Place the butter and dark chocolate in a bowl over a pan of hot water on a low heat, stirring occasionally until the chocolate and butter have melted, set aside off the heat. Whisk together the three large eggs and the golden caster sugar until the mixture turns really pale and doubles in volume. When the chocolate mixture is cool, pour over the egg/sugar mixture. arefully fold together to avoid knocking the air out. Sieve the cocoa/flour into the egg/sugar/chocolate/butter mixture. Fold into the mixture slowly until it becomes a fudgy mixture. Stir in the chunks of white & milk chocolate. Pour the mixture into the baking tin and bake for mins. The brownie is ready when it has a papery crust and the sides are slightly coming away from the tin. Leave until fully cooled in the tin before cutting and serving.
