3 WINES we have designed our wine list to be as simple and sustainable as possible. the majority of our wine is locally sourced, using wine makers and viticulturists who like to let the wines do the talking. whilst not all of our wines are organic or biodynamic certified they all use minimal intervention methods when creating their wines. our house wines have been made with our good friends at castagna, one of the premier biodynamic wine makers going around whose philosophy is with the intention to make, as simply as possible, wine which is an expression of the place where it is grown.
