2 Welcome! It is our pleasure to welcome you to Colorado Springs for the 2014 Rocky Mountain Microbrewing Symposium! We have planned a full day of lectures in a way that allows you to learn from experienced figures in the brewing industry on the major topics of brewing. The RMMS organizers, listed below, will strive to make your attendance as rewarding as possible. Let them know how they can help you. The Rocky Mountain Microbrewing Symposium was founded by the Center for Biotechnology & Bioinformatics at the University of Colorado Colorado Springs. Proceeds from your registration fees go directly here, which is a non-profit entity. The Center was instituted in 1987 to serve as a catalyst in the commercial development of biotechnology and biomedical technology. Dr. James Mattoon founded the Biotech Center and Dr. Thomas Wolkow is now the Director. Among other things, it performs basic research in yeast genetics and fermentation science. Furthermore, your dollars go directly to symposium costs every year; this enables us to bring you a high quality conference for a nominal fee. The connections made here are the best one can ask for. A big thank you to you and our sponsors! Cheers! Tasting the beer... We ll bring it out just before lunch, and it ll be available during lunch and afternoon breaks. Please help us reduce waste by putting empty bottles in the designated containers for recycling. We make every effort to get your beer served, but sometimes there is so much beer that every brewery may not be represented at any one time. However, if you don t see yours out, ask our coordinator, Margie Oldham, or a committee member and we ll make sure it gets some exposure. 5 Session 1 Tevis Vance Toby Tucker Specialty Malts for Craft Brewer s and How to Maximize Their Use Tevis Vance, Great Western Malting Co & Toby Tucker, The Country Malt Group While many factors create a beer s overall flavor, the specialty grains you choose may have the biggest impact on how it s perceived. Also known as Character Malt s, specialty malts lend the unique flavors that define the various styles of the beer you brew. Although these malts typically only make up a small percentage of your grain bill, they can make or break your final product. It s important to understand how these malts are produced, what characters they can impart on your beer, and how you can maximize their use at your facility. Notes: 5
6 Session 2 Colorado Craft Beer: The Complete Package Emily Hutto, Craft Beer Author and CBG Social Media Liaison During the process of writing her book Colorado's Top Brewers, author Emily Hutto came to realize just how much effort and ingenuity goes into the creation of craft beer. Much like her book, an incredible amount of research, travel, resources, and passion gets poured into each beer from recipe development, to brewing, to packaging and marketing, each beer has its own story that has contributed to the shape of Colorado's beer culture. Today she tells those stories through the journalist's lens. Notes: 6
7 Session 3 Brewing Lager Beer: The Slow and Expensive Way Ashleigh Carter Brewing lager beer requires a different skill set than brewing English Ales or Belgian styles. With a lot of patience and some important and not often used techniques you can brew German tasting lager beer regardless of your equipment. Notes: 7
8 Keynote Address Thomas Kolicko Crafting a Nation Crafting A Nation is the feature length documentary that tells the story of how the American Craft Brewers are rebuilding the economy one beer at a time. The presentation focuses around a director's commentary of the film, showing several clips and discussing what it was like to document this very important time in American Craft Beer. 8
9 Session 4 Developing a Brewery Sensory Program Ali Schultz, New Belgium Brewing A sensory panel can be a powerful quality assurance tool, but beginning a sensory program can seem daunting at first. This presentation will walk through how to develop a sensory program, from logistical considerations to panel selection and maintenance, as well as interpreting results. It will also explore different stages in the brewing process in which sensory can be used so that your beer, from raw materials through shelf life, will be top-quality. Notes: 9
10 Session 5 Selling Your Beer in One or Multiple States Anna Nadasdy, Great Divide Brewing Company Your mother was right don t marry the wrong distributor and other lessons learned over the course of 12 years selling craft beer for 3 award-winning breweries across a territory spanning 29 states. Topics include: street-level fundamentals, the importance of profitability across all tiers, consideration of logistics, choosing markets & distributor partners wisely, and investment in long-term success. 11 Session 6 A Look at Hop Utilization Jeff Nickel, Jason Meherg, and Jason zumbrunnen AC Golden This whole project started because we had difficulty getting solid answers to questions about unique hop utilizations. One question led to 10, and now we re here. This presentation will attempt to describe our results, but will hopefully serve as a forum for brewers to discuss mash, first wort, and dry hopping techniques and practical experiences. Notes: 11
