1 Itinerary 3 days / 2 nights Discovery of BURGUNDY WINE AND FOOD TOUR Arrival : Beaune station or Dijon Departure : Beaune Station or Dijon Highlight of the itinerary : A wonderful 5* hotel situated in the hart of Beaune: L Hostellerie Le Cèdre Discover all the local authentic product from Burgundy : Truffle, Cremant, Anis de Flavigny, Cheese, Cassis, Gingerbread and Mustard! Discover all the process of making wine from the grappe to the bottle and visit a wonderful cellar from the XVth century.

2 Accomodation L Hostellerie Le Cedre, 5***** - 2 night Ideally situated in the heart of Beaune, opposite the ramparts and 5 minutes walking distance from the Hospices de Beaune, This 5 stars hotel is the ideal place to discover the area. Beautiful, shaded terraces in the heart of gardens full of 100-year old trees where you can enjoy the summer season and a comfortable lounge bar with a fireplace to warm yourself when winter has arrived. Charming and comfortable, the room is of average size (25 to 27 m²) and has a bathroom with bath and/or shower and toilet. They all have the excellent facilities for your comfort (reversible air-conditioning, shower and/or bath, hairdryer, bathrobe, slippers, minibar, free WIFI, flat screen LED television with international channels, DVD player, Sealy brand king-size mattress etc.).

3 Day 1 Truffle and Crémant (sparkling Wine) 11am : Truffe de Bourgogne : L Or des Valois Vive La Bourgogne Starting in Concoeur at 11am Thierry Bezeux will be waiting for us, along with his dog Elfe, a two year old Lagotto Romagnolo (the only dog breed recognised for sniffing out truffles) They will demonstrate how to look for truffles in open ground and explain the truffle life cycle and its culinary uses. Lunch : Traditional family meal based exclusively around Burgundy truffles. For lunch you will remain on site and enjoy a traditional meal prepared by Madame Bezeux, based exclusively around Burgundy truffles. 3.00pm : Guided tour of a Crémant de Bourgogne production facility and Crémant tasting (3 Crémants). La Veuve Ambal Vive La Bourgogne You will be guided through the process of creating a Crémant de Bourgogne step by step, from grape pressing to exporting the finished product. You will end our visit with a tasting of three Crémant de Bourgogne.

4 Day 2 Anis de Flavigny, Cassissium and Gaugry 8.00am : meet your private english driver/guide and departure to Flavigny. Vive La Bourgogne 9.30am : Anis de Flavigny Our candies are made with Anise. This plant, Pimpinella anisum, is not to be confused with fennel (a vegetable) or with star anise (Chinese anise, the fruit of an exotic tree).

5 11.30am : Stroll at Flavigny / Ozerain. Flavigny-sur-Ozerain is a small medieval fortified town, with sturdy walls surrounding the narrow winding streets that weave between the traditional medieval Burgundy houses - some more grand affairs, and others more humble, constructed in the attractive light local stone of the region. Lunch at «l Abbaye» in Flavigny (not included) : Located in the renovated former post of authentic medieval village of Flavigny-sur-Ozerain, the RESTAU- RANT OF THE ABBEY, run by Philip and Natasha Guillier, offers a cuisine based on tradition and the vineyards of Burgundy. Between snails, Charolais beef, local cheeses such as Epoisses and fresh farm products, chef

6 Philippe Guillier can give free rein to his creativity to register delicious specialties on its menu: eggs meurettes, dodine poultry farm with crayfish, nets Charolais Bourgogne truffle, enjoy iced blackcurrant sorbet with gingerbread... not to mention its specialties with anise, nod to the neighboring factory Flavigny aniseed. All topped of Burgundy wines and local wines. 1.30pm : Departure to Nuits-Saint-Georges 3pm : Visit a family cheese maker with cheese tasting : Gaugry Vive La Bourgogne You will make a stop off at a cheesemakers established in 1946, observing the cheese making process from the selection of milk to ripening, casting and curing. We will end our tour with a tasting of five cheeses accompanied by a glass of Pinot rouge.

7 4.30pm : Le Cassissium. Vive La Bourgogne. Blackcurrant, the jewel in Burgundy s crown, is revealed in all its glory, at the Cassissium museum. You ll learn everything about its history, how to grow it, how to process it and its variety of uses. In addition to the exhibition, you ll also have the chance to visit a manufacturing site and enjoy a multimedia show. Back at your hôtel around 6pm Day 3 Prosper Maufoux, Mulot & Petitjean and Fallot 10am : Pick up at your hôtel. Our guide will pick you up at your hôtel for departure on Côte de Beaune am : Arrival at Santenay at domaine Prosper Maufoux. Vive La Bourgogne.

8 Founded in 1860, our headquarters are on the main square of Santenay in a mansion that houses two floors of cellars, the oldest of which dates from the 15th century. This is the setting they have chosen in which to unveil their gems from Côte de Beaune and Côte de Nuits to you. Stroll in the vineyard : During a stroll (1,5km), you will learn about winegrowing, the classification of the appellations, the terroir and «climats» that typify Burgundy and its wines, and discover the delights of the charming village. Visit the XVth century vaulted cellar and enjoy a traditional Burgundian mâchon. The house boasts two beautiful vaulted cellars stacked with wines dating back to the fifteenth century. While you will enjoy the visit of the cellar and your mâchon, a mix of regional charcuterie and cheeses from Burgundy, the team of the domaine will explain you the 4 classification trough a wine tasting. - Regional wine - Village wine - Premier cru - Grand Cru A wonderful tasting of 8 wines from Burgundy!

9 3.00pm : Private guided visit of Beaune and the Hospices de Beaune (Hôtel Dieu). Beaune, located in the heart of the wine country «La Bourgogne», is undoubtedly one of the most interesting french city. Internationally famous, it has fascinated its visitors for years. Its well know landmarks, Hôtel Dieu, the Hospices, Basilique Notre Dame, the ramparts and its great wines, are part of its historical heritage. No visit to Burgundy would be complete without a visit to this Gothic monument with intricate facades and glazed roofs, lined with flamboyant colours and geometric shapes. It is part of the Hospices de Beaune, a charitable institution founded in 1443 by Nicolas Rollin, chancellor of Burgundy, and a rare example of excellently preserved architecture from the Middle Ages. There will be a chance to see the world famous masterpiece The Last Judgment by Rogier Van Weyden (c ). - Gourmet stop to discover the famous Burgundian ginger bread at Mulot et Petit-Jean : Vive La Bourgogne.

10 Etablished in 1796, Mulot & Petitjean has a long Burgundy familiy tradition of making gingerbread. It is one of the few families compagny to have been in existence for over two hundred years! 4.30pm : Discover La Moutarde de Dijon at Fallot Vive La Bourgogne Using a revolutionary staging method, together with highly sophisticated visual, sound and sensory media, at last you will be able to discover for yourself all the steps involved in transforming the wild mustard seed: from the storage silo right up to packaging the end product. While La Moutarderie Fallot has been able to preserve its traditional and ancestral manufacturing methods, which involve grinding the seeds with a millstone, it is with pride that we now invite you to come and discover totally new experiences and sensations at a venue which truly befits the 21st century! So come and enjoy a novel experience which is one of a kind by entering the new world of the mustard in Burgundy and, if you have the inclination, become a mustard-maker in the blink of an eye!
