We love the change of seasons here at Peterson: the flowers in bloom, gardens bursting with life, and a shift in our dining habits. We start adapting to the picnic format: a little cheese, some charcuterie, a glass of rosé, a spot in the sun. Does it get much better? In Spain, this is a way of life, and in a nod to that tradition we d like to suggest a few great Spanish cheeses and meats for your patio menu or cheese case: Let's start with the classic Manchego, a nutty and fruity sheep's milk cheese from La Mancha that gains complexity as it ages. Manchego is a staple of the Spanish cheese plate, and can be enjoyed young at 3 months when it is mellow and creamy, or at 6 months when it s nutty and slightly crumbly. To add color to the plate try Ibores, an aged raw goat's milk cheese rubbed with Pimenton. Bright, clean flavors and a slight sweetness make this cheese very approachable yet complex, and the reddish rind adds great visual contrast. Now for some smoke! San Simon from Galicia is shaped like a little torpedo, making an interesting cut presentation on the plate. It s a rich cow's milk cheese smoked over beech wood, with lactic flavors and an intense, smokey finish. To compliment the cheeses and build a well-rounded board, there's nothing quite like good Spanish ham. Serrano is a robust and nutty ham with intense lasting flavor that will have you begging for more! May we also suggest Despana's Cantimpalo a great chorizo with a little heat and a tangy finish? Toss in some nuts, fruit, and olives, and you've got yourself a great Spanish board.
