2 2 INTRODUCTION Events: We have been busy with events over the last few weeks. David Bentley visited the team at Stein s and presented the Felchlin Costa Rica couverture. We welcomed Sodexo defence team to our offices for an afternoon of training with Jerome our Development Chef, and we are now preparing the next training by Stephan Iten from Felchlin where he will showcase desserts and afternoon teas. We were also delighted to attend the British Culinary Federation annual dinner and look forward to presenting the David Lyell Scholarship cup this month. Dessert Elements This month we have an excellent new concept for desserts, Elements. Designed by chefs, Elements offer a consistent high quality, with a different contemporary twist every time. Elements stimulate the chefs creativity whilst respecting time and budget constraints. Our new range includes 20 tastefully chosen frozen dessert elements that allow you to let your imagination run wild. From chocolate quenelles, almond crumble, cake & mousses, all you need is your own unique touch to put everything together in your own creative way, either as an addition to an existing dessert or as a complete dish on their own. The recipes follow tradition, made with innovative quality ingredients and new elegant shapes. They combine the authenticity of artisan desserts with the continuity of flavour, colour, texture, taste & quality through to large scale. These dessert elements are frozen but due to their small volume they thaw in no time, which provides flexibility in supplying quickly and on demand.
