2 OUR PHILOSOPHY The wine and drink collection is inspired by sustainability and terroir, featuring a varied and interesting list of premium wines from regional New South Wales (NSW) and Australia. ICC Sydney s sommelier can assist with selecting wines and can customise beverage packages to complement menu choices. The venue has an extensive selection of beverage options to suit any style of event and an exceptional team to deliver them. Beverage packages can be enhanced with the addition of optional extras such as cocktails and mocktails, craft beers and cider, dessert wines and customised spirits. A range of customised activations and pop up bars can also be added to create picture perfect opportunities for social media. Now one of the Hunter Valley s top producers, De Iuliis makes wines that are unique and encapsulate a sense of time and place with their characteristic Hunter Valley taste. 18 December

BLACK RADISH KOMBUCHA BY BRENDON VALLEJO Chef Brendon Vallejo brews his range of oak barrel fermented kombucha using organic ingredients on the Central Coast of NSW. The microbrewery produces weekly to ensure a fresh and vibrant representation of what NSW and Australian produce has to offer. A perfect no-alcohol match for a range of dishes. 18 December

ICC Sydney has worked with Mister Mixer Small Batch Cocktails to serve a range of delicious and visually appealing cocktails easily to large groups. Serve any one of these cocktails on arrival additional $6.50 per guest with any beverage package or serve on consumption for $15.00 per glass. SMALL BATCH COCKTAILS Passionfruit Caprioska A beautiful blend of vodka, passionfruit juice, finished with a dash of lime Green Apple Mojito An incredibly fruity flavour combination of green apple, lime, mint, white rum and soda water Cosmopolitan A perfect balance of bitter and sweet, with orange, vodka, cranberry juice and lime Espresso Martini Notes of vanilla, vodka and burnt orange complement a smooth, cold-brewed specialty blend of arabica coffee beans SPARKLING AND PROSECCO Aperol Spritz The classic Italian aperitif, Aperol, prosecco and soda over ice with our special twist Rosella An Australian favourite, perfect sparkling wine from Orange, NSW with apple, ginger and a Rosella flower Hugo Spritz A modern twist on the classic, elderflower, prosecco, a sprig of mint and soda over ice ARCHIE ROSE TAILORED GIN AND VODKA BY ARCHIE ROSE DISTILLING CO. Will Edwards founded the first new distillery to open in Sydney for more than 150 years. Archie Rose create delicious, modern spirits featuring traditional and Australian native ingredients including gins and vodkas made in collaboration with our culinary team. 18 December

CRAFT BREWERY EXPERIENCE ICC Sydney s beverage team has worked with Dave s Brewery Tours to provide pop up bars from a number of local breweries. SOMMELIER S WINE TASTING BAR Our sommelier can curate a wide selection of great wines to taste depending on the style of event. THE WATER OF LIFE Taste a selection of whisky from around the world including some of the best producers from Australia, Scotland, the United States and Japan. Learn the differences between single malts, blends, bourbon and moonshine. $1,200 per activation including up to 8 bottles of premium wines. BOTANICALS Taste and compare a range of Australian and international gins including the ICC Sydney collaboration with Archie Rose, the first distillery to open in Sydney in more than 100 years. $1,200 per activation for set up and labour with gins charged on consumption. SPRITZ BAR Our bar team will produce a wide range of spritz, refreshing zesty cocktails for drinking beside Sydney's stunning harbour.
