4 HOW TO MAKE ROASTED ASPARAGUS WITH PARMESAN 1 lb. fresh asparagus 2 T. olive oil ½ c. grated Parmesan Salt and pepper 2 lemons INGREDIENTS EDDIE'S TIP For a cheesier dish, replace Parmesan with Gruyere or Fontina cheese. PREP TIME: 10 minutes COOK TIME: 10 Minutes SERVES: 4 People Welcome spring with this easy but flavorful side dish. TO PREPARE Preheat oven to 400 F. Trim woody ends of asparagus and toss spears with oil. Spread evenly on a baking sheet lined with foil or parchment paper. Sprinkle asparagus with salt, pepper and cheese. Halve one lemon and squeeze the juice over the coated asparagus. Cut the lemon halves in half again and place them on the sheet to roast with the vegetables. Bake about 8 minutes, or until cheese starts to brown. TO SERVE Cut the remaining lemon in half to garnish the serving platter.
