3 April 2011 Terlingua Trails Page 3 From the President Reflections from the ED As I thought about what to write this month, my thoughts turned to when I first entered the chili world. It wasn t so much to cook a pot of chili but to provide entertainment for the public who came to the cookoffs. My first love was showmanship. After receiving many critiques on my pot of chili, I finally began to place cooking. Showmanship still remains near and dear to my heart. As far as I know, showmanship rules & guidelines have changed very little over the past 28 years that I have been participating in cookoffs. However over the last few months, I have become aware of subtle changes that are occurring even though no changes have been made. Showmanship is a two-hour period unless unusual conditions are present. I received information that an automatic qualifier cookoff was recently held that did not follow the 2-hour rule. Evidently the show judges did their judging within the first hour or so of the cookoff, and some of the show teams were advised that this had taken place. As a result, those show teams broke down before the 2-hour period was over. The rule requires all show teams, the head show judge, and promoter to agree to the period reduction. Obviously, this didn t happen. In another instance, a flyer was distributed for an upcoming cookoff stating that show would be an hour and a half period. This does not correspond with the rules. Another problem is the lack of a show team meeting at the cookoff. While a meeting is not required, there are many cooks new to CASI and showmanship. We shouldn t just assume they are aware of all the showmanship rules. The rules do require that every showmanship judge be given an explanation of the criteria and scoring for showmanship. In the old days, the judges were advised to rove among the showmanship entries at various times in order to ensure fair judging. While a show team might have a large crowd in the first 30 minutes of judging, that same show team might have no crowd during the remainder of the time. Let s assure judging is fair and above board to all show teams. Another area of interest is use of sound systems during showmanship. The rules don t address amplification, however the Guidelines do. Showmanship teams may use battery-powered amplification with limited volume so as not to interfere with other contestants. Does this mean a generator may be used? A generator is not battery-powered amplification. This must be addressed. Some confusion exists relative to the show team captain. Is the captain required to be at the cookoff for the show team to compete and earn points? Confusion has existed in this regard, too. I think the time has come for Showmanship to again be taken seriously at cookoffs. In order for this to happen, the Great Peppers need to review the Rules and Guidelines and reach a consensus. Are Guidelines really necessary when everything can be covered in the Rules? Are the rules as written sufficient or do they go far enough? A chili cook wants to know their pot of chili was judged fairly. Likewise, a captain or show team member wants to know all show teams were judged equally. I urge CASI show team members to share your feelings with your Great Peppers, so proposed changes can be made to the Rules, if needed. I plan to speak with my Great Pepper in this regard, and who knows, you might see me back in showmanship next year. Spring is here finally! There are a lot of chili cookoffs planned for the next few months. Many of these cookoffs are new this year and we are excited to have requests for a CASI cookoff. When I get these new requests, I identify the Regional Referee for that area and send this information to both the Regional Referee and the requester. The Regional Referee will let me know that they have made contact and that they will assist this requestor. Cliff and I have just returned from Arkansas State Chili Championship. We had a wonderful time. It started with the cook s party on Friday night and ended Saturday afternoon. What a great time to make this trip. The trees are all in bloom! We want to thank all of the cooks for making us feel very welcomed! A BIG thanks to Bruce Smith and his group. They did an outstanding job. We had a very special guest, Willem Fijten from the Netherlands. He is the Product Developer for Research & Development for the Mars Food company at the Europe division. He had contacted me and wanted information about chili and our competitions. He was flying to Boston for a meeting and had several days of free time. He flew into Little Rock on Friday evening and joined us for the cook s party. He then judged chili on Saturday. It s time to think about the poster for TICC. The guidelines are posted on the blog and are in this month s Terlingua Trails. There are a lot of members who are artist. We look forward to having you enter this contest. Has your or address changed and is not correct in CIS? If you will send me your information, I will update your record. This is really important for the Great Peppers and the Regional Referees. From time to time I send information electronically to these members and I am getting back a message that the address in undeliverable. Do you need a CIS log in? If so, please send me a request. I know that this past month we have had problems with our Web Site. This was the result of an upgrade in software. It should be corrected. Thank you for your patience during this time. Poster Contest Guidelines When designing the piece of art, please keep in mind that the poster is a vital element to the success of the event. The artwork that is chosen will not only become the official poster of the Terlingua International Chili Championship, but it will also possibly add to the development of the retail merchandise. The artist should design an initial draft of poster artwork. If selected, the artist will work with CASI staff in making changes and developing the final piece. On January 15th and 16th, the 2011 Estes Park Winter Festival was held in Bond Park in beautiful Estes Park (at the eastern edge of Rocky Mountain Park). This year we had a bigger (and heated) tent and it was still not large enough to hold the multitude of people who came to the chili/wine/beer event on both days. What could be better? Tasting various chilies and sampling beer and wine from Colorado establishments! Just to give you an idea of how many were there on Sunday for the CASI red, Green Chili and open competitions, we had 19 CASI Red, six green and ten open chilies with many of the cooks bring extra chili to serve the masses of spectators. In all, we had over 100 gallons of chili to give out and it was all gone in several hours. The organizers are already planning for next year s event which is scheduled for Martin Luther King s weekend! Think about joining us next year for this special event! 17 April 2011 Terlingua Trails Page LA State Championship & 20th Annual St. Jude Cookoff After dodging a threatening ice and sleet cold front that interfered with travel from Texas and Arkansas throughout the week, leading up to the LA State Championship and 20th Annual St. Jude CCO, February 5th broke cool, blue, and crisply sunny and we were in business! Folks traveled up Thursday from Texas and down from Arkansas and from Georgia, 550 miles away, as somehow Lane and Lynette Blair joined the electric and happening festivities! Of 71 preregistered chili cooks 61 survived to join us for yet another stunning cookoff. As a critical crowd appeal segment of our world-shattering St. Jude Auction we entertained over 1,200 folks! Our $1,500 Platinum Title Sponsor, Aaron s Sales and Lease, joined our two (2) Gold Sponsors, the Louisiana Beef Industry Council and Minden Medical Center and our Silver $250 Sponsor, Snap-On Tools, along with a host of others to spur another record donation of $5,010 to the 4-day St. Jude Auction occurring inside our Minden, LA Civic Center. Tasting cup sales never stopped! Take-out chili sales were brisk. They both added income to the amount we raised for charity! We appreciate our Goody bag sponsors and the first sixty (60) registrants were the envy of all with their great bags. Numerous CASI cooks bid upon raffles and auction sales and several left happy winners in that regards as well! Minden, LA (Population 13,062) refused to relinquish its revered position as the #1 fundraiser community PER CAPITA in the W-O-R-L-D for St. Jude Children s Research Hospital once again, despite the economy and sluggish times setting a sizzling n-e-w record of $946,685 this weekend and shattering last year s 2010 record of $881K! Folks tuned in via the Internet from around the globe to participate. Filming of the CCO activities and feverish Show competition further fueled the contribution frenzy! While small in comparison to the overall record, the LA State Championship and St. Jude CCO has grown in reputation and prestige and continues to draw record crowds and provide wonderful local color and diversity to the 4-day Auction festivities. Of our 71 Registrants, a record 43 were from Louisiana and ten (10) Local cooks were among that contingent. Minden surely lives up to its reputation as the Friendliest City in the South with its grace and charm and gratitude for all our chili cooks and 62 Guest judges! With the first 60 cooks receiving awesome, practical and trademark Goody Bags and with the Top Ten (10) CASI Cooks receiving red and black embroidered Director s Chairs along with their Louisiana condiments, we continue to build upon that reputation of organization and class that characterize this State Championship CCO. Plans are already underway for next year to put on another truly FIRST CLASS event for the kind cooks/families and friends who make the journey to Minden, LA each year to support us. It was a pleasure to welcome, again, our CASI President, Renee Moore who has traded her AL residency for a TX one for the 3rd year in a row. And we again congratulate CASI 1st Place winner, John Oswalt, who not only took the top prize but was also voted #1 by the paparazzi in the People s Choice competition and who was our Silver Snap-On Tool Sponsor. All this after bets were taken the night before, as he was the last one to cap the Crown bottle as to whether he would even participate! And now we all have to consider a n-e-w night before pre-cook routine! To our regulars-thank YOU! To our 1st Timers-THANK YOU! To those held up by weather- SEE YOU NEXT YEAR! 19 April 2011 Terlingua Trails Page 19 More of Texas Open 2011 Arkansas State Championship Cliff and I were not sure what kind of weather that we would face when we chose to attend the Arkansas State Championship. The drive was absolutely beautiful! The trees are in bloom and these blooms are all different colors. The grass is getting green. The scenery was picture perfect. On Friday night, we attended the cook s party. This was held at the VFW. The food and drinks were good. We had cooks there from Oklahoma. A good time was had by all. Bruce Smith and the Central Arkansas Chili Pod provided us we a warm welcome and good food! Saturday Morning we arrived at the parking lot of Pulaski Technical School, South. The wind was blowing hard and it was cold. There were cooks from 5 states (Oklahoma, Texas, Arkansas, Mississippi and Louisiana). Everybody got busy and organized their cooking area. At the stated hour, Bruce Smith called all the cooks together for a cook s meeting. As he was spewing his hot air (there was a lot of it), the wind stopped and the sun began to warm the area. It became a beautiful day. At the same time we were cooking chili, the Arkansas Muscle Car and Street Rods arrive and displayed their cars. There was a large public attendance and they also were interested in what we were cooking. There was no shortage of judges. In attendance was a guest from the Netherlands. His name is Willem Fijten and he is a Product Developer for Research and Development for the Mars Food Company in Europe. He is a food chemist and was interested in chili and our competition. It was super to have him in attendance and share some of his food knowledge. He also gave us some suggestions concerning cooking chili. We are glad to have him join our chili family.
