The Willows has been a working inn and restaurant since In 2009, Chef Blaine Wetzel arrived from several years of working at famed Copenhagen restaurant, Noma, bringing with him his passion for creating extraordinary meals using foods gathered exclusively from one s natural surroundings. Your meal tonight is the result of his belief in the beauty of local ingredients, farmed and foraged daily, and representative of both locale and shifting seasons. These ingredients are gathered by our favorite fishermen, foragers, and farmers in the area. We are fortunate to have a vast array of seafood from the pristine waters of the Puget Sound, and a diverse array of produce and wild foods from local farms and forests. Jeremy Brown has been fishing in the waters of the North Pacific for over 35 years. He is passionate about the Slow Food Movement, where he serves as a delegate for the Terra Madre Project. He is deeply committed to sustainability, and the mastery of his craft. The unmatched standards he keeps show in the impeccable quality of the fish he brings us, and we feel incredibly lucky to work with him. Almost all of the fruit and vegetables we cook with come from Loganita, our farm just down the road. Mary von Krusenstiern, our farmer, uses bio-intensive farming practices that utilize every foot of the square-acre plot, and she provides our kitchen with superb organic produce. She specializes in growing a wide range of unusual native vegetation, and continues to educate us on the incredible bounty we have at our fingertips. Matt and Bani Van Boven, passionate about the potential of agroforestry, are the foragers who supply us with perhaps the most intriguing ingredients in our kitchen. They regularly bring us a broad variety of wild greens, roots, berries, and fresh nuts. They have truly inspired our chefs, introducing new worlds of taste to our kitchen, yet using ingredients exclusively from the Pacific Northwest.
