This has been our belief since 1986 when we gave life to the Sacchi Tartufi brand, a line of high quality gastronomical products where the precious tuber is the protagonist. The search for excellence begins with a scrupulous selection of truffles originating from a territory with an ideal microclimate. A selectivity exalted in our laboratory by uniting artisanship with modern technology, respecting high quality standards and love for what we do. Coordinating the entire production process, from the selection and cleaning of the best truffles to sterilization and packaging, allows us to maintain the unaltered and organoleptic characteristics of this precious fruit and to exalt its remarkable personality. An always sought after quality which today is certified according to the FSSC 22000, ISO 22005, ISO 9001:2008, IFS food e BRC food standards. The goodness of the products and the commitment to putting our customer s needs first has allowed us to grow over the years: that s why we are chosen by delicatessens, specialty food markets, restaurants and large distributors every day. 7 THE TRUFFLE For those in search of something special White, typical of the region, Bianchetto and Black, in summer and winter varieties, growing, hidden on our land, sheltered from the light of the sun in symbiosis with the roots of other plants that nourish them. Esteemed Tubers with unmistakable natural characteristics and taste enhanced with the utmost attention during their journey, from the collection of them, to the washing and drying and packing in special designated containers up to their distribution: only these become Sacchi Tartufi Truffles. 16 Eggs and Truffle Eggs with truffle is a quick and delicious main entrée, an extremely simple recipe that, thanks to the addition of white or black truffle, swiftly becomes a gourmet dish. The pairing of eggs and truffle is one of the most successful, as egg noodles with truffle is commonly used as a first course dish. Remember though, especially with the white truffle, that the truffle is sliced fresh at the end of cooking directly on top because it should not be cooked. To prepare eggs with truffle, butter is preferred because we find that it better exalts the flavor of the truffle but if you prefer, you can use oil but choose a delicate one, not too strong. 16
