JUDE CHILI COOK OFF WINNERS Bruce Smith's Snake Bite Chili wins First Place CASI Chili Debbie McNutt is crowned the Louisiana State Champion by George French The Louisiana State Championship was held on February 5th, 2005, and the weather was great. A crowd of over 700 people was in attendance and over $2,700 was raised from the cook off to compliment the $509,174 that was raised for St. Judes. Plan to join us next year. 2 Page 2 Terlingua Trails April 2005 ED Ponderings I ve been very fortunate to have had the opportunity to travel and cook in CASI cookoffs in many different locations. Susan and I have sampled CASI activity in most corners of the country, and we can t wait to get to those we have yet to visit. One of the wonderful things we ve learned is how different Pods and chili communities successfully deal with very different regional challenges, using our one set of rules to accomplish the goals of sharing fun with chili, maintaining fair, uniform competition, and raising funds for local charities. This prompted me to do a lot of thinking about the lessons we might learn from one another. A couple of the things I ve been pondering are the differences in numbers of cooks, public attendance, and the amount of money raised for charity. On the chili frontier, areas that are showing tremendous growth and are relatively new to CASI and chili (Maryland, Florida, and New York are a few examples) do not have as many established cooks as in other areas. In these places, the only way to raise substantial contributions for charity is to attract the public, sell tasting cups, involve the crowd in other fundraising endeavors, and then to be able to attract sponsors. It s not unusual to go to a chili cookoff in these areas and see thousands of spectators. Cooks make lots of extra chili to sell in order to satisfy the crowds and raise money for the charity. Here in Texas, the routine cookoff is attended by a large number of cooks. Entry fees, raffles, and auctions garner a large donation to the charity. These funds come almost entirely from the generosity of the cooks. At most cookoffs I ve attended, there has been little or no public. A portion of my freezer has been dedicated to stockpiling left over chili. I assume it s a much greater challenge to attract large attendance when there are so many cookoffs for the public to choose from. What I ve just described are general observations. It is important to note that there are frontier cookoffs with large numbers of cooks. Many of these cooks are folks who share our chili fun once or twice each year to support their community charities. On the other hand, there are cookoffs here in Texas with large numbers of spectators who come to sample chili and join in the fun. I wonder if we sometimes give up too easily because we assume we can t get large participation from the public as spectators or as once-in-awhile cooks and maybe we don t try as hard as we might. I ll bet we can really increase CASI s annual contributions to charity if we can share lessons learned from successful cookoffs in different parts of the country. Let s talk about this issue to see what we can learn from one another. We ll plan to share ideas here in the Terlingua Trails, in the CHN, and at the Great Peppers Meeting. Let s work and learn together to produce results of which we can be truly proud. Not a lot is going on around the ole town worth talking about. The trees are starting to bud out and the grass is starting to turn green. The signs of spring are approaching and to many of us up here in the Midwest, that means it s time to start thinking about getting ready to hit the Chili Trail. I m ready but Harry keeps telling me it s too early to start thinking about the outdoor stuff, and in a way I m starting to agree with him. Haven t got a lot to write about this month. Looking forward to seeing and talking with all again soon. I finally got all the taxes figured out and sent in. We re not going to get anything back but not going to have to pay this year either. The grandkids are doing fine and last week was Spring Break, which was spent inside all week because it was either raining or too windy to be outside. After a week inside with a 12 and 15- year old, you about run out of ideas on what to do to entertain them. In about seven weeks school will be out, and they will be here for the summer. Then I will be pulling out what hair I have left dealing with them and Harry! Precious, our big Chow, and Mr. Witty Kitty are suffering from cabin fever, so Harry has decided to solve the problem. He brought two of the big flood lamps over from the shop and put them in the back room by the big sliding door. He then set up his box floor fan, turned up the furnace to 95 degrees, and opened the drapes. I asked him what in the h*** he thought he was doing? He replied that Precious and Witty can lay and look out and it will remind them of being outside on a bright, sunny, breezy afternoon. GRRRRRRRRRRRRRRRR...and you only have to put up with Harry at a cookoff! Cookoffs look good for our area of Missouri and Kansas this year. It looks like the amount of cookoffs for Kansas is up and several have called me asking about having cookoffs in Missouri later this year. It has been a long hard road for chili cooking in the Midwest, but perhaps things are starting to look up. The lady from Turner Publishing has contacted me twice about the new chili book, and I encourage all, if you haven t already done so, to send in your information. They want to go to press soon. Well, I ve about run out of anything to talk about and it s about time for the bank to close, so I need to go. Today is the day the new quarter and nickel come out. Thank you for your time till next time and remember to start slow and then taper off. Bess & Harry Scholarship Recipient Update Howdy! My name is Megan Champion and I am the proudest member of the fighting Texas Aggie class of 2008! College life has challenged me in both academics and integrity, and I believe my parents were right when they said college would be the best years of my life. I love being an Aggie and receiving scholarships, like the one from the Chili Appreciation Society International, have helped to enrich my experiences here at Texas A & M. College is an opportunity that some people can only dream of and being a scholarship recipient has relieved the stress of being able to pay for college and has made my dream a reality. I am currently majoring in elementary education, and in the future I hope to teach preschool or kindergarten. I want to take this opportunity to thank the CASI committee members for putting their faith in me so that I might excel. 4 Page 4 Terlingua Trails April 2005 CORPORATE MEMBER SPOTLIGHT cindy@cinchili.com Telephone This month s corporate member is well known in the CASI chili world. A lot has happened since she made her first pot of chili in the late 1980 s under the helpful guidance of her parents, Don and Maxine Reed. We have known her as the 2 time TICC Champion, a Texas Ladies State Champion, past Great Pepper of Houston POD, a CASI Director, Hall of Flame Member and the wife of Bruce Wilkins (a past Texas Men s State Chili Champion). Cindy Reed Wilkins with her husband Bruce launched their company Cinchili in February 2004 with her special chili recipe packaged as a dry chili mix. Cindy & Bruce s Company was one of the select few vendors invited to attend President Bushes inauguration and serve up their great tasting chili to guests from the USA and foreign dignitaries attending the event. Recently Cindy gave me a package of their chili mix and told me to try it. I made it up and invited some friends over and let them all try it it was a hit with the guests and they all asked me Did you make it? I just smiled and told them YEP ( I did brown 2 lbs of meat, a 14 oz can of beef broth, a can of no salt tomato sauce and brought it to a boil then simmered for 30 minutes I did add a little extra cayenne pepper for more heat ) Visit the company WEB SITE for all the company products, some background on Cindy & Bruce along with recipes for all occasions. Their product is starting to appear in grocery stores and if you don t see it, ask them to stock it!!!. 6 Page 6 Terlingua Trails April 2005 Thanks Jason and I would like to take this opportunity to thank each and every one of you for the flowers, donations to the Gingerbread House, cards, food, support, and kindness shown during the loss of our beloved husband and father. Jimmy had asked me to keep the motor home and continue cooking chili, and at the time, I was not sure. After the wonderful kindness and friendship shown from our chili friends, we realized that life would be a lot harder without you guys. Thanks so much for being there for us. You re the greatest!!! I made my first cook-off in the motor home on March 5 at the Sightfest in Austin. Robin Goodman and Mark Sanders graciously gave eulogies at the funeral. A couple of comments from Mark were: I didn t know if I could get up here and talk about Jimmy, but I got to thinking, if Jimmy Harper can step out of a motor home dressed like a woman, I can surely do this. Another priceless comment and anyone can relate if they ever knew Big Mama was: We were at the TOT cook-off in Ennis the first time Jimmy did his show. My son-in-law came up to me and said, did you just see that big ole woman just kiss me? I said, look again, that ain t no woman. to her: I would also like to share Robin s thoughts on what JIMMY HARPER meant J Jovial. Everyone who knew Jimmy saw what a happy fellow he always was. Quick with a smile and a warm hug, his eyes always danced with a wonderful, mischievous light. I Intelligent. Never one to sit passively by, Jimmy was quick to voice an opinion, an idea, or a plan of action. His quick mind was always running full speed. M Man. Jimmy was a good man; a loving and supportive husband and father, he always had a kind word, and a warm and loving heart. M Mama. In the wonderful character he created, he showed us his humorous, and even feminine side. We will miss her. Y Yesterday All the wonderful memories of the days we shared, the laughter and good times. These will never fade, and will live on forever in our hearts. H Hot HOT chili. Hot sun in Terlingua and many a hot cookoff. And his beloved wife Linda, who he once told me was Hotter than his chili, and twice as nice. A Advocacy Center. With Jimmy, it was all about the children...what could we do for them, how an we help them build Gingerbread House? Whatever we did as a group, it was for the kids. R Regret. Of not having one more day, or one more hug, or one more smile. Of not getting a chance to say goodbye. P Pepper. More specifically, Great Pepper. And he was. E Everlasting life. Jimmy is with old friends at the cook s party in the sky. I wonder what time turn-in is in Heaven, and if you have to cook cut meat to place there? R Rock. He was a rock for us; and anchor in a time of need. Even the rocks in Terlingua will miss him, as will all of us. Godspeed, Jimmy Harper, Godspeed. Hello All You Chiliheads Out There! It s still not time to come, but it has been another 30 days. We had another little meeting the other night and my Great Pepper said for me to quit telling you all what a great party this is going to be, because this is a business meeting. Ha Ha Ha. I knew I was putting something over on her. This is getting better and better; you all just have to come! This is going to be sooo great a party (Oops, business meeting)! We submitted our preliminary budget report the other day, and I put the emphasis on PRELIMINARY and nobody liked it but me. I was just testing the water, and boy, was it cold! But that s ok. President Bush didn t get a very warm reception on his either. Of course his was a little bit bigger than ours! Well, Sammie, my GREAT PEPPER, said for me to get SERIOUS and to tell you all that we, SACA POD, made a bid to be your host for the GREAT PEPPERS MEETING in All the Great Peppers unanimously voted to give us the glorious responsibility of doing just that. We have heard through the grapevine that we can t handle it by ourselves. Well, folks, we never said that we could, and we aren t. Of course being the best of the best, greatest of the great, we did not ask very many. But being that we are an itty bitty pod, we have asked some others for help and they have accepted. If we didn t ask you, it s not that we are being stuck up or don t need or want any help from you! We ve had a lot of offers from a great many Pods and individuals, but please, please don t be offended if we decline your glorious and most appreciated and generous offer. It s just that we already have our ducks, oops I should say, our peppers in a row! Well, enough is enough; I can t stand it any more as I just hate being serious. You folks just don t how much it takes out of me! Sooo, hey hey whaddya say! Did you all know that anyone can come to the Great Peppers Meeting? You just can t vote, but you can sit in on the meeting and see that your Great Pepper is doing their job like you want! Or, while the Peppers are in the meetings and doing all that rule changing this year, you can be sitting by the pool, in or by the hot tub, or shopping! So get out there and make money so you can come, too. And by paying the itty bitty registration fee of a mere little $30.00, you can partake of the hospitality room (when it is open!), plus you get a lunch, and you just can t buy all this tender loving care and attention that we are going to be giving to you for that price! It is still 5 months, but we are running out of rooms at the convention center motel. THERE ARE ONLY A FEW ROOMS LEFT AT THE CONVENTION CENTER! How many of you referees frequently (two hands) or occasionally (one hand) let the cookoff coordinator send the paperwork to the TallyMaster? That s not too bad; you can put your hands down now. I know this subject has been discussed before, but it continues to cause problems, so we ll talk about it one more time. The CASI Rules Book takes a beating at times for being vague on some things, but Rule V., 6. could not be clearer on sending in the paperwork. If you let the cookoff coordinator send the paperwork, you ve lost control. You don t know what they re sending or even if they re sending anything. Most of the time I m sure the cookoff promoter does take care of this task, but when he doesn t is when the problems occur. There are a lot of things that can go wrong on the way to the TallyMaster when you permit someone else to do your job. So, please, when you leave the cookoff site make sure the cookoff paperwork is in your possession. For the most part, you referees are doing an outstanding job. That is greatly appreciated. It would appear that making you aware of some of the potential problems is working. Many of the paperwork problems I saw one to two years ago are no longer occurring with any frequency. Let s make keeping the paperwork in our possession our focus for this year. Last month, the Bess Best column mentioned a cookoff that was causing some consternation for Junior Johnson and me. I would like to report that the story had a happy ending. The cookoff paperwork was eventually received and accepted. 17 April 2005 Terlingua Trails Page 17 American RV Cowboy Way -Snake Bit CCO American RV Snake Bit Chili Cook off was held in connection with The Cowboy Way RV Rally, on February 12, in Anthony, Texas. There were over 400 RVer's and 27 chili cooks in attendance. Cooks from Texas were David Boone, Tim and Connie Collier, Debbie and Wayne Turner, Johnnye Harriman, Joyce and George Jowers, and Pod of the Pass members, Sue and Don Weber from Illinois, Jim McNutt from Louisiana, and from New Mexico, Bud Barrick, Rick and Ann Hansen, Frank and Michelle Estrada, and Steve Lopez. Thank you for coming to the cook off.there was all day entertainment and contests. The Colliers, Dave Boone and Wayne Turner were serenaded by a roving cowboy at their chili booth. You could enter the horse shoeing contest, green chili dishes, the cowboy poetry and story telling events. They were going to have a cow milking contest but could not find any cows that were milked by hand, all milking machines. There was rain for all, you could identify the cooks from El Paso, they were the ones standing in the rain with a look of wonderment on their faces.the bronze rattlesnake was won by Bud Barrick of Organ, NM. This is Bud's fourth first place this chili year. Show was won by Black Garter, Eve DuMond, who received a nice smoker for her efforts. Jim Nelson of El Paso won the green chili dish and Jim McNutt of Louisiana won beans. After announcements some cooks sipped complimentary margaritas, listened and danced to live music.many thanks go to Denise McKnight and Melissa Viella of American RV for their efforts in making the Snake Bit cookoff a success. A thank you to the Pod of the Pass members for their help. Thank you to David Boone for his help with the judging and Tim Collier for helping with the chili judges selection and for telling everyone that the weather was not that terrible. To help you advertise your pod cookoff we allow each pod to place one quarter page ad in the Terlingua Trails, each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter page we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI Calendar" section in the Terlingua Trails. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
