This organic wine has been highly rated with 94 points from Wine Advocate (750 ml). We include a Tartufo uncured Italian Salami made with Black Summer Truffles. This salami is humanely-raised U.S pork from animals that are given no antibiotics and hormones as well as fed a 100% vegetarian diet (5.5oz). It also comes with 6-month-old Manchego wedges (1 oz) that go perfectly with EVOO Olive Oil with Basil (8.5oz) and amazing Fig cake with walnuts (1oz). With that add the mouth watering FERMIN sliced Jamon Iberico de Bellota, is made from the meat of free-range Ibérico pigs that feast on rich Spanish acorns, or bellotas. Your Iberian Loin of Bellota is cured with sea salt, garlic and pimentón smoked paprika, which lends it a rich smoky flavor with very little fat. Since it has such a rich and wonderful flavor, most people slice the lomo thinly and serve it on a plate just as it is next to a glass of Finca Villacrecer Pruno from Ribera del Duero (750mL), a rich yet lively organic wine that delivers ripe flavors of boysenberry and black plum, backed by leafy and orange peel notes and a minerally, smoky finish. Ripe tannins are well-integrated and crisp. Fruity acidity keeps this fresh.

4 The Italian Tour Experience- $60 Italy is a diverse country and has an expansive culinary history known for its great natural ingredients and the most varieties of wine anywhere in the world. Tonight you will drink a Nebbiolo D Alba from Tuscany (750mL). A sumptous wine that stands up to food. Its acidity will pair perfetcly with the Parmiggiano Reggiano (7oz) from Parma, an artisan Salami made with Pinot Grigio from Volpi (8oz). A unique touch is brought by Castellino Grilled Borettane onions (6.5 oz) from the north of Italy in Marche. These onions are first roasted and then grilled adding a perfect sweet flavor and crunchy texture.
