Heat the remaining olive oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until golden brown, 4-6 minutes. Reduce heat to low and add the dates & vinegars. Cook until the dates are softened & the liquid is syrupy, 3-4 minutes. Transfer to a bowl & allow to cool minutes. Stir in the chèvre, pepper & lemon zest. Spread a slightly rounded tablespoon of the chèvre mixture onto each slice of bread. Press the pancetta onto the top of the cheese. Auburn, WA US Postage PAID Auburn WA Permit No 842 Veigadarte / 2.2 lb Logs Summer has arrived a little early this year and here at Peterson we are excited to welcome the season with some bright, fresh flavors from the world of cheese. We know that as the weather changes, so do your menus, and that s why I want to tell you about one of my all-time favorites: Veigadarte. This gorgeous cheese is made to order by a very small artisan producer named Mr. Joaquin Villanueva Casado. His creamery is located in the little town of Ambasmestas in the Castilla-León region of Spain, where he crafts this special cheese with goat's milk from the Murciano-Granadina breed. This breed of goat yields a particularly rich milk with a high butterfat content that is wellsuited to exceptional cheese making. Veigadarte is aged for one month and has a distinctive ash rind that is covered by a pillowy, bloomy white mold. The interior consists of a luscious creamy veil just below the rind, surrounding a dense, cakey center. The flavor is bright, lactic, and clean, with notes of lemon and a slight earthy finish a perfect addition to any cheese plate or your retail case.
