2 Smoked Trout Dip 8 SERVINGS This dip is super simple and amazingly delicious. It s smoky, savory and surprisingly not fishy tasting. The horseradish adds just the right zing. It s quick to make and improves with time in the fridge so go ahead; make it a day or two ahead! 10 ounces Rushing Waters smoked trout ½ cup cream cheese, softened ½ cup sour cream 1 tablespoon prepared horseradish 1 tablespoon minced red onion 1 tablespoon minced flat-leaf parsley ½ lemon, juiced Celery sticks, crackers, and/or baguette slices for serving 1. Skin and flake the trout fillets making sure to remove any bones. 2. Place cream cheese, sour cream, horseradish, and trout in a food processor. Puree until smooth. 3. Transfer to a bowl and stir in the onion, parsley, and lemon juice. Refrigerate about 1 hour until dip firms up.
