I must admit, I was one of those people who thought that Icewine would be too sweet for my taste, but after spending 3 weekends exploring the taste combinations put forth by the wineries participating in the 2018 Discovery Pass, I was a complete convert. The flavours were simply amazing how the balanced sweetness of Icewine plays off of some of my favourite foods dark chocolate, Thai curry, savoury short rib it was completely unexpected and exciting. 6 BEHIND THE MAGIC OF ICEWINE 8 Below and the magic happens WITH THE GRAPE GROWERS OF ONTARIO Ontario is one of the few regions in the world where Icewine is consistently produced. The complex process to craft an Ontario VQA Icewine begins before the grape harvest, when grapes are carefully selected to stay on the vine and are protected from hungry birds. Growers brave the frigid temperatures to pick the frozen grapes, which are pressed while still frozen to extract a small amount of concentrated juice with brix that ranges between 35 to 39. The harvest for these grapes typically occurs between December and January when a sustained temperature of -8 C is reached. The optimum stretch of temperatures for Icewine harvesting is between -10 and -12 C. The result is a complex, sweet liquid treat that can be enjoyed year-long with dessert or as a perfect complement for rich savoury foods such as foie gras or aged cheeses. with the Grape Growers of Ontario 11

8 TOP 10 THINGS TO EXPERIENCE Slow-Braised Short Rib, Sweet Potato Purée, & Fresh Radish Slaw INGREDIENTS Bay Leaves 2 lb. Short Rib 2 Large Sweet Potato 1 Onion (peeled & chopped) 2 T Mascarpone 1 Carrot (peeled & chopped) 1 T Maple Syrup 1 Parsnip (peeled & chopped) Salt & Pepper 1 Celery (chopped) Canola Oil 1 C Water 1 Valentines Radish 1 C Beef Stock 1 Gala Apple 1 C Red Wine 1 T Chives (chopped) Whole Black Peppercorns 1 T Mixed Sesame Seeds Thyme Stems Ver Jus Vinaigrette BRAISING Ask the butcher to clean the fat off of the short ribs. Place the short ribs in a zip lock bag. Add the chopped vegetables, water, stock, wine, a handful of thyme, bay leaf, and spoonful of peppercorns. Seal the zip lock and place in the fridge for hours. Preheat oven to 300ºF. Remove the short rib from the marinade and pat dry with paper towel. Pour everything else in the bag into an ovenproof pan that is big enough to braise the short rib. Place the pan on high heat with a little canola oil, then place the short rib in the pan and brown on all four sides. Deglaze with a little red wine, add to the braising pan and cover. Place in the oven for about 7 hours. Check it every couple of hours and rotate your pan to ensure even cooking. Once the short rib starts to fall apart it is finished. Remove from the braising liquid and strain. Slowly reduce the braising liquid on medium heat until it coats the back of a spoon. PURÉE Cut the sweet potatoes in half. Cover with oil, salt and pepper and roast at 400ºF until tender. Remove the skin and place in a food processer. Add the mascarpone, maple, and a nob of butter and purée till smooth. SLAW With a mandolin, julienne the apple and radish and place in a tossing bowl. Cover with Ver Jus Vinaigrette, a pinch of salt, chives and sesame seeds. 15

11 2018 NIAGARA ICEWINE FESTIVAL how to taste like a pro by Christopher Waters The joy of exploring the world of wine is there s always something new to discover. Even the most seasoned of wine experts will never know it all that s part of the enjoyment factor. To make the most of your Icewine Festival experience, approach each wine tasting like a pro. Use a three S approach to identity the character of the various Icewines and other samples you taste: SNIFF, SIP, SUMMARIZE. At each stage, take a moment to evaluate. SNIFF: Any well-made wine should smell fresh and pleasurable suggesting, perhaps, the fragrance of fruits, flowers, vegetables and/or spices. When you swirl wine in your glass before smelling, you ll get a more concentrated aroma. Ask yourself: Are the aromas faint or intense? Swirl and repeat. Do the aromas stay the same? Change? SIP: A wine s aroma can tell you a lot about whether or not you ll enjoy it. Tasting presents the whole picture as you sense the wine s body, texture (how it feels in your mouth) or how long the flavours linger (in winespeak, that s called the finish). Ask yourself: Are the flavours intense, or just barely there? Does it taste the way it? SUMMARIZE: Any sip of wine that ends with a smile signals a great bottle be sure to record your impressions or snap and share a photo of the bottle on social media so you can remember it. Words like honeyed, concentrated or luscious truly capture the deliciously intense flavour offered by our award-winning Icewines whether they re made with Vidal, Riesling, Cabernet Franc or another exotic grape variety. Ask yourself: Do you like the wine? What makes the wine memorable? 21

No problem! All wineries have Discovery Passes for sale, so you can purchase another and split it with a friend. 5. Track your path.
