A DREAM: THE BEST WINE IN THE WORLD The Masaveu Family imagined a modern, special, creative winery, where they would simply produce the best wine in the world and make it available to consumers of all kinds. Why should quality and good taste only be accessible to a chosen few? And so, the oneiric, original and positive universe of Pagos de Aráiz was conceived. A project based on the world of wine and the magic and energy it radiates, generating fascinating experiences and images which offer much more that just an excellent wine. When one visits the Pagos de Aráiz winery one feelsthat mixture of dream and reality, where the future and the past form a surprising present which will entrance you forever, as will its wines.
4 II. DEFYING TRADITION Pagos de Aráiz estate was bought in 2000 and the construction of a truly avant-garde winery, which covers an area of m2, promptly commenced. The vineyards which surround the winery are managed in an innovative and creative manner and consequently, Pagos de Aráiz soon became a pioneering winery on the Spanish wine scene. The creation of this new and daring winery is the first of its kind in the D.O. Navarra region, it defies tradition. The firm choice of this historical and traditional region, which holds a promising and brilliant future, makes it the perfect setting for Pagos de Aráiz. Pagos de Aráiz is a young, free and natural winery which produces the best wine possible and makes it easily available to everyone, without cutting back on human or material resources. The wine is produced using our exquisite home-grown grapes and the perfect combination of traditional methods and up to the minute technology. Another extremely important factor is our endeavour to respect the environment to the highest standards, both in the vineyards and in the winery. In 2005, the first wines were launched, and in almost record time Pagos de Aráiz conquered demanding consumers and expert alike, reaping awards and acknowledgement which serve to stimulate the winery to continue improving each day. Consumers in countries such as Japan and the United States can now enjoy Pagos de Aráiz wines, having gained presence in Spain as well in the main international markets in Europe, Asia and America, and so, reinforcing the winery s international vocation. In Olite, the wine growing capital of Navarra, the Pagos de Aráiz winery is fully committed to its philosophy to produce the best wine and impregnate it with the free spirit and joy of this unique venture, different and surprising, open to all.
5 III. INTERACTIVE TERROIR Pagos de Aráiz comprises 400 hectares of land. The vast majority is planted with Tempranillo, Merlot, Graciano and Cabernet Sauvignon grapes. However, previously the land was mainly home to the emblematic Garnacha fruits which are of high prestige in the region. The regions extreme continental climate and clay-limestone soil, form together with its the vines the special Pagos de Aráiz terroir which produces its unique wines. The estate incorporates pioneering vine management and control systems which facilitate interaction between the necessities of the plant and the typical tasks which are carried out during the vegetative cycle of the vineyard. To mention a few, the fertirrigation system, vegetation management and hydric stress control using satellite controlled dendometric systems situated in 20 different locations around the estate. Fertirrigation is a system which optimises the fertilization of the plants, by administering the fertilizers in the most effective and efficient manner throughout the growth cycle. As Pagos de Aráiz policy is to respect the environment in every way possible, the fertirrigation of the vineyard is carried out using natural products, without chemical synthesis, and administered in function of the protocol established in different parcels of the vineyard.
6 Dendometry is a cutting-edge method which thoroughly analyses the status of the grapevine from three different perspectives: the plant, the climate and the soil, the results of which are used to control the development and needs of the plant in almost real time, especially regarding water needs. This system allows us to obtain privileged information on each plot of the vineyard, classifying them through satellite images, differentiating each plot and defining the different types of soil in a real and precise manner. This torrent of information is essential for correctly carrying out the cultural tasks of the vineyards and pinpointing the correct treatment for each different plot. Only when all else fails are these treatments carried out using fitosanitary products. Once the vegetative cycle of the plants is finished, the harvest marks the beginning of the wine making process in Pagos de Aráiz. Harvest time depends on the maturity and sanitary situation of the grape, defined in an exhaustive control and monitoring process, using traditional control systems both in the vineyard and in the laboratory. With systems such as Dyostem, harvesting can be done in different phases, in function of the maturity of each variety. In those areas of the vineyard destined to aged crianza wines, due to the high quality of the fruits, having previously selected clusters of the vines using the green pruning or cluster thinning technique, the grapes are then hand picked by a professional team. In the case of young wines, the grapes are machine harvested and taken to the winery as quickly as possible. Once at the winery, the best fruits are selected via a gentle batonnage of the vines, which allows us to obtain the ripe fruits and leave the greener ones on the plant.
7 IV. OENOLOGY IN THE 21ST CENTURY The m2 that make up the Pagos de Aráiz estate, house the production, ageing and bottling plants, all equipped with the latest technology, 21st century oenology in perfect harmony with traditional wine making methods. The following are but a few examples of the important investments made in creating our state of the art wine making installation: - Double compartment, self-emptying stainless steel tanks, equipped with continuous and automatic pump over systems and cooling jackets. Installation of control and pumping equipment to transport cold and hot water through double independent circuits in order to carry hot or cold water indistinctly to each tank. - Automatic Cap Punchers. - Individual temperature, air and humidity control in each room (individual climatization and humidification). The humidification system uses compressed air and water to create an almost invisible mist, which is distributed equally throughout the warehouse with the movementof each air exchange. -Double selection belt and posterior vibrating fruit selection table. Clusters and/or fruits are selected depending on the sanitary state of the grape. 8 - Peristaltic pumps for moving and transferring wines, gentle and delicate pumping avoids unnecessary pressure. - Latest technological tools, such as the Foss and Dyostem systems. The Foss group is leader in analysing musts and wines to help pinpoint key parameters with quick and precise analysis in record time. Dyostem is a tool which allows us to differentiate between phenolic maturity and technological maturity, thanks to the determination of the sugar content in berries, which also helps to determine the perfect harvest date. Another interesting factor worth mention is that the design and architecture of our winery was planned in such a way as to take advantage of the thermal inertia of each season and so, make considerable saving on energy. All of this technology forms an important part of the wine making process in Pagos de Aráiz, and together with differentiated vinification, not only by varietal, but also by plot, gives way to the creation of complex yet balanced wines, based on the particular characteristics innate to each.
9 V. ON EVERYONES LIPS Pagos de Aráiz wines radiate the freedom, boldness and quality which characterize the strong personality of the brand. Wines full of nuances which speak to the consumer in a familiar and contemporary language. They have quickly become popular with both national consumers and those in Asia Europe and America. Furthermore, critics and art experts have recognised their quality by awarding them high grades in wine guides, prizes and special mentions in many com- petitions, encouraging this young winery to continue to improve and perfect its products. 10 PAGOS DE ARÁIZ ROSADO 2012 Notes 100 % Grenache grapes, grown in traditional vineyards in two different subzones; one with shallow, calcareous soil and the other with clayey soil. The average production of the plots is around 5,500 kg/ha and both have a great vegetative balance with distinguishing nuances which offer complexity. Appellation D. O. NAVARRA Coupage 100% Garnacha Winemaking The wine was made using the traditional method of maceration and vat bleeding, using the force of gravity. Grapes were harvested separately, at the optimum moment of ripeness in each zone, and then destemmed. After a brief maceration period, the must was extracted, using the bleeding method, and slowly fermented at strictly controlled temperature in stainless steel tanks. It was then left in contact with its lees for 1 month, after which the wine was then racked and blended. Production is limited to 28,000 numbered bottles. Tasting Colour: bright and attractive rich red colour with violet glints. Nose: great aromatic complexity, bright red fruit particularly stands out, with hints of strawberry flavoured sweets and cherry pulp, aniseed undertones and delicate tones of pastries and fine herbs. Palate: ample and expressive on the palate, the wine has a sweet, pleasant attack due to the red fruit presence, perfectly balanced with the fresh crispness of the acidity, leading to a long and stable finish. Volume and lively sensations in the aftertaste invite you to take another sip, reminiscent of the countryside. Food pairing Perfect with rice dishes, white meat and all kinds of fish. Perfectly complements the taste and texture of appetizers, tostas, vegetable dishes, etc. Alcohol content: 14% Vol. Format: 750 ml. Serving temperature: 8-10o C
11 PAGOS DE ARÁIZ ROBLE 2011 Notes Bright red with ruby red hues at the rim of the glass, medium-high intensity, rich robe wine. Appellation D. O. NAVARRA Coupage 50% Tempranillo, 40% Cabernet Sauvignon and 10% Graciano Winemaking Processing is carried out separately in order to obtain different aroma and taste profiles in accordance with each varietal and its stage of ripeness. Fermentation and maceration take 8 to 12 days, at controlled temperature, in stainless steel vats. After malolactic fermentation and before the final coupage, the wine spends on average 5 months in American and French oak Bordeaux style barrels; times differ for each varietal. Tasting Colour: bright red with ruby red hues at the rim of the glass, medium-high intensity, rich robe wine. Nose: fresh, clean aromas, red fruit candies, liquorice, notes of wild berries mixed with spicy tones on a balsamic background. Well integrated cocoa flavours acquired during aging. Palate: elegant, complex and long taste. The attack is mouth-filling, sweet, very fruity and smooth with mature tannins. Toasty, caramel and vanilla sensations shine through and maintain their intensity in the aftertaste. Alcohol content: 14% Vol. Format: 750 ml. Serving temperature: 18º C Ageing capacity: 6 years approximately.
12 PAGOS DE ARÁIZ CRIANZA 2010 Notes 2010 was a generally dry year with mild temperatures; the growth cycle was calm and turned out to be longer than other years, the grapes ripened progressively. Appellation D. O. NAVARRA Coupage 50% Merlot, 25% Cabernet Sauvignon and 25% Tempranillo Aging The grapes were harvested and taken to the winery where they were separated from the stems and incubated, strictly controlling temperature and time during the pre-fermenting stage. Great care was taken during alcoholic fermentation, optimizing the extraction process during maceration when the must was in contact with the grape skins. After racking, the wine then underwent malolactic fermentation in French and American oak casks for 11 months. Finally, aging was completed in stainless steel tanks for 6 months, prior to bottling. Tasting Colour: medium-high robe, intense red tone. Bright and vivid. Nose: the nose is intense, awakening an enveloping array of aromas; the initial black fruit and red fruit preserve mingle with subtle toast, vanilla and caramel sensations to form a very attractive bouquet. Palate: this wine is pleasant and noble with a round mid-palate; the aftertaste has plenty of character and is marked by the depth of the wood and the personality of the fruit, very persistent. Alcohol: 14% Vol. Format: 750 ml. Serving temperature: 18ºC Ageing capacity: 6 years approximately.
13 BLANEO 2011 Notes Produced from Syrah grown on slopes at between 360 and 380 metres above sea level, the soil in the lower area has a sand clay loam texture, whilst the higher plots have calcareous clay soils. The vineyard boasts a natural environment, enjoying a continental climate with Atlantic influence. Production is limited to a maximum of 4,500 Kilos per hectare, offering balanced maturity with smooth sweet tannins. Appellation D.O. NAVARRA Coupage 100% Syrah Winemaking The fruit is harvested manually and placed in 12 Kg boxes, only the vineyard s highest quality grapes are selected. On arrival at the winery, the fruit is carefully sorted once again before vatting. Fermentation and maceration are carried out for 18 days in stainless steel tanks at low temperatures, meticulously extracting the noble elements of the fruit. Malolactic fermentation is carried out in French oak casks, during which the wine is left on lees for 3 months. The wine is then matured in French (80%) and American (20%) oak casks for 12 months. Natural stabilisation. Tasting Colour: deep, intense colour with a violet hue. Nose: the nose opened with an intense variety of floral and fruity aromas forming an expressive ensemble, toasty aromas add complexity and emphasize the mature character of the fruit. The background is spicy and balsamic with hints of liquorice, toasted bread and cocoa mingled in an attractive combination of sensations. Palate: on the palate this wine is full, elegant, subtle and fleshy, reflecting the unique character of the soil. Lively, intense flavours of ripe fruit are interlaced with hints of oak acquired through aging, highlighting the mid-palate in a sweet, voluble manner. The retronasal passage accentuates the wine s depth and the finish is persistent, leaving great memories. Alcohol content: 14,5% Vol. Format: 750 ml. Serving temperature: 18ºC
14 VI. WINIMAGINARY The Pagos de Aráiz winery is a special haven which offers much more than an opportunity to learn about the wine making process. Pagos de Aráiz is an open and dynamic winery which boasts surprising retreats which transport their visitor to a wine inspired universe of unique and magic visions. The art of wine making is intertwined with images of the past and futuristic visions which create a unique fusion of indescribable experiences. The result of a very peculiar form of understanding wine, through light and shade, colours, aromas, art, sounds, and thousands of nuances.
