In a food processor pulse the bread and walnuts. Stir the breadcrumbs and walnuts into the leeks along with the cranberry sauce, chopped thyme and parsley. Season. Place the mushrooms on a baking tray and fill with the leek mixture. Top with crumbled stilton and place in pre-heated oven until the mushrooms are cooked and the top golden brown. Why not try... 4 Duck Breast with Marmalade Glaze Duck Breast (B3055) Fine Cut Orange Marmalade (33606) Red Wine Sauce Base Ginger (BR1134) Score the skin of a duck breast, season and seal in a pan on both sides. Brush over the skin with the marmalade. Place in a pre-heated oven and continue to cook for approximately 10 minutes. Remove from the oven and allow to rest. Add the red wine sauce base to a pan with some marmalade, grated ginger and gently heat. Thinly slice the duck and pour over the sauce. Why not try... Beat the cream cheese and sugar together until smooth. Stir in the whipping cream, ground ginger, lemon rind and eggs. Roughly chop the ginger and add to the mix. Pour into the tin and bake in a pre-heated oven. Mix the soured cream with the sugar and spread over the surface of the cheesecake, return the cheesecake to the oven for 10 minutes. Serve chilled.
