9 Vegan Recipes Vegan Ranch Dressing Vegan and Gluten Free - Use as a dip or dressing! Yields +/ /2 cups 1/2 cup hemp hearts (a.k.a shelled hemp seeds) from 1 tbsp lemon juice 3 tbsp olive oil 1 garlic clove 1 tsp mustard 1 tbsp nutritional yeast or parmesan 1 tsp dried dill (or more to taste) or 1 tbsp fresh minced dill (chive, parsley) 1/4 tsp sea salt freshly grounded pepper a touch of tamari (or soy sauce) In a small bowl, cover the hemp hearts with 1/2 cup of water and let soak for about 1 hour. This will soften the seeds. Using a blender, whiz away all the ingredients. If it too thick, add more water Taste and adjust to your liking. This is your sauce! Idea... the basic version (first 3 ingredients!) could replace cream in any sauce that calls for it! Creamy White Bean Sauce Vegan and Gluten Free - Alfredo-style creamy sauce. 1 tbsp avocado or olive oil (or vegan margarine) 1 medium onion sliced (roughly as it all gets blended) 3 to 4 cloves garlic minced (roughly as it all gets blended) 1/2 cup water, veggie broth or white wine 2 cups cooked white beans * 2 cups unsweetened non-dairy milk 2 tsp veggie bouillon powder (i love Harvest Sun organic bouillon powder) sea salt & freshly ground pepper to taste optional... 1/2 tsp nutmeg, 1/2 tsp smoked paprika, 1/2 tsp Provence herbs, fresh herb like parsley (neutral), basil or coriander. In a frying pan, over medium heat, sauté the onion until a bit brown. Add the garlic and cook for 2 to 3 minutes. Deglaze with your liquid of choice. ** Add the beans & season. Cook for a few minutes. Add the milk and herb if using. Warm it up. Blend and adjust the seasoning. I like my tamari. A few drops won t hurt here. If too thick, simply add water - Enjoy!
