3 Past A Family history Past, Present, Future In the mid-nineteenth century in Turin, the first capital of Italy (from 1861 to 1865), the art of chocolate begins to be popular. Tasted at the Royal Court of Savoy only, it becomes accessible to population thanks to pastry chefs, master confectioners, candy makers and ice cream makers. In fact, the craftsmen begin to open their workshops in all areas of the city, spreading everywhere smell of sweets and chocolate. Fascinated by this world, the great-grand father Ettore, who was 14 years old at the time, decides that that work was going to be his future. He attends a pastry school, and at the same time, he begins to work as a helper in a bakery, in the heart of the city. Few years later, in the 1930, he takes over the pastry and to opens the first workshop of chocolate and candy. In the 50 s, his son Michele, conducts the business with his father.. In the 70 s the laboratory is transferred due to health reasons. Michele s children are still too young to continue the father s business. One of the the sons, Ettore ( like is grandfather), feels a sense of belonging to the confectionary world and the Piedmont tradition. He continues the family business, while remaining within the confectionery and culinary tradition. Great-grand father Ettore his wife and grand father Michele

4 Present A Family history Past, Present, Future In the early 2000 s, Ettore and his wife Irene, who shares the same passion for the culture and the confectionery tradition, decided to recover the history and family values: the pleasure and the traditions of a job done with care and passion. THUS RISES THE DE MARTINI CIOCCOLATO: Mole Antonelliana It makes fine chocolate its core business, which is expressed by the logo: a stylized Mole (Monument symbol of Turin) lighted by a moon of chocolate.

5 Future A Family history Past, Present, Future Today, Stefano joins his father Ettore, bringing enthusiasm and new ideas that only young people can offer to continue the family tradition Our philosophy, is to rediscover traditional products, by reworking of classic recipes, as our: " Savoy Giandujotto " a giandujotto with a heart of tender cremino : a fusion of two delicious specialties of Turin.

7 Giandujotto Credit for its creation (in the first half of the 1800s) belongs to Turinese confectioners who, due to the economic ban on confectionery products from Britain and its colonies ordered by Napoleon, replaced them with the cheaper Nocciola Tonda Gentile of the Langhe.. Legend has it that the skilful " stroke of a spoon" given to this smooth mixture produced the gianduiotto (or Giandujot) with its typical shape, which was to be presented as the first wrapped chocolate on occasion of the 1865 Carneval, distributed from Turin's popular mask, Gianduja (from which it finally took its name). Napoleon The chocolate with hazelnuts, paste or whole, from regional specialties has become a symbol of good taste beyond the borders: it is an emblem of singular uniqueness, the Italian confectionery industry offers to the world market as exquisite example of their centuries-old culture.

8 Piemonte Hazelnuts The Tonda Gentile variety of the Langa area is characterised by a very hard and completely full shell, which means a 40-50% yield after shelling. The Nocciola Piemonte PGI (Protected Geographical Status) is particularly appreciated by the confectionery industry for its quality characteristics such as the spheroidal shape of its seed, flavour and excellent fragrance on toasting, excellent shelling, good storing capacity. It is for these reasons that the Nocciola Piemonte is universally known as being the best in the world. The final product is represented by shelled hazelnuts and confectionery products such as gianduja, For the ancient Romans hazelnuts had auspicious effetcts: it was customary to give a plant Hazel to wish happiness
