Spring will be springing shortly, and hopefully, we will have a less wet spring than we had winter. I hope you all are fairing well; probably your farm animals (if you have any) are doing better, and you can start planning your spring and summer gardens Nicole Gwishiri Bath CEA For Family and Consumer Sciences Education February was a busy time at the Extension Office for Family and Consumer Sciences Extension. We had several programs here and at the Bath County Memorial Library. Our Cooking For Two program was a great success and a lot of fun. We also had Cook Thru the Calendar, and we had a great turnout at the Licking River Area Leadership Day program in Mason County. We will continue to host our lesson sharing this way, so if you did not attend in the fall in Montgomery County or last month, please try to visit as we have a ton of fun. Stories, Songs, and Stretches also occurred at the Bath County Memorial Library and focused on preparing preschoolers for Kindergarten. Laykin Butcher, our SNAP-Ed Assistant, had her healthy cooking and living series at the Library as well. This month there is a community health fair at Owingsville Elementary School. Bath County Extension will be hosting two tables one for food samples with Laykin and myself and another that will be geared towards kids activities with Terence and Rob. It begins at 5 pm, and I hope you will join us. It is a great time, and you can receive a lot of screenings for free. Truth & Consequences will be held at the Bath County Middle School at 8 am, and we are looking forward to all of the volunteers being there for this annual program focusing on drug and alcohol use with teens and preteens. There is also a March Against Drugs program on March 29 that begins at the middle school and ends with a presentation in the gym at Bath County High School. If you are interested in attending the program, it starts at 1 pm. Spring is on it way! Time to start getting ready to think about gardens, turning ground, just regular farming. I know we have had a lot of rain and I just hope it doesn't turn off dry as a bone. Well we, the homemakers are having a fundraiser to raise money for our projects. We are having Dick Garrett to do a fish fry with us. The date for our fundraiser is Friday, March 22 At 4:00 to 7:30 PM at the Extension Office. We also will have baskets to bid off and some homemade food products. The price is $10.00 for the fish meal, drink and homemade desserts. We really need your support for this project to continue with our local scholarship and other local projects. I hope you will come out and participate and help us raise the money we need and eat a good meal and bid on some great deals. Hope to see you there. God Bless Lois Ginn

2 Page 2 Building Strong Families in Bath County Truth and Consequences is an annual programming that focuses on students doing a simulation of what occurs when they get caught using drugs and alcohol. Volunteers are utilized to walk with kids to discuss the consequences of their choices. When: March 22 Where: Bath County Middle School Time: 8 am We would love to have you as a volunteer! Join us at the Extension Office for your Friday Night Dinner! This fundraiser is to support the Bath County Homemaker Scholarships given out each year. The fish fry consists of a dinner of fried fish, coleslaw, beans, a dessert, and drink for a donation of at least $10. It is sure to be a great time of fellowshipping with the community. Also, there will be themed baskets auctioned off, as well as a silent auction that supports the Bath County Homemakers outreach programming. When: March 22 Where: Bath County Ag Center Time: 4 pm to 7:30 pm Join SNAP-Ed Assistant Laykin Butcher for her program on healthy tips for losing weight and keeping it off. She will be providing tips and tricks that are long lasting, healthy, and fun. She will also be sharing recipes. 5 Page 5 Preschoolers learned how to make a healthy treat of yogurt parfaits after listening to our monthly story. Scrapbook Club made several valentines for local residents at Ridgeway Nursing Home, Owingsville Manor, and Hazel Hills. Our Cooking for 2 program was a great time for families to share knowledge, learn new skills, and have a delicious meal! Extension Homemakers attend the Leadership Day in Mason County. We had 13 leaders attend that day and we had lots of fun!

7 Page 7 Experts assert that if food were a country, it would rank third behind China and the US as one of the biggest greenhouse gas polluters. The reason is the ever-rising demand for meat. Livestock farming is responsible for 14.5 percent of global methane emissions. While cows are the worse offenders, pigs, sheep, and other animals contribute as well. Animal husbandry also causes land and water degradation, biodiversity loss, and deforestation. With the world population forecast to rise to 9.8 billion by 2050, things are only looking worse for our already dwindling natural resources. While going vegetarian would undoubtedly help, meat consumption is too ingrained in most western diets to allow for such a drastic, permanent shift. That is why environmentalists are advocating substituting some of the beef, chicken, or pork with delectable bugs! Insects, which transition from larva to pupa to adult within a matter of months, if not weeks, are ready for consumption much faster than livestock. They also require much less room, use a fraction of the water and food needed for animal livestock, and produce far less greenhouse gas and ammonia. Of the 1.1 million insect species worldwide, scientists have identified 1,700 as edible. Among them are termites, ants, grasshoppers, crickets, grubs, and earthworms. Just like livestock, each insect has a distinct taste. Termites are tangy and minty, tree worms taste just like pork, and sago grubs are similar to bacon. While eating bugs might be a new concept for Western Hemisphere residents, over 2 billion people worldwide consume these critters as a regular part of their diet. Besides being delicious, bugs are high in protein, have very few calories, and are free of the saturated fat found in animal meat. Insects are also very versatile. Creative chefs can use them to whip up protein-rich soup stocks, make crunchy baked treats, and even stir-fry a few with their vegetables. Fortunately, those unable to stomach the thought of cracking open the crispy shell of a tarantula the way they would tear into a Dungeness crab have other choices. They can replace some of their regular protein sources by using cricket flour for baking or select one of the many readymade products, such as pasta and crackers, which incorporate the insect flour. So go ahead and kick trepidation to the curb - both your body and Mother Earth will thank you for it!

12 Teaching. Research. Extension. As many of you know, I am taking maternity leave from March 11 until June 3. My family and I are excited to welcome a new baby and I am so grateful for the outpouring of love and support from all of you. I look Bath County Cooperative Extension 2914 E. Please don t forget to have your quilt squares into the office by May 1 to be taken to the state meeting, and also if you know of anyone who is interested in the annual scholarship, to please apply! Choosing from all of the food groups will give you the energy you need between meals. It helps to plan and portion out snacks in advance. Kids will usually only need 2 or 3 snacks daily, and these should be provided at least one hour before meals. It is recommended that snacks (and meals) be eaten in an area without distractions. So avoid snacking while watching TV or when using other electronic devices. Better yet, prepare the healthy snacks with your parents. Here are a few Easy, Tasty (and Healthy) Snacks to help you get started. 1. Parfait: Layer vanilla or plain low-fat yogurt with fruit and dried cereal. 2. Toast a whole grain waffle and top with low-fat yogurt and sliced fruit or smooth nut butter. 3. Blend low-fat milk, frozen strawberries, and a banana for 30 seconds for a delicious smoothie. 4. Sandwich cut-outs: Make a sandwich on whole grain bread. Cut out your favorite shape using a big cookie cutter. Eat the fun shape and the edges, too! 5. Mini-pizza: Toast a whole wheat English muffin, drizzle with pizza sauce and sprinkle with low-fat mozzarella cheese. 6. Frozen Treats: Mix equal amounts of fat-free plain or flavored yogurt with 100% fruit juice, then pour into paper cups and freeze for a tasty treat. 7. Quesadilla: Sprinkle shredded cheese over a corn or whole wheat tortilla; fold in half and microwave for 20 seconds. Top with salsa. 8. Spread hummus on a tortilla. Top with a slice of turkey or ham, low-fat cheese and lettuce. Then roll it up. 9. Stuff a whole-grain pita pocket with ricotta cheese and Granny Smith apple slices. Add a dash of cinnamon. 10. Microwave a cup of tomato or vegetable soup and enjoy with whole grain crackers. Find more healthy eating tips at:
