3 WELCOME The Perth Royal Wine Awards are Western Australia s premium wine competition, overseen by a prestigious team of WA, interstate and international judges. Wine has been judged at the Perth Royal Show since 1843 and the competition is regarded as critical to the success of establishing a national and even international reputation for the WA wine industry. 4 SCHOLARSHIPS WINE INDUSTRY SCHOLARSHIP The Royal Agricultural Society of WA (RASWA) is pleased to offer the inaugural Wine Industry Scholarship in recognition of Bill Jamieson for his contribution to RASWA and the development of the WA wine industry. The scholarship will provide financial assistance for up to two years to a student undertaking tertiary study in a wine related discipline to help support their career in the wine industry. Please note applicants must have already successfully completed at least one year of the relevant course. For further information, please visit ADVANCED WINE JUDGES SCHOLARSHIP The Royal Agricultural Society of WA (RASWA) is pleased to offer the Advanced Wine Judges Scholarship (value $4680) in recognition of John Hanley AO and his contribution to the Perth Royal Wine Awards over 43 continuous years. The Advanced Wine Assessment Course (AWAC) is an intensive four-day course designed for participants with considerable formal wine tasting experience. It aims to prepare potential new wine show judges and develop the sensory analysis capabilities and the vocabulary of Australian wine industry personnel at an elite level. 7 FOOD AND WINE A FRESH PERSPECTIVE By John Clark 2018 has been a year of dramatic growth for the Perth Royal Food Awards, with Smallgoods, Branded Meats, Cider, Pantry and Alternative Milk Products competitions added to the portfolio, and with competitions planned for As the dust settles after a huge year of celebrating the best in food and wine, we take a moment to chat with Millbrook Winery s head chef and 2017 The West Australian Good Food Guide Chef of the Year Guy Jeffreys about his approach to cooking, produce selection and wine. 7

8 FOOD AND WINE The kitchen garden at Millbrook is central to the experience, what does it mean to you growing, preparing and serving ingredients you ve produced yourself? Everything, it s a lifestyle. We have 1 acre of heirloom vegetable garden, 2 acres of 90 year old orchard, and an acre of olive grove. We haven t bought any fruit or vegetables for the restaurant in the last couple of years. The chefs do all the gardening. 100% is grown from seed and about 60% is grown from the previous seasons saved seeds. We don t use chemicals or sprays and it s all done by hand. Tell us a bit about yourself! Where are you from? I m originally from Noosa heads QLD, but I call WA home now. How long have you been a chef? 25 years. Where else have you worked before Millbrook? Star Anise, Leeuwin Estate, Divido. What got you into food? I wanted to leave school and surf all day so I thought cooking at night would be a way to do that, then I quickly found out split shifts are a thing! How long have you been at Millbrook? 8 ½ years. What are your favourite vegetables to grow and cook with in the restaurant? Whatever is in season, and whatever we pick that morning! We grow about 100 different varieties of vegetables over the year so it s a bit like picking a favourite child. But, I would say tomatoes in Summer, blood plums in Autumn, broccoli in Winter and asparagus in Spring. How often do you change the menu? All the time, sometimes in the middle of service! What s your favourite varietal or wine Millbrook s winemaker Damian Hutton makes and why? Definitely Viognier, it s grown on the property and unique to our region. What s the secret to success for a winery restaurant these days? The whole package done well and with passion. What s the most important thing for a chef or restauranteur to remember? Enjoy what you do and the customer will too. 8

9 FOOD AND WINE STEAMED SPRING GARDEN GREENS AND MUSSELS, BAKED FISH You can use whatever vegetables that are in your garden, or whatever looks fresh at the farmers market. Below is a list of what we pull out of our garden on a spring day Serves 4 as a quick, tasty treat INGREDIENTS 4 x 200g fish portions 4 knobs butter 8 kale leaves 8 silverbeet leaves 8 asparagus spears A large handful of podded broadbeans 4 small fennel bulbs, fronds reserved for garnish 1 kg mussels, bearded 1 chilli, sliced 3 garlic cloves, sliced 1 lemon, juiced Salt, pepper and olive oil METHOD Season the fish, place a knob of butter on top of each portion and bake in the oven. Grab a large heavy based pot and place all ingredients in apart from the fennel fronds and lemon juice, put on a tight fitting lid and place on a high flame. As soon as it starts to steam take off the heat and stir through the lemon juice. Serve with fennel fronds, baked fish and a bottle of Viognier. 9

10 PERTH ROYAL WINE AWARDS TODAY AND TOMORROW By Larry Jorgensen, Wine of WA CEO The Perth Royal Food Awards are an important event in the annual calendar for WA producers of premium food and beverages. The opportunity to compare efforts against those of our peers is both a learning process and an opportunity to gain further insights into how our products are perceived in the marketplace. Importantly, the Awards are innovating to ensure producers have access to these opportunities to learn and evolve. 10

11 In the case of wine, it is a process that involves both peer review and consideration by industry experts from a diverse range of perspectives. Judging panels these days consist not only of winemakers. Show committees are aware that, while technical assessment is important, the extra dimensions that separate gold medal wines from the rest are largely subjective. It is best to have a range of perspectives to interpret these qualities and those closest to the customer offer input that can help winemakers understand what these are. So, we now see sommeliers and retailers join winemakers and wine writers on judging panels to help tease out the best from the rest. The discussions that occur offline, between classes, can be as valuable as the judging process. Simple conversation can reveal emerging trends across the wine value chain. New clonal material and growing/production initiatives are as interesting to the purveyor of wine as consumer trends and preferences are to the growers and makers of fine wine. Wine shows provide the space for this to happen. The resulting fomentation of ideas has consistently been a driver of innovation and development in our industry. The Wines of Provenance is a further example of innovation. Wine shows are a snapshot in time in the life of a wine, be that on release in current vintage classes or with age in museum classes. The opportunity for judges to see the same wine over time is a privilege and an instructive one. The stories that flow from these provide confirmation of Australia s commitment to producing fine wine that comes from special places. The Royal Agricultural Society of WA has taken industry development to heart by linking two scholarship awards to the Perth Royal Wine Show. industry. Valued up to $12,000, the scholarship will provide financial assistance for up to two years to a student undertaking tertiary study in a wine related discipline to help support their career in the wine industry. The Advanced Wine Judges Scholarship was developed by the RASWA Wine Committee to support education in agribusiness. The scholarship has been named after John Hanley, AO in recognition of 43 years contribution to the Perth Royal Wine Show and is intended to support the development of excellence in the WA wine tasting sector. This includes the winner having the opportunity to attend one of the pre-eminent Wine Sensory Evaluation courses in Australia. The intent of agricultural show awards has always been to improve the breed. As Australia moves towards greater value-adding and production of premium products, this requires a focus by agricultural shows on attributes that support higher value propositions. The Perth Royal Wine Show committee is adopting initiatives to help Australian wine producers achieve this aim. This effort all flows down the value chain to support profitable sales and growth. The federal $50 million wine industry support package aims to capture the energy of wine producers who are committed to increasing the value of their products. A comprehensive program to bring the message to the world that Australian wine is made our way is currently rolling out in our key markets. Additionally, in each state, funding is available to states and regions to support growth in wine tourism. The authenticity of our wine offer is integral to successfully growing wine tourism. The Perth Royal Wine Awards are an important part of this. The inaugural Wine Industry Scholarship recognises Bill Jamieson for his contribution to the society and the development of the WA wine 11

18 MEET THE JUDGES CHIEF JUDGE CORRINA WRIGHT (SA) CHIEF JUDGE Corrina Wright has wine and 171 years of family grape growing flowing through her veins. Described by WBM Magazine as a legend in the making and by James Halliday as being part of a remarkable dynasty she s treading a slightly different path among the vines that her forefathers planted, in the Seaview sub-region of McLaren Vale. Along the path of her winemaking career she has collected a display case full of awards that would make even the most celebrated winemaker blush. She graduated from the prestigious Len Evans Tutorial in 2005, and continues to judge and chair at numerous wine shows around Australia. Her commitment to the wine industry in Australia was rewarded with a position on the inaugural Future Leaders Succession for the Australian Wine Industry program in

19 PANEL JUDGES MEET THE JUDGES KIM BICKLEY (NSW) PANEL JUDGE Kim Bickley has been referred to as one of the top Sommeliers in the country. Having previously worked at award winning restaurants Glass Brasserie (Hilton Sydney) and Black by Ezard (The Star Sydney). Moving to the other side of wine sales, she became a wine educator, teaching WSET wine courses for Lion Beverages/FWP alongside being the brand ambassador for Bollinger Champagne and Henschke wines. Most recently Kim has relocated to the picturesque Hunter Valley and is working alongside her partner and one of the Hunter s top producers, Thomas Wines. A CMS Certified Sommelier, who finished in the top eleven students who were certified by the Court of Master Sommeliers in Australia in 2008; Kim is also a wine show judge, a Len Evans and Sommeliers Australia Tutorial Scholar and was the first, of only two Australians in the International Landmark Australia Tutorial In 2015 she attended AWRI s Advanced Wine Assessment Course and is now the newest member of the Wine Selectors Tasting Panel. TRINA SMITH (SA) PANEL JUDGE Exchanging accounting for vineyards, Trina Smith followed her heart and has never looked back. Having travelled the world creating vintages and experiencing ways of winemaking from all over, in October 2017 Trina arrived atjacob s Creek as Group White and Sparkling Winemaker to inject her international knowledge, exceptional skills and remarkable understanding of sparkling into one of Australia s leading sparkling and still wine portfolios. ROB DILETTI (WA) PANEL JUDGE Robert Diletti has been part of Castle Rock Estate since its inception in He can still remember helping plant the first vines as a six year old in Many a school holiday and weekend was spent helping his parents on the vineyard. In 1995 he enrolled in the Charles Sturt University winemaking course, graduating in After finishing his studies Rob worked at Mountadam and Alkoomi, completed a vintage in Alsace, France and then returned to Castle Rock Estate to design and build the winery with his family. Rob has been a wine judge at the Perth Wine Show, Sydney Wine Show, and National Canberra Wine Show and Qantas wine show of Western Australia. As well as receiving many awards for his wines, Rob also has achieved many personal accolades including being a finalist in Gourmet Traveller Winemaker of the Year Awards in 2012 and was the inaugural Wine Maker of the Year in James Halliday s 2015 Wine Companion! 19

20 MEET THE JUDGES PANEL JUDGES ARCH KOSOVICH (WA) PANEL JUDGE Arch is winemaker at the family winery, John Kosovich Wines, where he oversees wines made from their Swan Valley and Pemberton vineyards. Established in 1922 it is one of the states oldest wineries. Arch has judged for 20 years and is experienced with a wide range of wine styles and their production. Currently a member of the Perth Royal Wine Show Committee as well as the Singapore Airlines Swan Valley Wine Show committee. KIM HORTON (WA) PANEL JUDGE Senior winemaker at Willow Bridge Estate, Western Australia since Making wine in WA since Charles Sturt graduate with over fifteen years judging experience. A fascination with wine and vineyards at a young age whilst growing up in the Swan Valley, led to Kim s first position in the wine industry during vintage 1995 with Houghton Wines. Following a successful vintage he went on to study Oenology at Charles Sturt University in Wagga Wagga. 21 years later, he finds himself at Willow Bridge in the Ferguson Valley and in front of him, an opportunity to work within a team whom have the drive and ambition to further build and enhance the Willow Bridge tradition. Kim has a firm belief that wines are made in the vineyard, the better the understanding of the vineyard and it s unique characteristics, the better the wines reflect the soil and the climate. 20

21 SENIOR JUDGES MEET THE JUDGES TONI PATTERSON (NSW) SENIOR JUDGE Toni Paterson is a highly experienced wine professional with 25 years experience. With a background in science and winemaking, Paterson has been writing and communicating about wine for the past 17 years. She joined the Institute of the Masters of Wine in 2003 and was awarded the prestigious Madame Lily Bollinger Medal for tasting excellence. Paterson has judged at numerous local and international wine shows and currently writes with Gourmet Traveller WINE, Australian House and Garden magazine and The Real Review. With Gourmet Traveller WINE, she is also a member of the tasting panel, as well as a judge for the Winemaker of the Year Awards. She is also co-chair of Australia s and China s Wine List of the Year competitions. MICHAEL JOHNSTONE (TAS) SENIOR JUDGE Michael has been involved in the liquor industry most of his life working in wholesale, retail, hospitality, multiple vineyards and wineries both in the cellar and the vineyard. He is currently the General Manager of David Johnstone & Associates, a family business that has been operating in the Tasmanian liquor market for over 30 years. Michael also travels whenever he gets the chance to explore wine regions both in Australia and overseas. A big passion for Michael is matching food with wine while exploring the neverending rabbit warren that is people s opinions of wine. After completing the AWAC course in Adelaide in 2017 his enthusiasm has only grown stronger and desire to judge intensified. Michael has joined the Perth Senior Judging Team as part of an exchange program with the Royal Hobart Wine Show. TONY DAVIES (WA) SENIOR JUDGE Tony (Snake) Davis, completed a university degree in Science and Engineering before finding that he was utterly unsuited to it. Having stumbled across Margaret River, Tony s life changed forever; he enrolled at Roseworthy Campus, University of Adelaide. Several vintages followed in the Eden Valley (SA), Oregon (USA) Beaujolais (France) and Tasmania before landing his formative role for three years at Plantagent (WA). Next to follow was Brown Brothers, before taking a senior winemaking role at Yalumba. Tony spent a six-year stint designing Millbrook Winery in the Perth Hills, and four years as Chief Wine Maker with Howard Park in Margaret River. Eventually he landed at Snake & Herring. 21

22 MEET THE JUDGES SENIOR JUDGES DAMIAN HUTTON (WA) SENIOR JUDGE In 1987 at the age of 15, started in the vineyards at Houghton Wines in the Swan Valley Under the guidance of Uncle Ron Page, during school Holidays. On completion of year 12 and acceptance into university to study Commerce, opted to take a break from study for a year and was transferred to the winery Cellar for the 1990 vintage as Full time Cellar hand under Peter Dawson and Paul Lapsley. After Completion of the Vintage and the remainder of the year in the cellar I chose to travel around Australia, living in Sydney and Queensland working in restaurants and Agriculture until returning to Houghton s to see the tail end of the 1995 vintage and then the full 1996 Vintage working under Paul Lapsley and John Griffith. Transferred to Hardy s Tintara in McLarenvale in 1997, to work along side Larrry Cherubino and Robb Mann; under the guidance of Stephen Pannell for the Vintages. During which time I returned to full time study at Adelaide University to study Oenology. As part of the course I returned to Houghtons to work under Larry Cherubino and Ross Pamment for the 2001 Vintage. On completion of University study moved to Alkoomi for the 2002 Vintage under Michael Staniford. In 2002 the opportunity to move to Millbrook Winery in the Perth Hills came up under Tony Davis and was Assistant to Tony for the Vintages. From have headed winemaking operations at Millbrook Winery. I have judged at; Perth Hills Wine Show Wine Show of WA Boutique Wine Show of WA Rutherglen Wine Show Perth Royal Wine Awards SEVERINE LOGAN (WA) SENIOR JUDGE Severine Logan grew up in the Loire Valley. After graduating from a Bachelor degree of oenology from Toulouse University, she spent 5 years working across multiple regions in France including Bordeaux, Alsace, Corsica and Burgundy. In 1995, she packed her bag and travelled to Australia to work vintage at Brown Brothers in Victoria. The love affair with Australian wines started and the next year, she moved to Western Australia where she worked for the next 5 years. She spent another 6 years as winemaker for Rosemount Estates in the Hunter Valley before joining Watershed in Margaret River in 2007 as head winemaker. She has completed the AWAC course and in 2014, she was a scholar of the Len Evans Tutorial. She has judging experience in France, Wine show of WA, Swan Valley show, Hobart and Perth Royal Show. 22

23 SENIOR JUDGES MEET THE JUDGES ANN MARIE TAMBURRI (WA) SENIOR JUDGE Ann Marie has been working in the family s wine store La Vigna for over 15 years. She has been associated with the liquor industry all her life as part of the family business. Ann Marie now runs La Vigna, one of Perth s leading Independent Wine Stores, which has been run by the Tamburri family for over 20 years. Having judged at Perth Hills, Swan Valley, Wine Show of WA, Geographe and the Perth Royal Wine Show, Ann Marie has been an important independent voice in Western Australia. Ann Marie regularly visits wine growing regions and producers in Australia and overseas, and has a strong passion and interest for the wine industry. LANCE PARKIN (WA) SENIOR JUDGE Lance Parkin was born in Perth, Western Australia, son of an Agricultural Scientist- Ron, who sparked his interest in Viticulture. Early life was spent in Albany with much of it on the family farm. Lance completed a Bachelor of Viticulture and Oenology at Curtin University and was awarded Dux and the Oenology and Sensory Awards. He has been a winemaker at Houghton Wines for 14 years. During this time he has ventured overseas to complete vintage s at Covey Run in Washington State, Ramos Pinto in the Douro Valley, Dr. Loosen in the Mosel, Ceretto in Barolo and at Domaine Dublere in Burgundy. Lance has been a Judge at the Wine Show of Western Australia and Royal Hobart Wine Show and Associate judge at the Sydney Royal Wine Show, Royal Melbourne Wine Awards, Perth Royal Wine Awards, Royal Queensland Wine Show, Margaret River Wine Show and Swan Valley Wine Show. He is a lover of French wine and holds several White Burgundy tastings each year, benchmarking them against top Australian Chardonnay. 23 TONY ROBINSON (SA) SENIOR JUDGE Dr Tony Robinson resides in the Barossa Valley and is the Grape and Wine Innovation Strategist for Treasury Wine Estates. Originally from Perth in Western Australia, he started his career in 2000 and has worked in a range of roles across the wine industry from retail to research to viticultural management and winemaking. As a winemaker, Tony has produced wines for innovative and award winning brands, while as a researcher, he has published a number of peer reviewed papers on wine chemistry and sensory science. Tony is the current ASVO President, a Director of the AWITC, and part of the 2017 Wine Australia Future Leaders Program. He has participated in 44 wine shows since 2002, in either an organisational or judging capacity, and was a co-author of the 2015 ASVO Wine Show Best Practice Recommendations. Tony completed the AWRI Advanced Wine Assessment Course in 2014 and was Dux of the 2016 AWRI Barossa Wine Assessment Training course.

24 MEET THE JUDGES SENIOR JUDGES ROB MANN (WA) PANEL JUDGE Worked throughout Australia and Italy in Winemaking roles for the Hardy wine company culminating in Senior winemaker position at Hardy s Tintara in Moved to Cape Mentelle in Margaret River in 2005 as Senior winemaker and in 2007 as Estate Director holding that position until 2014 when the role of Estate Director for Newton Vineyards in Napa Valley enticed Rob and his family to move to California for 4 vintages returning back to Australia in 2017 with his wife Genevieve and two boys to focus on the family wine business Corymbia ANNA HOOPER (SA) PANEL JUDGE Anna Hooper is the Chief Executive Officer of Australian Vignerons, the representative organisation for winegrape growers across Australia. In her previous role as Head Winemaker and General Manager of Cape Jaffa Wines in Mount Benson, she produced a range of wines from across the Limestone Coast. Anna continues to take on a number of winemaking projects and consultancy roles in both France and Australia with her focus remaining close to home, in the Limestone Coast. Following the completion of a degree in Agricultural Science, Anna travelled and worked extensively in wineries overseas, including Georgia, France, and South Africa and has enjoyed working with a wide range of wine styles throughout her career. Anna is an experienced wine show judge and has spent a number of years judging at the Royal Adelaide Wine Show, as well as The Australian Alternative Varieties Wine Show, The Great Australian Red Challenge and The Limestone Coast Wine Show. Anna is also a graduate of the Advanced Wine Assessment Course. She has served on a number of State and National Boards and was President of the Mount Benson Vignerons Association for seven years. She currently sits on the Limestone Coast Grape and Wine Industry Council as well as the South East Water Conservation and Drainage Board. She has a Masters degree in Agribusiness, is a graduate of the Australian Institute of Company Directors and the recipient of the S.A. Rural Women s Award in
