What is En Primeur? En Primeur is the first offering of an estate s wines and allows you to purchase them whilst they are still in barrel, several months before they are released to the market. The price paid at time of purchase is in bond, which means that it excludes Duty and VAT. As we re not permitted to charge taxes in advance of wines arriving into the UK, these are payable on release according to the duty and VAT rates in force at the time of delivery based on the original cost of the wines. The benefits of buying En Primeur : firstly, the En Primeur price is usually much cheaper than buying once shipped and released onto the UK market. Also, buying En Primeur allows you to buy highly sought after wines, which are only available in very limited quantities and may be impossible to find after release. H 2 Vin Burgundy 2016 En Primeur Offer All wines are from the 2016 vintage unless otherwise stated. Wines already available are highlighted with (a). The wines will be shipped between May and November 2018 at the producers discretion based on bottling dates, with the exception of the wines marked (a) that are already available. Prices are in bond (London City Bond) per case of 12 bottles (75cl), except for certain high-end Premiers Crus and all Grand Crus where prices shown are per case of 6 bottles (75cl). Duty and VAT will be charged at the rate in force at the time of delivery. Delivery will be charged at cost. Each producer will decide on the case size at the time of bottling; therefore, some cases of 12 (75cl) may come in 2 x cases of 6 (75cl) or 1 x case of 12 (75cl). Please note that cases cannot be split. As always we will do our best to honour last year s buyers repeat requests as fairly as possible. 3 Burgundy 2016 Vintage Report January Burgundy beauty out of adversity. At its best, Burgundy 2016 exhibits beautiful quality and styling but is very sadly yet another year of very low yields. Inconsistency, too, means that being strict with our selection was critical. While this is a nightmare for Burgundian growers and keen, regular Burgundy drinkers alike, it is likely to be better news but only for those investors who are able and fortunate enough to secure precious allocations of top tier wines. Sadly, these star wines have become increasingly out of reach for many. For sure there will be limited stock available, but the old maxim of supply and demand will no doubt apply. The latter is bound to exceed the former, pushing prices up in secondary markets and making Burgundy 2016 a sought-after vintage. Apart from almost a year s worth of rain having fallen by the end of June, the punishing climatic conditions were dominated by a devastating frost on the 27 th April. Thankfully the embattled region witnessed some salvation as glorious weather in the second half of summer settled in from July onwards. The first half of the growing season was the most difficult in living memory, the second half as close to perfect as anybody could have hoped for. Although hailstorms in the Mâconnais and Chablis did cause some significant damage, reducing yields there, they did not really impact the Cote d Or. What decimated so much of numerous appellation s yield, however, was the severe frost on the night of 26 th /27 th April. A cloudless night caused temperatures to drop below freezing not by much, maybe -2 to -4 degrees at most but the effect was more like a winter freeze than a spring frost. The rain during the evening/night of the 26 th froze on the vines acting as a magnifying glass for the sun the following morning, intensifying the impact of the freeze on the tender vine buds. The gloriously cloudless sunrise on the 27 th delivered this 'coup de grâce' as the temperature remained so low long enough to inflict its severe toll. There was destruction of devastating proportions. Even Le Montrachet, not impacted by frost for at least 100 years, lost 99% of its crop. Savigny-lès-Beaune and Pernand-Vergelesses lost up to 90%, as did certain vineyards in Chassagne Montrachet. In the Côte de Nuits, Marsannay, Nuits St Georges and Chambolle-Musigny took the full force whereas their neighbour Morey St Denis was left largely intact. Erratic weather conditions in the weeks that followed hampered the vines from setting second generation buds where the first had been destroyed. There was also severe pressure from mildew. 85% of average annual rainfall fell in the first 6 months of the year. This outbreak of mildew also struck vineyards very erratically, and much depended on the timing of the numerous treatments necessary. Vigilance was key. In 2016, many growers were forced to leave biodynamic principles in abeyance as the mildew and humidity threatened what little crop remained. Many biodynamic farmers, therefore, endured a real battle. They had to apply numerous treatments compared to a normal year. The volatile rain patterns tended to wash the newly applied treatments off the vines only hours after the work was finished, which means they had to go out again and fight to protect their vines. 2

4 The longest day of the year, though, presaged a change in the weather, with gloriously welcome sunshine showing itself on 22 nd June. From late July all the way into September, the weather was superb, with day after day of sun, often very warm even hot. The summer saw 30% less rain than normal. However, the odd cooler, damper respite helped ensure that the ripening process was not blocked. The hot, clear and sunny conditions, with minimal humidity, that predominated, allowed the grapes to ripen beautifully. The exceptional late summer weather continued right through until heavy rain overnight on 14 th /15 th September, and some showers over the next few days: welcome rain on the whole to relieve the vines, which were starting to suffer from hydric stress, and to reinvigorate the ripening process. The harvest began earlier than originally expected - from the 19 th September with most growers having completed their picking by the end of the month. Importantly, the whole crop was gathered in under fine weather conditions. The grapes were mostly very healthy with the correct balance between sugar and acidity. The reds were more advanced than the whites, and the vines themselves looked in fine condition but there were pitifully few bunches to be seen. Aromas of the best wines tend to be bright, pure and refined, but sadly they will only be available in very small volumes from certain vineyards. The wines The finest reds exhibit a beautifully pure aromatic, floral style with sculpted tannins and telling, teasing minerality. A seam of freshness runs through the wines thanks to cool nights in September and timely picking dates. The tannins are often satin-like, lithe and perfectly pitched. This is a vintage that will allow drinkers to choose when to enjoy their wines as it will show well from an early age (2-3 years depending on vineyard pedigree) as well as repay medium to longer term cellaring. The small crop has given the wines fine concentration. The widespread inclusion of whole clusters in vinifications has helped retain freshness and an appetising edge to many wines. The best whites exhibit more tension and vivacity than 2015 coupled with a silken, creamy mid-palate texture that results in fine poise and balance. Elegance and marked typicité are much in evidence, for both reds and whites is a fine advert for Burgundian terroir expression, despite the ravages of the early growing season, and as such goes with our utmost recommendation. The move to increasingly sensitive, deft winemaking continues including gentle extraction, less manipulation and less new oak. The determination to allow the wines to express their precise origins with purity and clarity has to be applauded. What is more, it helps to portray emphatically the essential personalities of the wines that arise from this veritable mosaic of vineyards a key feature of Burgundy's raison d'être. There were numerous examples of growers blending together a number of individual 1ers Crus as each of the individual crus produced so little fruit that to vinify them as stand alone cuvées was untenable. As a result, there are many unique wines on offer in In many instances the results are excellent too. Prices Prices of 2016 would have been under even more pressure if the 2017 vintage had not delivered such hugely welcome and overdue full cellars. As it is, the continued weakness of the pound does not help - which allied to severe pressure of growing global demand for such limited stocks, does mean that several offer prices are subject to an increase over last year. 5 To Register your interest in the wines from H2Vin s Burgundy 2016 En Primeur please us at quintessentially@h2vin.co.uk or call Rosie Jones via Burgundy 2016 En Primeur Offer Chablis Domaine Billaud Simon Bernard Billaud had brought this fine domaine right to the very forefront of quality Chablis producers before selling the estate to the highly regarded family-owned Burgundy producer Faiveley in July Massive investment in a new winery in the 1990s ensured that the domaine has first-rate tools to coax the best out of the fruit from their excellent clutch of Premier and Grand Cru vineyards. Total vineyards holdings are almost 20 hectares. Faiveley are determined to safeguard and respect the individuality of the Billaud Simon wines, but are also striving to achieve even higher levels of quality going forward. To taste these wines is to have a real education in the meaning of variety in Chablis terroirs. Lack of volume, as elsewhere this year, is the real problem. The 2016s, however, certainly maintain Billaud Simon s fine reputation and will evolve into fine Crus relatively early after bottling and before the equivalent 2014s. Elegance, style and restraint are the hallmarks here. 1. Chablis 1 er Cru Les Vaillons (Extremely Limited) Chablis Grand Cru Vaudésir (Extremely Limited) (6x75cl) Domaine Moreau Naudet The hugely sad and shocking death of the young, highly talented Stéphane Moreau at the end of August 2016 robbed the winemaking world of an undoubted star. His family and the domaine team have vowed to carry on his brilliant work. With 13.5 hectares under vine, including a tiny 1 hectare parcel in Les Pargues planted with 50 year old vines with the same exposure as Vaillons and Montmains, the domaine has fine vineyard holdings. The style reminds us very much of that of Vincent Dauvissat, with extreme purity and intensity. One of Stéphane s mentors was Didier Dagueneau and it shows in the Moreau Naudet style, especially the precision and razor-sharp flavours of the wines, but also in the quirky packaging. Sadly, there is no availability of Vieilles Vignes Les Pargues this year due to severe hail damage whilst the Chablis is drastically limited. 3. Chablis (Extremely Limited) Chablis 1 er Cru Forêts (Extremely Limited) Chablis 1 er Cru Montmains (Extremely Limited) Chablis Grand Cru Valmur (Extremely Limited) (6x75cl)

6 Domaine Long-Depaquit Founded in 1791, this excellent Chablis estate is owned by the family-run Burgundy House of Albert Bichot. The striking château is located at the heart of the town itself and it is here that the fruit from its 65 hectares are vinified. All their vines are tended according to environmentally friendly principles. Restricted yields and noninterventionist winemaking add to the quality was their third vintage with new cellar installations the greater press capacity and fermentation tanks allow for more precision in vinifying and retaining the individual expression of each cru. The significant lack of volume this year is a direct result of both frost and hail in the spring. The régisseur, Matthieu Mangenot, feels that despite the frost and the hail storm on the 13 th May, his 2016s show well a bit richer though, with less tension and vigour than the 2014s, but with good balance and authenticity nonetheless. There is excellent concentration, thanks to the small crop, as well as some good acidity and minerality, which will enable them to age well over the medium term. Stand-outs for us were, once again, the refined 1 er Cru Les Vaucopins, the intense, rich and mineral-driven Grand Cru Les Vaudésirs, the vibrant, intense Grand Cru Les Blanchots, the elegant yet complex Grand Cru Les Clos and the layered, deeply complex Grand Cru Moutonne. 7. Chablis 1 er Cru Les Vaucopins Chablis Grand Cru Les Blanchots (Extremely Limited) (6x75cl) Chablis Grand Cru Les Vaudésirs (Extremely Limited) (6x75cl) Chablis Grand Cru Les Clos (Extremely Limited) (6x75cl) Chablis Grand Cru Moutonne (Monopole) (Extremely Limited) (6x75cl) Mâconnais Domaine Christophe Cordier Christophe Cordier is a multi-talented winemaker. After establishing the family domaine as the leader in the region, he started a small négociant business, buying the best grapes sourced locally from some of the finest, very old vineyards. He manages almost 30 hectares in total, covering almost 100 different plots and 8 villages. All the vineyards employ both sustainable and organic farming practices and harvests are carried out by hand. He prefers to use traditional winemaking techniques allied to the best of modern technology in order to produce his classically elegant wines in his purpose-built state of the art winery. 12. 7 Côte de Beaune Domaine Justin Girardin Joining his father Jacques and mother Valérie at the family domaine, talented young winemaker Justin Girardin is continuing his family s winemaking legacy, which dates back to the early 10 th century. With prime parcels of vines spread across Santenay and totalling 17 hectares, Justin practices traditional Burgundian techniques to produce deeply concentrated wines with superb balance and rich fruit character. The philosophy here is to let nature express itself fully, to observe and respect the different terroirs. His work in the cellar is careful and respectful. Only using natural yeasts, gentle extraction and only a very light filtration at bottling he allows his wines to exhibit their true personalities. Justin is understandably very happy with the quality of his 2016s! Quantity, too, is correct here as frost was not an issue in Santenay. 20. Santenay Blanc Les Terrasses de Bievaux (a) Bourgogne Rouge (a) Santenay Rouge Vieilles Vignes (a) Santenay Rouge 1 er Cru La Maladière Santenay Rouge 1 er Cru Clos Rousseau Santenay Rouge 1 er Cru Beauregard Christophe Buisson Destined to be a mason like his father and his brother, Christophe decided to leave the family business and go into the wine industry. After receiving his diploma, he started his domaine in 1996 by renting a few acres of vines. Overtime he gradually purchased and rented further vines in and around Saint Romain and beyond, so that his domaine covered 7 hectares. He moved into a new chai in Beaune in 1999, renovating it in He has now relinquished the management of his vineyards (en fermage) to Alex Gambal (whilst also working with Alex as a partner and consultant). He will continue to concentrate on working as a tiny micro-négociant in his own right, but still with specialist focus and expertise in the Saint Romain appellation. The 2016s show the benefit of his skill and experience, alongside the excellent typicité and elegance of the vintage. 26. Saint Romain Blanc Saint Romain Rouge

8 Domaine Vincent Rapet Tucked away in the village of Pernand Vergelesses at the northern end of the Côte de Beaune, and behind the hill of Corton, Vincent Rapet is producing consistently high quality Burgundy. This excellent and long-established, family-run 20 hectares domaine fashions wines that are contemporary, authentic expressions of their origins. Vincent is a young talent who, alongside his wife Sylvette, shines brightly in the appellation. We have selected 5 wines this year in our continued collaboration with Vincent. Three white wines - a fresh, elegant Pernand Vergelesses Blanc Les Combottes, a more focused, concentrated Pernand Vergelesses Blanc 1 er Cru Sous Frétille and a superbly built, tightly-wound Corton Charlemagne Grand Cru. The two red wines we have opted for include the tightly-wound, mineral and well-balanced Pernand Vergelesses Rouge 1 er Cru Les Vergelesses and a focused, superbly etched Beaune 1er Cru Grèves. Frost damage claimed 70% of his crop overall. 28. Pernand Vergelesses Blanc Les Combottes Pernand Vergelesses Blanc 1 er Cru Sous Frétille Corton Charlemagne Grand Cru (Extremely Limited) (6x75cl) Pernand Vergelesses Rouge 1 er Cru Les Vergelesses Beaune 1er Cru Grèves Domaine Hubert Lamy, Hubert Lamy Olivier Lamy is one of the brightest young stars in the Côte de Beaune, following in the footsteps of his father Hubert Lamy by joining him at the family domaine. The fine quality of his wines has helped to enhance dramatically the standing of Saint Aubin, where it can now be mentioned in the same breath as its more celebrated neighbouring appellations of Chassagne-Montrachet and Puligny-Montrachet. Driven and hardworking, Olivier is one of the first to understand that most of the work has to be done in the vineyard. Making racy wines with great acidity and length, always punching well above their weight, his 2016s combine his hallmark vigorous styling, with an intensity of ripe fruit. 33. 9 Domaine Marc Morey Son-in-Law to Marc Morey, Bernard Mollard has successfully held the reins of this family-owned 9 hectares estate for a number of years. His steady, very reliable winemaking expertise continues to evolve increasingly in the hands of his daughter Sabine, ensuring a constancy of quality year after year despite the vagaries of the climatic conditions each vintage. The wines show excellent concentration in 2016, yet remain taut and well balanced whilst being true to their origins. Sadly, there is no 1er Cru Les Vergers this year due to the calamitous frost. Overall, the domaine lost 60% of their production! We are fortunate, though, to receive an allocation of: Chassagne Montrachet Blanc 1 er Cru En Virondot which marries a fine concentration of fruit with excellent tension and Puligny Montrachet 1 er Cru Referts which shows a classic profile of delicate white floral notes with mineral precision. 40. Chassagne Montrachet Blanc 1 er Cru En Virondot (Extremely Limited) Puligny Montrachet 1 er Cru Referts Domaine Blain-Gagnard The quietly-spoken, charming Jean-Marc Blain, married to Claudine (daughter of the late Jacques Gagnard), fashions Chassagne crus of delicacy and finesse. His wines seduce the palate with their elegance and subtlety, rather than weight and richness. Jean-Marc is very happy with the quality and style of his 2016s thanks to their ripeness, clarity and balance. However, the frost impact was significant here too causing a fall of 45% overall amongst his 1ers Crus and as much as 85% of his Bâtard Montrachet Grand Cru! Jean-Marc s 1 er Cru Caillerets marries a subtle note of white flowers with a creamy mid palate, culminating in a palate-pleasing salinity on the finale. His Grand Crus marry richness with a telling restraint and to fine effect. 42. Chassagne Montrachet Blanc (Extremely Limited) Chassagne Montrachet Blanc 1 er Cru Caillerets (Extremely Limited) Domaine Philippe Chavy Philippe Chavy took over the reins of this wealthy domaine from his father in 2002 with a little more than 3 hectares of prime vineyard sites. The domaine now extends to just over 8 hectares, with some 30 individual parcels scattered throughout the neighbouring villages of Puligny Montrachet (from his father s side of the family) and Meursault (through his mother s side). Soil is worked by ploughing; there is strictly no use of herbicides or insecticides and for several years Philippe has followed the lunar calendar cycles when determining work in the vineyards and cellars. He produces a very neat Bourgogne Blanc Chardonnay sourced from 8 different parcels, mainly in Puligny; a Meursault Narvaux of pin-point balance; a beautifully ripe, intense Meursault Blagny 1 er Cru Sous le Dos d Ane shows a vibrant, almost saline minerality on the finale; a floral, focused Puligny Montrachet Les Corvées des Vignes from vines that lie very close to Meursault and Meursault 1 er Cru Charmes, and an impressively stylish Puligny Montrachet 1 er Cru Les Folatières offering texture, intensity and tightly-wound stone fruit. 44. Bourgogne Blanc Chardonnay Meursault Les Narvaux (Limited) Puligny Montrachet Les Corvées des Vignes (Limited) Meursault Blagny 1 er Cru Sous le Dos d Ane (Limited) Puligny Montrachet 1 er Cru Les Folatières Au Chaniot (Limited)

10 Domaine Philippe Bouzereau, Château de Cîteaux Philippe Bouzereau is the ninth generation of a family of vine-growers in Meursault. Following on from his father, he took responsibility for the management of this fine 18 hectares domaine back in With the well-being of the vineyard at heart, his team practice minimum intervention to enable the vines to develop naturally and healthily. His emblematic wine is the 1.7ha monopole Meursault Vieux Clos du Château de Cîteaux, produced from a single parcel of vines planted by his father. Philippe cultivates a huge diversity of vineyard plots, from Aloxe-Corton in the north to Chassagne-Montrachet in the south, giving him a multitude of small parcels with which to compose the mosaic of his production. Philippe has used very little new oak in 2016 and has refrained from batonnage completely, preferring to let the wine s natural flavour shine through. Sadly, frost impact here caused Philippe to lose almost 50% of his total crop. 49. Chassagne Montrachet Blanc Meursault Les Grands Charrons Meursault Les Narvaux Meursault Vieux Clos du Château de Cîteaux (Monopole) Puligny Montrachet 1 er Cru Les Champs Gains Meursault 1 er Cru Charmes Meursault 1 er Cru Genevrières Domaine Patrick Javillier The ever thoughtful, precisely spoken Patrick Javillier runs his 9 hectares family-owned domaine based in Meursault with quiet diligence. Increasingly it is his daughter Marion who is taking a leading role. He is a great believer in vinifying his parcels separately, all with long ageing on the lees. A deft touch of new oak on certain cuvées only adds to the sense of sensitive winemaking. Marion particularly likes the fine terroir expression and poise of their 2016s. The Bourgogne Blanc Cuvée des Forgets offers tempered peachy fruit with charm, whilst the very Meursault-esque Bourgogne Blanc Cuvée Oligocène combines chalky elegance and restrained texture; very sadly there is no Savigny lès Beaune Blanc Les Montchenevoy due to the frost impact; Meursault Les Tillets is all about floral finesse and elegance; Patrick s very fine Corton Charlemagne Grand Cru oozes class, marrying subtle notes of acacia flowers, hazelnut and heady ripe pear. Refined, complex and luxurious. 56. 11 Jean-Philippe Fichet Jean-Philippe Fichet is surely one of the hardest working producers in Burgundy. His manicured vineyards produce great quality fruit and with his years of experience, Jean-Philippe is making classic but refined white Burgundies with great terroir definition. The domaine has been producing truly exceptional wines, particularly in the last few years, with many well-deserved accolades shows the committed nature of Jean-Philippe s work, as he has managed to achieve excellent balance in his wines. Sadly, like elsewhere, the losses due to the frost were significant, as much as 50% overall. 60. 12 Thomas Morey Thomas Morey, the younger son of Bernard, has set up his cellar in the old family house in Chassagne. He is very diligently and skilfully working 9 hectares and has already established himself as one of the young stars of the appellation. His style is different from that of his father, in being slightly more lean and taut, i.e. closer to the modern idiom of white Burgundy. The same story here, frost impact on available volumes is significant but the quality shines through! 73. Chassagne Montrachet Blanc Chassagne Montrachet Blanc 1 er Cru Les Embrazées (Extremely Limited) Chassagne Montrachet Blanc 1 er Cru Morgeot (Extremely Limited) Santenay Rouge Vieilles Vignes Chassagne Montrachet Rouge Vieilles Vignes Santenay Rouge 1 er Cru Grand Clos Rousseau Beaune Rouge 1 er Cru Grèves Domaine Henri Boillot Henri Boillot is a benchmark Côte de Beaune producer, renowned for the exceptional quality of his wines. Using parcels of vines which are more than 60 years old, including the domaine s exclusive and highly sought-after monopole Puligny Montrachet 1 er Cru Clos de la Mouchère, his seriously impressive wines exhibit an intense minerality, elegant structure and have the potential to age for many years. 80. Bourgogne Blanc Puligny Montrachet 1 er Cru Clos de la Mouchère (Monopole) (Extremely Limited)

13 Domaine Joseph Voillot This fine family-owned domaine, comprising 9 hectares of vines, has been run impeccably since 1995 by Jean- Pierre Charlot, son-in-law of Joseph Voillot who sadly passed away in July Over recent years Jean-Pierre has refined the quality and style of wines produced here. Sustainable viticulture holds sway. He has dispensed with the inclusion of stems, as he prefers the essence of fruit, and he has shortened the length of time the wines spend in barrel typically months followed by 1 month in stainless steel prior to bottling. Jean-Pierre has also reduced the percentage of new oak - now 10-20% depending on the Cru. He prefers a light filtration, but no fining. Jean-Pierre is very pleased by the quality of his 2016s, understandably, even though the yields were once again painfully low, especially for the Volnay Vieilles Vignes, and the Pommard Vieilles Vignes. 82. 14 Domaine du Pavillon This fine estate of 18 hectares in Pommard is entirely owned by the highly regarded Maison Albert Bichot. Respectful of the environment and diligent in both vineyard and cellar, the domaine has fashioned a range of impressive 2016s including a refined, yet rich and seamlessly balanced Meursault 1 er Cru Les Charmes and a powerful, tightly-wound and complex Corton Charlemagne Grand Cru. As for the red offerings, two crus stood out: firstly, the Corton Grand Cru Clos des Maréchaudes, combining deep, intense fruit with well-structured tannins, and secondly the darkly expressive Pommard 1 er Cru Les Rugiens. 92. Meursault 1 er Cru Les Charmes Corton Charlemagne Grand Cru (Extremely Limited) (6x75cl) Pommard 1 er Cru Les Rugiens Corton Grand Cru Clos des Maréchaudes (Monopole) (Extremely Limited) (6x75cl) Nicolas Rossignol Nicolas Rossignol established his domaine in 1997, starting out with 3 hectares of vines spread across the principal red wine villages of the Côte de Beaune. Later acquisitions in Savigny lès Beaune in 2005 effectively doubled his holdings. Further purchases brought his total to 16 hectares. Unlike last year when Nicolas was smiling about the quality and quantity of his 2015s, he was far less pleased this year as up to 85% of his 2016 crop was devastated by frost! Nevertheless, what remains is of an excellent quality and style. He is now housed in his brand new cuverie on the edge of Beaune, in which he can vinify each cru by terroir and by parcel. Nicolas has had to vinify together a number of individual crus so as to produce a viable volume with which to work. Overall, the tannins in 2016 are beautifully sculpted, whilst the fruit is vibrant, yet rich and expressive of the various terroirs. Another great success, at least quality-wise! 96. Volnay TBC 97. 15 Côte de Nuits Domaine de Bellene/ Roche de Bellene Domaine de Bellene was established in 2005 by Nicolas Potel after the purchase of various old vine plots in some of the best sites in Burgundy. A dynamic and highly talented winemaker, Nicolas originally cut his teeth at Domaine de La Pousse d Or in Volnay, which at the time was run by his father Gérard Potel. The Domaine de Bellene vines are situated in selected villages from Santenay in the south to Nuits St Georges and Vosne Romanée in the north. All vines are between 50 to 110 years old and are cultivated with biodynamic methods. The winemaking is low interventionist with nothing, other than small doses of sulphur, added to the wines - no acid, no cultured yeast, no nutrients, no enzymes and no sugar. Since the volumes were so decimated in 2016, especially his holdings in Savigny-lès-Beaune, Nicolas has created a number of Hommage cuvées where the wine is produced from his own domaine fruit as well as grapes sourced from neighbouring vigneron s plots, but where Nicolas acts as viticultural consultant. These select cuvées have been produced in honour of Nicolas s mother who sadly passed away in Maison Roche de Bellene is Nicolas négociant business. Following several years work as a négociant, Nicolas set up this latest venture in 2008, sourcing grapes for his extensive range of wines from quality-minded growers, many of whom he has collaborated with for over 15 years and works in an environmentally respectful fashion. His current range, offering wines crafted from some of the finest vineyards in the Côte d Or, is a roll-call of top crus and appellations. 16 Marchand-Tawse With over 25 years of winemaking experience at renowned Burgundy domaines such as Comte Armand and Domaine de la Vougeraie, and as a consultant in Chile, California, Canada and Australia, Pascal Marchand possesses a deep understanding of terroir-driven wines. At the beginning of 2006, he created his new micronégociant label, producing almost 1,000 cases from 7 different wines, mainly from the Côte de Nuits, for his first vintage. He now offers in excess of 40 different appellations from the Côte de Nuits, as well as a smattering of wine from the Côte de Beaune. These have now been joined by a couple of wines from the Côte Chalonnaise. His fruit is sourced from growers he knows well and in whom he has total confidence. All of his wines originate from vineyards with a minimum vine age of 35 years. Some of his growers are certified organic; some are organic in ethos, but work without certification. With a history stretching back to the mid- 19 th century, the domaine had been in the hands of the Freund family (originally from Koblenz in Germany) since In April 2014 it was purchased by LVMH, with the winemaking responsibility and general management of the domaine now in the hands of Boris Champy who is taking over the mantle from the very gentle, hospitable Thierry Brouin who has been in situ since 1979 (38 vintages!). 17 Domaine Rossignol-Trapet Comprising 14 hectares Domaine Rossignol-Trapet was created as recently as 1990, when the original Louis Trapet vineyard holdings were divided between his daughter and his son-in-law Jacques Rossignol. Since then Jacques two sons, Nicolas and David, have gradually taken over the reins of the business. The domaine has been certified 100% biodynamic since With vineyards spread equally across village, 1 er and Grand Cru holdings in Gevrey Chambertin, the domaine offers a fascinating insight into the sheer variety of flavours that this famous Burgundy village can muster. The brothers are delighted with the quality of their 2016s (if not the lack of volume), which reflect their very precise origins with clarity, elegance and fine intensity. The quality of tannins is superb. Up to 50% whole bunch and gentle extraction have made their mark on the wines finesse. The brothers prefer to harvest later and use less new oak as their aim is to achieve fruit sweetness rather than oak sweetness. Typically, the village wine matures in 10-15% new oak, the 1 er Crus 25% new oak and the Grands Crus 50% new oak. Purity of fruit and freshness are the hallmarks here. 18 Domaine Georges Lignier Benoît Stehly, nephew of Georges Lignier, has run the estate since 2008 after working at the domaine for a decade alongside his uncle. His approach is very delicate, seeking maximum aromatic concentration, and quality has improved dramatically as a result. At the Villages level, the wines are matured in used oak barrels, while 1 er Crus see 25-30% new oak and Grand Crus 50% new oak. Benoît s deep respect for tradition and expressing terroir ensures that his wines evoke their precise origins with clarity and poise. Respect for the soils, rigorous pruning and green harvesting all help in ensuring the final quality of the fruit. Vinification and maturation are carried out gently and respectfully, adapting techniques to complement the fruit style of each particular vintage we tasted the entire range of Premier and Grand Crus in the extensive Bichot cellars in Beaune. 21 Domaine Robert Groffier Founded by Frederic Groffier in the 19 th Century, Domaine Robert Groffier remains family run with Robert s son Serge and grandson Nicolas now at the helm. Most of the domaine s vineyards are located in Chambolle Musigny producing powerful, deeply coloured wines, which are true expressions of the terroir. Nicolas Groffier claims that the reason he did not suffer from the frost like so many of his neighbours is that he prefers to use Cordon Royat pruning, a style of pruning that delays bud break by approximately one week when compared to the more usually seen Guyot pruning.
