4 Getting the Most From Your Wine With Tim Vandergrift, Technical Services Manager for Winexpert The Best of Both Worlds! offers you just that. We've designed it to offer great, full- bodied drinkability by three months of ageing and potential to age over the long run. The Worse the Better It's a French saying that means that for a wine to be truly great when it's ready, it has to taste pretty bad on bottling day. This is because the tannins, bioflavonoids and phenols have to go through a biochemical process that eventually melds them into completely delicious-tasting structure and flavour. When they're young and uncombined, they taste jangly, separate and awful. The addition of a Grape Skin pack to Selection International enhances body, mouth-feel, tannin and colour over regular Selection kits. These will drink well soon after bottling and will hold for around two years under good cellaring. The good news is that wine kits are much more forgiving on bottling day than say a 2009 French Bordeaux (considered a Vintage year). And wine kits have to be drinkable young- because one of the benefits of making your own wine is that you don't have to wait extended amounts of time for your wines to hit their peak. That's how we design the kits. Now we do offer a broad range of lines in our product offering that will serve just about everyone's needs. Chai Maison is quaffable almost on bottling day and as it stands to reason hits its prime right away. Chai Maison is a 'make it- drink' it type of kit. And of course as you move through our product offering Vintners Reserve and World Vineyard are nice when young but you can taste a little more potential in them than the Chai Maison. And that potential pays off within a couple of months. Now we get into our 6 week kits like the Selection Series. Higher volume kits with greater dissolved solids equaling more body and intensity. Still very enjoyable when they are young especially if you like full- bodied wines but if you can wait a few months they start to pay off and have even further potential to improve for a year or two. The Estate Series is more in line with the French Philosophy mentioned above. Loaded with potential when young, hitting their stride after 6 months and potential to age 2-3 years and more into fully-structured, developed wines. Patience is rewarded! But what if we want the best of both worlds? It is the perfect kit for the winemaker who is willing to spend a little more for a more intense, flavourful red wine, but isn't ready to wait too long to taste the results. Selection International with Grape Skins is perfect for enjoying when young and appreciating when aged. The Grape Skin pack is extremely easy to use. Simply put the skins in the included muslin bag and add to the primary. When you are ready to transfer to the carboy, remove the muslin bag, squeeze out any remaining liquid and discard the skins. You then syphon and proceed as normal. There are currently four styles available including: Chilean Malbec/Shiraz, Sicilian Nero D'Avola, Spanish Tempranillo and Australian Petit Verdot. Petit Verdot is one of my favourite grapes! Many of you may remember it from the Limited Edition program. And coming later in March we are releasing an Italian Brunello and an Italian Amarone- both will knock your socks off!
