1 SNOB s The Society of Northeast Ohio Brewers Club Newsletter Next Meeting is Monday, May 3rd, 7:30pm at Sachsenheim Hall Fellow SNOBs, President s Krausening If you happen to read this before the AHA publishes the National Homebrew Competition first round results, please keep this between you and me: our Bourbon Barrel-Aged Rye Barleywine (formally IPA) placed second in the East region for Wood-Aged Beer. Tim McDonnell, Dave Clark and Paul Shick also had beers of their own that placed in the East Regional competition and are moving on to Nationals. Dave, Paul and I judged beers at Weasel Boy Brewing in Zanesville for the NHC. Todd Donnelly s Brown Ale also came in third place in the AHA Club-Only American Ale competition. This is the second year in a row that a SNOB has placed in the spring Club-Only competition. Congratulations to everyone putting our club s name out there nationally. If you are reading this newsletter at The Sachsenheim waiting for the meeting to start or sometime after our May meeting, you have missed the opportunity to mail away to the ticket lottery for The Great Taste of the Midwest. The GToM mail order lottery postmark date is May 3 rd. So, if you re reading this the day of our meeting, you will want to put your order in the mail before you go have dinner at The Sachsenheim. If you don t think you can make the trip to Madison in August, drop a ticket request into the mail anyway because you will be able to find a fellow SNOB looking for tickets. Buckeye Beer Engine has a special Beer Dinner Tuesday May 4 th. Their menu will feature Jolly Pumpkin Artisan Ales and all dishes will be (John Majetic, skip ahead to the next column) vegan. I have been told that brewery owner Ron Jeffries will be at the dinner. Out of town, but fun enough to mention, Trey Howard and I have signed up for the East End Brewing Pedal Pale Ale keg ride on Friday, May 14 th. Think of it as a spring warm-up for this year s Pedal to the Pint. For East Siders of those few of you who know where the East Side is, Ballantine and 1899 Pub in Willoughby have a Belgian Beer tour called Le Cirque du Bier starting May 17 th and going through the end of June. Of course, you should already have known about and have your tickets for Fatheads Brewery and Saloon s next beer fest, The Heavyweight Brewers Brawl is Saturday May 22 nd and there are 2 sessions. The 1 st Annual Columbus Beerfest is scheduled for May 28 th and 29 th. As you should know by now, the SNOBs will be hosting our own Homebrew Competition during Cleveland Beer Week October 23 rd. Son of Brewzilla will be for all 2008 BJCP beer categories. We will be looking for judges, stewards and volunteers from SNOB members as well as other regional homebrew clubs. Dave Clark is our competition organizer. I spoke to several judges and stewards at the NHC East regional and the response was positive. We believe we can get more than 200 entries. Matt Cole has graciously volunteered Fatheads Brewery and Saloon as the competition site and entry mailing point. This is the last Saturday of Beer Week, so the only other planned event will be the Brewzilla Beer Fest. Dave, Brian Wright and I have spent the last couple months getting to this point where we can announce the competition with a few particulars. We ll pull in more SNOBs as we get more aspects of the competition going This month s topic is one that I think most SNOBs will truly enjoy. BJCP Style 14B is American IPA. Local brewer Matt Cole will be talking to us about how to brew great American IPAs. I figured it would be okay to get him to talk because the Brewing News had this little 128 IPA National IPA Championship and Matt s Headhunter IPA beat out every other challenger. Not only is Matt a knowledgeable local brewer that loves to contribute to our club, he also knows a thing or two about brewing American IPAs. Since Matt will explain how to brew an IPA correctly, I figured I d take the space here to explain the IPA I am bringing to our meeting. Inspired by Headhunter, I decided to brew a lightly colored and somewhat malty IPA with a blend of hop Varieties. I also wanted to go somewhat off the beaten path and experiment with some non-traditional hop scheduling. I made my IPA with an even blend of Columbus, Simcoe and Amarillo hops. I was planning to use just about 4% honey malt and 4% oat malt to 92% American pale malt. Beer Smith showed that the beer color would be lighter than style, so I substituted out some of the pale for Vienna malt. I had thought I had the oat malt, but on brew day, I couldn t find it. I used German wheat

2 malt, instead. When I brew an IPA again, I am going to use equal parts (1/2 pound each?) honey malt, crystal 40 and torrified wheat with 88% pale malt. Using the water we have posted on the SNOBs website and a water chemistry spreadsheet following John Palmer s How to Brew, I came to the conclusion to add 4 grams of gypsum and 1 gram of calcium chloride to my mash strike water with my normal camdem tablet. The spreadsheet is cool in that it shows you the optimal beer color range for your water ph and it also had a bitterness scale. I added the calcium chloride to bring by beer water from deep in the very bitter range to closer to the division between very bitter and bitter. What I think contributed to my mash water ph that the spreadsheet didn t take into account was that I added an ounce each of my hops to my mash. Below is a photo of the hops mingling with my milled grains while I waited for the strike water to heat. My mash was a single infusion batch sparge of 150 F for one hour. The second batch raised my mash temperature to 165. While the mash was going on, I measured out my hops. I had to change my kitchen scale over to metric units. An ounce is grams. Putting equal parts Columbus, Simcoe and Amarillo in each hopping up, I had 18 grams of hops used as first wort, a 15 minute addition and a knockout addition. I used 15 grams of hops at 10 minutes and 5 minutes left in the boil. Theoretically, the.35 gram extra hops were part of the first wort cup, but hop pellets and a kitchen scale will not be that accurate. As the second batch was running off into my boil kettle from my mash tun, I tossed in the first wort hops. From the picture below, I made several hoppings towards the end of the boil. There are plenty of questions that I don t think this beer will answer, but may scratch the surface as to what makes a great American IPA. Will using mash hops and first wort hops be enough bittering for an IPA? Are the Tinseth and Beer Smith predictions for my IBUs close to accurate? Does the grain bill I used work for an IPA or should I have gone more traditional? This year's package features: Entry Dates May 17 th to May 28th COPENHAGEN Denmark BEER POLICY PROMPTS CARLSBERG STRIKE Hundreds of workers at the Danish brewer Carlsberg walked off the job in Copenhagen last week to protest a new policy restricting beer drinking at work to lunch breaks. Warehouse workers used to be able to help themselves to beer throughout the day provided they didn t get drunk. There has been free beer, water and soft drinks everywhere, Jens Bekke, a Carlsberg spokesman, told Reuters. The world s fourth largest brewer, Carlsberg had been considering the restrictions for years. Carlsberg s truck drivers joined the strike in sympathy, Mr. Bekke said, even though they are exempt from the new rules. Drivers are permitted to drink three beers a day outside of lunch hours. No worries, says the company. Carlsberg s trucks are equipped with alcohol ignition locks.

Elin Roberts, of Newcastle University's Centre for Life said: "Food doesn't soak up the alcohol but it does increase your metabolism helping you deal with the aftereffects of over indulgence. So food will often help you feel better. "Bread is high in carbohydrates and bacon is full of protein, which breaks down into amino acids. Your body needs these amino acids, so eating them will make you feel good." Ms Roberts told The Mirror: "Bingeing on alcohol depletes neurotransmitters too, but bacon contains a high level of aminos which tops these up, giving you a clearer head." Researchers also found a complex chemical interaction in the cooking of bacon produces the winning combination of taste and smell which is almost irresistible. The reaction between amino acids in the bacon and reducing sugars in the fat is what provides the sandwich with its appeal. Ms Roberts said: "The smell of sizzling bacon in a pan is enough to tempt even the staunchest of vegetarians. There's something deeper going on inside. It's not just the idea of a tasty snack. There is some complex chemistry going on. "Meat is made of mostly protein and water. Inside the protein, it's made up of building blocks we call amino acids. But also, you need some fat. Anyone who's been on a diet knows if you take all the fat from the meat, it just doesn't taste the same. We need some of the fat to give it the flavour." She explained that the reaction released hundreds of smells and flavours but it is the smell which reels in the eater. "Smell and taste are really closely linked," she said.
