5 AUTUMN HARVEST» A SEASON FOR CHEEZIN Photo credit: cheesesexdeath.com GET TO KNOW BLUE D'AUVERGNE Bleu D Auvergne goes with everything just like your favorite cardigan. A mild and rustic blue cheese from France, Bleu d Auvergne is affordable and easy to pair with any combination of fall flavors from spiced pumpkin and roasted root vegetables to caramel apples and too much whiskey. You can crumble it on almost anything. Here are three bites to inspire all your bleu fantasies, courtesy of blogger Erika Kubick (cheesesexdeath.com): Bleu d Auvergne with Pear Juicy pear compliments the decadent texture of this blue on a cheese plate or melted into a grilled cheese sandwich. Sometimes I fantasize about a warm pear soufflé topped with Bleu d Auvergne ice cream. Bleu d Auvergne with Effie s Homemade Oatcakes and Pepper Jelly I love the rustic combination of oat biscuits and hearty bleu cheese. The sweet, spicy jam echoes the cheese s peppery kick. Bleu d Auvergne with Roast Beets Earthy, sweet beets are always delicious with a salty bleu. Try it in a salad with toasted walnuts, a bit of peppery arugula, and a simple lemon vinaigrette. Small, medium or large size has no bearing on the quality of an apple. Select apples that are firm to the touch, have a good aroma, and are free of skin breaks and bruises. APPLE PICKING 101 Store at room temperature and away from strong-smelling foods, to maintain flavor. Enjoy within a week or refrigerate to preserve crisp texture, if stored longer. RECIPE CARAMELIZED APPLE GRILLED CHEESE SANDWICH (pictured on front cover) INGREDIENTS 2 T butter 2 T brown sugar 1 dash of cinnamon 2 Gala or McIntosh apples, peeled, cored and sliced thin* 1/2 c. Cracker Barrel Sharp (or Extra Sharp) Cheddar, shredded* 4 slices The Breadery San Francisco Sourdough or 3-Seed Sourdough Artisan Bread* 2 T butter (for bread) *Items featured on special in this circular PREP TIME: 15 Minutes COOK TIME: 15 Minutes MAKES: 2 Sandwiches TO PREPARE Prepare bread slices by generously buttering one side of each slice. Melt 2 T butter in medium frying pan. Add sugar and cinnamon and cook until bubbly. Add apples and sauté until tender, about 5 minutes. Set aside. Assemble each sandwich by piling cheese, apples (and a bit more cheese) between two slices of bread, buttered sides out. In large frying pan, grill each sandwich until golden brown on both sides, about 2-4 minutes per side. TO SERVE Cut sandwiches in half diagonally and serve immediately round out the meal with a spicy arugula salad and butternut squash soup. Pair with Union Craft Brewing Foxy Red IPA.
