3 Discov er GSM A STYLE YOU RE SURE TO LOVE GSM stands for Grenache, Shiraz and Mouvèdre (also known as Mataro), the three grapes that make up this red blend. It has become a hugely important style in the Barossa and is inspired by wines from Southern Rhône (did somebody say Chateauneuf du Pape?). Grenache is the key grape in Rhône reds and can be blended with 8 other varieties, but the region s style is defined by Shiraz and Mourvèdre. The Australians decided to adopt the blend as their own; wine writer Max Allen describes it as gutsy, spicy, leathery, complex and rustic. Often the Barossan fruit is from old vines so the flavours are wonderfully concentrated. If you like reds with deep colour and a dark, mysterious side to their fruit flavour you will love GSM. It s our favourite winter red style this year - brooding, plush and palate-coating. Start with the McLean s Farm Reserve Barossa Shiraz Grenache Mataro on the front cover and try it with osso bucco, braised lamb shanks or sticky pork ribs. CHARACTERS TO LOOK FOR IN GSM Grenache brings a lightness to the palate along with raspberry and cinnamon characters. The Shiraz is responsible for dark fruit notes like blueberry, plums and even black olives, as well as its trademark pepper. Mourvèdre gives the blend its lovely floral aromas, dark colour and the tannin structure that brings the whole style together. If in doubt, look at the recommendation on the back label, or visit the winery's website. When you ve invested in a beautiful bottle of wine you ll want to look after it so here are our at-home cellaring tips: Make sure you store your wine away from vibrations (under the stairs or near the laundry is a no-no) Choose somewhere dark, but not damp, with a steady temperature. You don t need fancy wine racks, but do store bottles on their side - especially if they re sealed with cork. If corks dry out they shrink and your wine may become oxidised. Keep a record of what you have and its recommended cellaring time so you don t miss a wine at its peak Try cellaring different wines from the same vintage and then compare the impact bottle age has on different styles.
