12 After emigrating from the Netherlands and settling in Thorp, WI in 2002, we decided to carry on our passion for dairy farming. In 2006 we launched our new found passion for cheese making because we missed our Gouda from Holland and knew we could make wonderful cheese from our dairy s milk. So we created an authentic Dutch cheese on our farmstead crafted from milk that is pumped directly from our milking parlor into the cheese vat...fresh and warm! This means we can make the cheese without preheating or pasteurizing. After two hours of pressing into 18-pound wheels, our Gouda is placed in a salt-brine for 60 hours. 22 Both farms contributing to Sassy Cow are owned and operated by brothers James and Robert Baerwolf along with their families. They are the third generation to farm this land that their grandfather purchased in Their parents have farmed the land their entire lives and are still actively involved with the family operation even in their retrirement years. Brothers in the truest sense, both graduated from UW-Madison and began dairying immediately after college. 27 Uplands Cheese Pleasant Ridge Reserve is an American original inspired by traditional farmstead cheese from the alpine provinces of France. Our cows have calves in the spring, graze lush pastures until winter, then are dry until calving again in spring, just as all cows did before industrialization of our food system. They make their cheese only when the cows are grazing pasture forages. The milk produced then has much more flavor and nutrition. The cheese is aged 4 to 18 months in cave environments and washed with brine twice weekly. This traditional aging technique creates wonderful flavors, but is rarely done today because of the amount of labor required.
