7 Feature Recipe Empanadas with blue cheese, bone marrow and black truffle Makes 10 Empanadas Ingredients: 3 Pampas Ready Rolled Puff Pastry sheets 2 egg wash 200g blue cheese 2L Crisco Endura Oil 100g jus 40g honey 15g black truffle, shaved 300g bone marrow Honey, extra to serve Black truffle, shaved, extra to serve Method: 1. Cut the Pampas Ready Rolled Puff Pastry into 10 even circles with a diameter of 8cm, then brush with the egg wash 2. Add 20g of the blue cheese to the middle of each pastry circle. Fold over the pastry and tightly crimp the edges closed. Set aside 3. Heat the oil to 160 C then gently fry the pastry until golden. Place aside on a paper towel to soak up the extra oil 4. In a saucepan, boil the jus to a sticky consistency, then add the honey and shaved black truffle. Remove from heat and rest for 10 minutes until the flavour is infused 5. Heat the bone marrow in the oven for 5 minutes 6. To serve, place the empanadas on a plate and drizzle with the jus sauce. Scrape the bone marrow over the top, and finish with a drizzle of honey and shaved black truffle 10 11

19 Feature Recipe Lemon and garlic roast turkey buffé Serves 8-10 Ingredients: 100g butter 1 small brown onion, finely diced 2 rashers bacon, finely diced 2 tbsp parsley, finely chopped ¼ cup dried cranberries ¼ cup slivered almonds 2 cups breadcrumbs Salt and pepper, to season 1 large Ingham s Buffé Turkey 4 lemons, cut in half 2 garlic bulbs, cut in half 1 small bunch of sage Olive oil Method: 1. Preheat oven to 180 C 2. Melt half of the butter in a large frypan and gently saute the onion and bacon. Once lightly coloured, remove from the heat and add parsley, cranberries, almonds and breadcrumbs. Season mixture with salt and pepper 3. Stuff the crumb mixture into the neck cavity of the Ingham s Buffe Turkey, fold skin back over and secure with toothpicks. Stuff the rib cage cavity with lemons, garlic and sage 4. Place stuffed turkey on a wire rack in a large roasting tray. Heat a couple of tablespoons of olive oil with remaining butter and brush over the turkey. Cover with a layer of baking paper and then with foil 5. Place turkey on the lowest rack in the oven and roast for 30 minutes. Remove from the oven, and lift off foil and paper. Baste with pan juices, re-cover and roast for a further 30 minutes. Remove from the oven again and discard foil and paper. Baste once more and roast uncovered for a further 20 minutes or until skin is golden and crispy 6. Serve with roast potatoes 34 35

23 Feature Recipe Maple glazed ham with grilled stone fruit Serves 20 Ingredients: 1 cup brown sugar 1 cup maple syrup 1 cup honey 2 tbsp Dijon mustard 1 cup orange juice 1 Primo Smallgoods Whole Leg Ham on the Bone Cloves 4 yellow peaches 4 yellow nectarines 2 tbsp caster sugar Rosemary, to garnish Method: 1. Preheat oven to 180 C 2. In a medium saucepan, combine the brown sugar, maple syrup, honey, mustard and orange juice. Bring to a boil before reducing to a simmer. Reduce liquid to a syrup 3. Prepare the Primo Smallgoods Whole Leg Ham on the Bone by running a sharp knife around the rind on the shank bone and just under the edge of the rind. Gently run fingers under the rind to separate it from the fat and discard 4. Place ham on a baking tray fatty side up. Make shallow score lines on the fat in a diamond pattern. Stud each diamond with a clove and brush on about one third of the glaze over the fat. Place tray on the lowest rack in the oven and reglaze every 20 minutes 5. Prepare the stone fruit by cutting cheeks of flesh off the stone. Place caster sugar on small plate and press cut side of fruit into the sugar. Grill on a hot BBQ or skillet 6.
