4 HOW TO MAKE CAULIFLOWER COUSCOUS SALAD 1-16 oz. bag Green Giant Cauliflower Crumbles or 1 ½ bags of frozen Hanover Riced Cauliflower 1-15 oz. can chickpeas, drained and rinsed ½ red bell pepper, diced ½ orange bell pepper, diced ½ c. fresh parsley, minced ½ c. fresh kale, minced 1/3 c. red onion, diced ¼ c. golden raisins Dressing Juice of 1 lemon 1 t. Dijon mustard ½ t. coarse kosher salt Fresh ground pepper 1 T. honey ½ c. olive oil INGREDIENTS PREP TIME: 15 Minutes COOK TIME: 5 Minutes SERVES: 4 People A colorful and nutritious all-vegetable salad resembling couscous. TO PREPARE Cook cauliflower in microwave on high for 3-4 minutes. Transfer to large bowl. Add chickpeas, bell peppers, onion and raisins. TO SERVE Whisk together all ingredients for the dressing. Toss with cauliflower. Adjust seasoning. Serve chilled or room temperature. Pair with Nautilus Sauvignon Blanc. EDDIE'S TIP Try adding Hanover riced carrots and broccoli for a more colorful salad.
