship recipient. My family has been an active part of the chili community since prior to my birth. My grandparents, Bob and Doris Coats are long time chili cooks and both are past CASI world champions. My mother, Dusty Hudspeth began cooking chili when she was my age and has served as an officer on a local level and is a past ICS world champion. My father, Ken Hudspeth, served as CASI Executive Director for a number of years and was on the CASI Board of Directors when the Terlingua cook-off was moved to its current location. I hooked up the boat up to the truck, and proceeded to back out into a torrential downpour. The wind was blowing 50 mph, so I pulled back into the garage, turned on the radio, and discovered that the weather would be bad all day. I went back into the house, quietly undressed, and slipped back into bed. I cuddled up to my wife's back, now with a different anticipation, and whispered, 'The weather out there is terrible.' 14 Page 14 Terlingua Trails April 2009 Poster Rules and Guidelines Bess Best CASI is looking for a unique, creative design that embodies the essence of TICC and CASI. Artwork must be original and should include bold colors. The dimensions of the two posters will be 18" X 24" and 11" X 17". Submissions do not need to be that size, but they must maintain that proportion. The 11" x 17" poster is an informational poster. Copies of last years posters will be made available in PDF format upon request. These posters may be used as a guideline for some of the content required in the design. Winning designs may also be used for souvenir TICC shirts. All entries should include in the title, 43 Annual Terlingua International Chili Championship, and the date, November 7, It must also list the names of the current Board members and include the CASI logo. Designs may be sent electronically in a standard graphic format (PDF or JPG) or may be a hard copy, suitable for scanning. Pictures of last year s winners and sponsor logos will be made available and must be added to the poster design before printing. Changes to the wording and design may be requested by the Board. Writing to you this morning from the beautiful enclosed porch of our retirement home located in gorgeous, but chilly, Lamar, Missouri. It is not that uncomfortable out here this morning. Harry has clear plastic nailed to the openings, we keep a throw rug down at the bottom of the door, and with the two electric stoves going, it is not bad. We have been wanting to put screen wire over the openings for the summer but seems like we get a few dollars ahead and Harry spends it elsewhere. The old timers in this part of the country have the saying, If the Month of March comes in like a lion, it will go out like a lamb or vice versa. Whichever way you want to say it, I think the lamb or lion came in wearing a coat. Who knows? Come the first day of spring, we may be going to cookoffs in short sleeves and shorts. I remember several years back when Harry and I attended the St. Patrick s Day Chili Cookoff in Kansas City. It was held in the City Market Area. We went up on Friday afternoon, checked into a hotel that was within walking distance of the cookoff, and walked, toured and took in the sites of downtown in short sleeves. What happened overnight I don t know, but we went up there only taking lightweight coats and Saturday morning was bitter. The people holding the cookoff had put up a big tent for us to cook under with sides on it and those bullet-type kerosene heaters inside. That was nice and it did make being inside the tent somewhat better than outside, but with the heaters creating warm air, and warm air rising, when it came to the top of the tent moisture formed since it was cold outside. Everywhere there was a seam in the tent, water collected and dripped down on the cooks (and, yes, we were under one of those drips). Still didn t keep our hands and feet warm. I am not sure who placed where in the standings; the main thing I remember was it was COLD and Carol West was wearing some type of blue parka jacket or whatever it was. It was more than we had brought from Lamar. It is a 2-hour plus drive from Lamar to KC, and I think we were home for an hour or more before we ever got thawed out. I ll bet Carol and Harvey West, along with Ray and Pat King, remember this cookoff. They had come from the warmth of Texas and felt the cold worse than Harry and me. I bet each of you has a cold weather cookoff story and I would love to hear it someday if and when we cross paths. Speaking of chili cookoffs, Harry and I are enthused about the outlook for chili in our area. We have a new Chili Pod that has been formed and will seek sanctioning at the Great Peppers Meeting this fall. It looks like between the MO/KAN Pod and the newly-formed Gladiator Pod that there are going to be several new cookoffs, along with the regular cookoffs, in our area this summer and fall. I know the economy is not the best right now, but things are really looking up at the Detail Shop if the weather ever fairs up. That is good because our chili cooking money comes from the extra we bring in thru the shop. Perhaps, and just perhaps, this will just be the year of Harry and Bess return. Cabin Fever hasn t really hit us this year as bad as some years in the past. Since the latter part of January, we have been going thru the La Nina cycle. For every three or four cool or dreary days we have, we have been followed by several of these nice days that make you want to think of more outdoor activities. I have had so many things going I really haven t discussed weather in detail with Harry. Next week is Spring Break for the High School in Lamar and a week from this Saturday is the big cookoff in Pittsburg, KS, so you wait and see - cold/snow/ice, you name it. In closing, I want to apologize for not having a column last month. So much just hit all at once and here we are a month later and things are still not back to normal. For the past month, we have been putting in 16 and 18 hour days, 7 days a week. Bess continued on Page 16

15 April 2009 Terlingua Trails Page 15 Pierson Announces Re-election Bid Recent events in my life have caused me to examine what is important to me. CASI is important. Although not number one, it is very high on my list. For that reason, I am seeking another term as a member of the CASI Board of Directors. I am currently the CASI Vice-President but am better known as the TallyMaster, a position I have been fortunate enough to have for several years. It has been an honor and distinct pleasure to serve CASI as TallyMaster. As TallyMaster, I get to communicate with the cooks and show teams, and the CASI referees on a regular basis. I also frequently interact with the other Directors (especially membership, Upcomings and the Executive Director) on cookoff issues. I can honestly say, I enjoy these duties. But there is more to being a Director than just being the TallyMaster. As a CASI Officer, I am looked to for leadership on issues dealing with the well-being of the organization. Yes, CASI is important to me, but it is also important to our many members. We have an obligation to the membership which is a responsibility not to be taken lightly. Pierson continued Over the past couple of years we have lost, through retirement, a tremendous amount of leadership and experience; and we will lose more this year. I want to use my experience to lead and guide the next leaders we will elect. As TallyMaster, I ve also served on the CASI Rules Committee. This is not a position people aspire to, but it is necessary to insure our cookoffs are conducted fairly and in accordance with CASI Rules. I feel I have approached this task with fairness and the best interests of the cooks in mind. I also serve as chairman of the new Events Committee. It is exciting to be part of something new. To get this started and watch it grow into an asset of CASI will be challenging and rewarding. The Terlingua International Chili Championship is our most important product. It s why CASI exists. We are in a time where the economy has presented us with challenges to continue to make TICC a world-class premiere event. I feel I possess the experience to help guide us through some difficult times. Because there is work to do which I feel I can help accomplish, I will seek re-election as a CASI Director at the Great Peppers Meeting in Midland, Texas this September. Admirals on board included: Senior Admiral Duke Walton, Admirals Larry Burruss, Walter Caldwell and Don Meehan. Admiral Ralph Hay was represented by his lovely wife Dee. With family and friends looking on, Lynn received his Certificate of Admiralty, signed by Governor Rick Perry, blue blazer, yachting cap and silver kazoo! The grand proclamation emphasizes the Admirals duties to assist in preservation of the History, Boundaries, Water Resources and Civil Defense of the State. Admiral Lynn will be especially responsible for protecting all bodies of water within his jurisdiction, including but not limited to swimming pools! To The Fleet! Anyway folks, things will get better. It ll take a while. I m gonna have to cut my article short this month. I just ran out of Engles. Please get the idea out of your head that something is always going to happen to the other guy, not you. Go get you a camera, if you don t have one, or get someone that has a video to come in and take pictures or video everything you have in your house or business or mobile home, etc. That is something that Junior and I had talked about doing down at the church, and I didn t practice what I preach. You have no idea what a difficult and tremendous task it is to try to make an inventory list for insurance. As Caretakers and Maintenance, we were in and out of that church or around it seven days a week; still hard, don t leave anything to memory. Besides, insurance people like pictures better than words. Harry sent a couple of pictures to Bucky of the fire (see Page 24); and we will have a 2009 Missouri State. We re trying to work St. Mary s into the picture and would like to see as many as could afford to travel to come support us. I think I have probably troubled you long enough this month so better get out of here. 17 April 2009 Terlingua Trails Page 17 NOBODY TOLD ME Another spring-like day is visiting us here in the frozen northland. In fact, it s warmer here in Kansas City than just about any place in Texas. That makes me really happy because it means that maybe I wasn t completely demented when we moved here from Ft. Worth about 30 years ago. As you can tell, I have absolutely nothing to write about today, so I m going to ramble amongst the jungles of my mind for a few words. If you re expecting some deep thoughts or profound insights, I m sorry. Such things are beyond my powers on good days and certainly on early spring days. Some of the bike race campers utilizing the CASI site during the event Mas O Menos continued from Page 1 Braving the difficult Shimano Youth Kid s Kup course were 19 youngsters including Caelan Devine-Ryan, age 5 (BBNP), Pruitt Urbanczyk, age 5 and Walt Urbanczyk, age 3 (Alpine), Carmen Tinney, age 12 (Terlingua) and Laine Hickle, age 5 (Terlingua). Lights curled through the desert on the Nite Fun Ride and record numbers met at Lajitas Resort for the Big Bend Ranch State Park Fun Ride. The event was wowed with the Austin Bike Zoo, who brought their creations for folks to ride including an 80 rattlesnake and an outstanding diaphanous butterfly. For the third year, this event was listed on the USA Cycling Mountain Bike Ultra Endurance National calendar. The Mas O Menos was part of the 2009 Hill Country Bicycle Works Texas Mountain Bike State Championship Marathon Series and racers could also earn points in the Cycle Progress/Pivot Texas State Mountain Bike Championship Series. In Memory of: Ken Hudspeth August 14, 1945 January 14, 2009 For those of you who remember Ken, I would like to let you know that Ken passed away on January 14, His service is scheduled at the Dallas/Fort Worth National Cemetery, 2000 Mountain Creek Parkway, Dallas, TX on Wednesday, March 18 at 2:00PM. Ken was very involved in CASI chili from the early 1980 s until the early 1990 s. He served as CASI Executive Director from He was on the Board of Directors that selected the current CASI site at Rancho CASI de Los Chisos and was instrumental in establishing the Old 320 sites. Ken held other various offices in Cowtown, DAM and TOT Pods. He also served as the chairman for the 1985 Great Peppers meeting held in Dallas and was instrumental in the Great Peppers for One Terlingua forum held during that meeting. Ken established the Texas Open Committee that was responsible for working with the Lewisville Parks and Recreation Department to host the Texas Open Cook-off when it was held at Lewisville Lake Park. Ken was a Vietnam Veteran, serving in the United States Navy on active duty from 1963 to 1966 and as a reservist from 1966 to He leaves behind two children, Kristopher Hudspeth and Kassandra Kasey Hudspeth and two beautiful grand-daughters, Aydan and Adyson Hudspeth. Dusty Hudspeth For some years, I have had a strong urge to go sit down with each of my highly experienced friends and let them tell me of all the things that used to be. My friend, Russ, was born before the Roaring Twenties and lived through the Great Depression, the Age of Flight, and the Space Age. He s lived through a lot more than that, but the important thing is that he has lived a lot! He s done so much, overcome so much, and seen so much. So, all you young guys, go forth and find an old guy and learn about life. All you old guys, talk to some young guys and learn from them while you teach them. You ll be surprised how enjoyable it is. Ken Rodd invited me to join the Friends of Krazy Flats on Facebook. I ve been hearing all sorts of stuff about Facebook, so I accepted Ken s invitation. Now I m trying to learn how to use this phenomenon. It s another way to lose myself so that I don t accomplish anything my wife wants me to do. I m having similar experiences with Twitter, which seems to be a place for even more foolish comments. Then there s another one called Linkedin, that claims to be a place for professionals to meet and interact. I don t believe it defines professional anywhere, so I guess I ll fit in. It can t be any more anesthetizing than the many meetings and seminars that I attend. I expect all of those sites will turn out to be a lot of fun, once I learn what to do. Speaking of fun, an old cookoff has been resurrected in this neighborhood. Several years ago, we had a cookoff in Frontenac, Kansas, coupled with an event called The Blessing of the Bikes. A Priest, one who presumably liked motorcycles, invited all the motorcycle riders to come to town and be blessed. He prayed for safety and good times and gave thanks for the freedom to ride. The event attracted a huge crowd and more motorcycles than I could count, along with a good number of chili cooks. For some reason, it was suspended for a while, and now it s scheduled to happen on May 3 rd in Arma, KS. Good things happen in small towns. I just received an entitled 24 things about to become extinct in America. I ll have to admit that most of them don t bother me one way or the other, but some are interesting. Things like Yellow Pages may truly disappear, but for my money, it s because the print has become so small that I can t read most of the listings. Other disappearing items might include answering machines, film cameras, and the milkman. He also mentions mumps and measles as on the way out, for which I am grateful. Now if we can destroy cancer and heart disease, I ll be happy. One thing that I think will survive for a long time is this passion of ours for cooking chili. I think that we could be growing a lot faster if the majority of the world just knew that we exist. Seems to me that there is a lot of enthusiasm among normal people, but they just don t know how to start competing. Maybe you can think of the way to make it easy for others to get involved.
