Piedmont Hazelnut I.G.P. Torrone and Gianduja were the towing of the first our project, it means the full respect of the production chain. So: raw materials grown directly by us or strictly selected, to reach excellence, total integrity, the exactly origin; everything to enhance our taste experience. We present the products of Gusti selection in 2 sections: and Laboratory. The word include all articles dedicated to the retail, while in Laboratory are enclosed the references for product transformation, addressed to operators in the kitchens of restaurants, pastry shops and ice-cream parlors.

3 PIEMONTE LANGHE 1 In addition to wine, the hazelnut. In the small patch of land situated in the south of Piedmont one finds the Langhe, a region that nature has been richly blessed with unique and rare resources, among which is included the Piedmont Hazelnut I.G.P. Below 600 meters of altitude lies the Basse Langhe (Low Langhe), where the energetic wine industry is concentrated and the townships and communities are more vivacious and populated. The Alta Langhe (High Langhe), however, represents the more peaceful and serene part, where the cultivation and elaboration of the Piedmont Hazelnut I.G.P., considered the best hazelnut in the world, takes the spotlight. The Protected Geographical Indication (Indicazione Geografica Protetta, I.G.P.) was recognized with regards to the Piedmont Hazelnut in a Ministerial Decree on December 2 nd, 1993, taking into consideration its particular and prestigious qualitative characteristics as cited in the legal text. The hazelnut variety grown in Piedmont is the Tonda Gentile Trilobata (literally round and delicate). Its cultivation is concentrated in areas of Langhe, Roero, and Monferrato, all of which were declared UNESCO World Heritage Sites in The Piedmont Hazelnut I.G.P. distinguishes itself from other national and international varieties because of its high oil content (around 70%), making it a prized food high in nutritional value. 4 is a Piedmontese confectionery company, artisan and modest-scale, capable of responding to the demands of the market without compromising on the quality of our raw material, the Piedmont Hazelnut I.G.P. Its founding in 1994 was based on an idea of the Ceretto family, who after decades of carrying on the winemaking tradition in the Langhe, wanted to apply the same vigor and tenacity to the hazelnut orchard. They had one clear mission: to render unparalleled the products of a blessed land and let the whole world know them. This was a sentimental and cultural matter in that the hazelnut, in addition to the vine, is a grand protagonist of the local landscape and agricultural way of life. Initially the project was focused on the production of a typical dessert of Alba crunchy Torrone with hazelnuts. With time, the enterprise became more ambitious, bringing this typical nut of the Piemontese Langhe to the center of our attention, strongly present in numerous confections, always prepared with full respect for each step of the production chain. We have acquired orchards in the best production zones (totaling around 80 hectares) and we follow the hazelnut for its entire journey, from the earth to the finished product using the method. In this way we can guarantee maximum taste and respect for nature. We also maintain close collaborative relationships with other hazelnut growers in the hills best renowned for their production of the Piedmont Hazelnut I.G.P. in the communities of Alba, Albaretto Torre, Sinio, and Somano. Today our hazelnut orchards are managed organically in order to safeguard the soil and ensure the quality of the raw material. This method benefits everyone, the Earth included. 5 IL METODO RELANGHE From the hazelnut orchard... 3 HARVEST We only harvest Piedmont Hazelnuts I.G.P. from our orchards or from those of local certified coriliculturists. CONFERMENT We store our hazelnuts at our production headquarters in Castellinaldo. YIELD We meticulously select by hand the fresh nuts while we measure the yield. SHELLING We remove the hazelnut from its shell. CALIBRATION We separate the hazelnuts by caliber, 14 is the best one. GUILLOTINE We verify the quality of the harvest by slicing the fresh nuts with a specially designed guillotine-like tool, allowing us to examine the inside contents. MANUAL SORTING We remove any flawed nuts by hand. TOASTING We customize the toast of the hazelnut to best suit each recipe....to the final product
6 Catalog 2017 This year we thought to add to our catalog few images that allow everyone to deepen the quality theme from a privileged point of view, like a insider. In addition to the production aspects, we are also interested in emphasizing a less technical part, sometimes discounted, like the use of our products. We are therefore entrusted with brillians of Enrico Crippa and Antonio Zaccardi from Piazza Duomo restaurant in Alba, to help usto present our products in eccentric way, outside the box. From this work are born new ideas of presentations that our friends Lido Vannucchi has set and photographed and made unique. Table s art works, Prêt à manger!.

59 A veritable international landmark for those passionate about haute cuisine, the restaurant, Piazza Duomo, is the kingdom of chef Enrico Crippa. Sprang from a carefully nurtured idea of the Ceretto family, who wanted to create a home in the Langhe for the new gastronomic revolution, beginning with unique and rare ingredients that abound on the hillsides of the region. Hailing originally from Brianza, in western Lombardy, Crippa has been adopted by the Langhe. It is here that he has taken root, captivated by a territory capable of offering unparalleled raw materials, from the white truffle to the hazelnut, from various meats to a generous assortment of vegetables, his true passion. In just ten years Enrico Crippa and his restaurant have become a reference point on the international gastronomic panorama especially since 2012, when it earned the noteworthy recognition of three Michelin stars. 57 I began to understand and use the hazelnuts of Pedmont as soon as I arrived in the the langhe because, thanks to the Ceretto family, I was able to observe rs-hand the working methods and careful attention paid to s production line. Right away it was love at first sight, and for this reason improved this special recipe with the intention of creating a Tribute to the Langhe hazelnut and, at the same time, a symbol of the city of Alba. The challenge was how to best interpret one of the most famous and traditional desserts, one that every Piedmont woman makes using a recipe that is handed down from generation to generation Alba
