3 WELCOME TO SPAIN IS WINE! As the Divisional Director for Gastronomy and Wine in Madrid, it is a pleasure for me to be here today at Spain Is Wine. This is a day of celebration in which 61 bodegas, showcasing more than 275 different wines, gather together at the Art Gallery of Ontario. Spain has the world s largest vineyard acreage, and the excitement, attention and demand surrounding wines from Spain today is the fruit of more than 3,000 years of experience. From long established and respected wine growing regions to exciting new ones, from indigenous grape varieties to foreign ones and from traditional to modern wine making techniques, wines from Spain offer something for everyone. We boast 69 Denominations of Origin (DO) and 41 country wine designations called Vinos de la Tierra (VT) with a unique terroir in each viticultural region. Spain is surrounded by water on three sides: the cold Atlantic in the North and West and the warm Mediterranean. Spain s physical geography is dominated by numerous mountain chains and their critically important foothills as well as significant rivers and their tributaries. These physical characteristics, from gently rolling hills to spectacular, terraced vineyards combined with the climatic influences of the seas and winds from all four directions, provide one of the broadest varieties of grape growing environments in the world. The transformation of the range of Spanish wines over the past 25 years has been truly remarkable. Recent years in particular have witnessed the emergence of a new generation of Master Winemakers who have achieved a balance of tradition and quality with innovation and quality, giving rise to unique and versatile wines that enjoy unprecedented success worldwide. 6 GREEN SPAIN Green Spain s cool and misty climate necessitates a focus upon earlier-ripening grapes, especially white varieties. Aromatic varieties prosper, with Albariño the most visible success in international markets. Grown along the coast, or along the rivers that give Rias Baixas ( lower fjords ) its name, Albariño is the dominant grape; it can vary from crisp and tangy to round and peachy. While Treixadura and Loureiro grow there too, Rias Baixas single-minded focus upon Albariño has fueled a drive that has seen the U.S. become the region s number one market. Other white grapes fill the vineyards moving inland; the rich and even complex Godello grape rules in Valdeorras (the valley of gold, reflecting Rome s interest in the place 2000 years ago). Godello, Treixadura and others serve the regions of Monterrei and the picturesque DOs of Ribeiro and Ribeira Sacra. But away from the coast temperatures rise, so red grapes do well too; the Mencia grape is arguably northwest Spain s best red. Its lip-smacking raspberry tones and floral aromas are fun and bracing. Thus far, the grape s top iterations are found on the precipitous mountainsides above the town of Bierzo and the steep banks along the Sil River in Ribeira Sacra. The vineyards plummet downward; wine produced from old vines there is as dramatic as the view. Green Spain s vineyards extend all the way to Basque Country, often backing into the Pyrenees or the Sierra Cantábrica, sheltering more famous wine regions such as Rioja. Climatic challenges are a consistent theme, as is the reliance upon tangy, tart wines ideal with the shellfish and seafood from the well-stocked Atlantic Ocean. Txakoli wines are extremely tart, lemony, and even spritzy. Waiters will pour your wine from high above the glass to emphasize the fizz. Light in body and alcohol, Txakoli wines go down easily at the table or on a sunny afternoon. -4-

7 DUERO RIVER VALLEY Most of the greatest wines are from vineyards around the Duero River. Indeed Spain s most famed winery, Vega Sicilia, anchors the DO known as Ribera del Duero (meaning, the banks of the River Duero ), fueled by the ubiquitous Tempranillo grape, Spain s most planted red. The Duero River travels 460 miles from high in the Sistema Ibérico, forms part of the border between Spain and Portugal and then empties into the Atlantic at Oporto, a town that gives its name to a famous Portuguese fortified wine. The table wines grown along its banks are nearly as intense as Port but are far more practical at the table. Roasted lamb and goat are genius here, and the cold Atlantic seems far away in climate and cuisine. Though many of the vineyards have a gentle, round contour, this is high elevation viticulture: days are warm or even hot; nights are cold. Ripening is slowed; the wines become rich and ripe and hang on to their dusty, astringent structure. Some affordable wines are for immediate, delicious drinking; the top wines (Vega Sicilia, Pingus, Pesquera and many others) can last decades. The region s success have seen vineyards expand, and now names such as Sardón del Duero, Arribes, Arlanza, Cigales and other seeming satellites are garnering welldeserved attention. Rosés have been Cigales mainstay and the Tempranillo grape has more to say, it would seem. Tempranillo shines even more brightly in Toro; if the name conjures bulls, it s a region making powerful, even massive wines. Subtlety is not Toro s strong suit, but lovers of internationally styled wines are embracing the region s hard charging reds. On the other side of the Duero River, the Rueda DO has claimed its own international spotlight with the Verdejo grape, offering a white wine likened to (and occasionally blended with) Sauvignon Blanc which has its unique citrus aromas and pear texture and flavours. -5-

8 THE MESETA Félix Lorrio/ ICEX Almost two-thirds of all Spain s vineyards are on these arid plains. Many of Spain s top Vinos de Pago (such as Dominio de Valdepusa, Finca Elez, Dehesa de Carrizal and Pago Guijoso) are found in this area. The northern portion of the Meseta pitches its dry plateau to the edges of the Sistemas Central and Ibérico; the vineyards might be hot and dry, they often lie at high altitudes, and nighttime temperatures can be cool as a result. The Castilla La Mancha region focuses upon varietals, fueling a revolutionary turnabout in which these wines may become some of the most familiar Spanish wines to Canadians. For the moment, Airén remains the most widely planted grape, at over 70 percent of the vineyards. In La Mancha, the most extensive wine-growing region in the world, nearly half of the vineyards are not guaranteed to be granted the use of the DO label as they have to comply with strict criteria as set out by the Regulating Council. The DO s of Almansa, Manchuela, Méntrida, Mondéjar, Uclés, Valdepeñas, and Vinos de Madrid are producing good wines in their elevated vineyards. The Extremadura region lies to the west, and just as with Castilla La Mancha, there are some surprising wines to be found, with one DO, Ribera del Guadiana, showing distinct promise. -6-

9 MEDITERRANEAN COAST Fernando Briones/ ICEX This massive area includes much of present day Cataluña; there is a DO by that name as well that encompasses many of the top areas. These vineyard areas, whether near or far from the coast, share exposure to the warm winds of the Mediterranean. Many of the vineyards can be fairly moderate in climate and coastal, as in Alella, or remote and mountainous, as in Priorat. In Cataluña, elevation and proximity to the sea are crucial to understanding what is made there and why. Alella offers some delicious whites from the Pansa Blanca grape (known as Xarello in Cava country); it can be aromatic and expressive. White wines prosper in a number of sites along the Mediterranean, though not as frequently as the reds. Empordá makes some generous and textured Garnacha Blanca based wines, as do Montsant and Priorat. The Penedés region, home of 95% of the country s Cava, is awash in white grapes: Parellada, Macabeo (or Viura) and Xarel-lo (or Pansa Blanca). As throughout most of Spain, the greater number of prized wines are reds. DO s such as Conca de Barbera, Costers del Segre, Empordá, Pla de Bages and Terra Alta have a dizzying array of wines from both international and indigenous grapes. Garnacha is far more planted than is Tempranillo; heat is a stronger factor in these regions and Garnacha a more forgiving grape. Syrah and the Bordeaux varieties show up in more elevated and protected sites. The great success story in recent years is in and around the Tarragona region where some vines end up as Cava and some harbor red grapes. Priorat and its baby brother Montsant have unquestionably changed Spain s wine landscape; these craggy hills and mountains allow Garnacha, Cariñena, along with small amounts of Cabernet Sauvignon, Merlot and Syrah to bake into powerful, heady wine, especially when coaxed from the old vines found throughout. In Montsant, elevations and terrains are not as extreme as Priorat, and Priorat s famed licorella soils give way most often to limestone, and the quality/value ratios are well stacked in the drinker s favour. The prices charged for some Priorat wines are as lofty as the stark pinnacles above -7-

10 Fernando Briones/ ICEX MEDITERRANEAN COAST (continue) these mountainous vineyards. Twenty years ago this entire area and its wines were nearly forgotten. In the early 1980s, a group of mavericks René Barbier, Rioja s Alvaro Palacios, Carlos Pastrana, Dafne Glorian, and José Luis Pérez moved to Priorat. They created fantastic wines almost from the beginning, and they continue to improve the wines of the region. The fame and pricing have attracted some to the region, but a quick buck is unlikely. As Alvaro Palacios of L Ermita is quick to point out, the region itself is so difficult to work that only small amounts of very high-quality wine can be made. Anyone seeking to make wine through compromise will likely fail. The quality in Priorat, and the prices, shall remain high. These wines are powerful and warm, if not occasionally hot, and carry a fresh and even slightly racy core that gives them shape and complexity. The landscape too is distinct; the licorella soil mix of granite and slate adds a firmly mineral note that underpins every wine, regardless of the grapes. Closer to the coast, Penedés is home to more than Cava. The region is broken into the Alt-Penedés, Mitja-Penedés, and Baix-Penedés, reflecting the disparities in elevation within Penedés, with some vineyards planted in sites higher than 2,500 feet. All the grapes (especially the dominant three Macabeo, Xarel-lo, and Parellada) at those altitudes can be intensely tart, akin to the raciness of Champagne. There are complex and layered versions of Cava, as well as rich rosado styles to be discovered. Nine months of aging on the lees is required for standard Cava; Reservas must stay 18 months on the lees, and Gran Reservas require 30 months. Farther southwest down the coast, the average temperatures go higher, and the opportunity to make light wines is baked away. Instead the Levante, an area around Valencia and Murcia, is wholly dependent upon water, and the grapevines suffer without it. Areas such as Alicante, Bullas, Utiel-Requena, Valencia and Yecla do good work where the producers are dedicated to quality, and where the vineyards are elevated enough to provide cooling nighttime temperatures. One of the stars here is Jumilla. In the last two decades, Jumilla has crafted delightful wines, whether from Monastrell (or Mourvèdre, as the French call it), Garnacha or blends with other grapes. Most wines are very reasonably priced and are often rich and delicious. The Bobal grape is exciting too and prospers more often in Utiel-Requena. -8-

11 ANDALUCIA ICEX The ancient lands of southwestern Spain have been planted to vineyards for nearly 3,000 years. But this part of Iberia was long under the control of the Moors, and winemaking was discouraged if not outright forbidden here from 711 to To most visitors, Andalucía appears as more moonscape than landscape; and Andalucía s mountains carry other possibilities. With abrupt shifts in elevation, fascinating dessert wines have been produced within areas in Montilla-Moriles and Málaga. And Andalucía s most famous wine area, Jerez (Sherry), receives more rainfall than most other parts of southern Spain. That rain is captured by the special limestone-rich soils of the area, called albariza, that bake in the summer sun into a hard crust, trapping cool moisture for the vines needs. Sherry s multiplicity is a bewildering obstacle for too many people. It s actually simple: Sherry is fortified wine. It s fortified after the fermentation, so unlike Port, all Sherry begins its life as a dry wine. Sherry is initially classified as one of two wines: fino or olosoro. A fino is intended to be a light, crisp, delicate wine even at its usual alcohol level of 15% or more. Yet the great finos are delicate. They are aged in barrel underneath a yeast film called flor (or flower, though it looks more like pond scum), and the flor protects the wine from oxygen, adding flavors and aromas as well. Great finos have the tangy aroma of the flor with its distinct almond character and aromas similar to mushroom and sometimes cheese rind. The finos aged in the bodegas of the coastal town of Sanlúcar de Barrameda take on even more of the aromas of the ocean and are given the distinct name of manzanilla. -9-

12 ANDALUCIA (continue) Finos that eventually lose their flor will be topped up, fortified to a higher level of alcohol (around 18 percent), and allowed to age into something called amontillado. Amontillados contain echoes of the character of the fino from which they grew, but pecans, honey, caramel, toffee, nuts, dried fruits, and many other aromas and flavors begin to take over. The other great category of Sherry is oloroso. These are usually made sweet, although a handful of them are left dry. The term oloroso can be loosely translated into something powerfully aromatic, and the long barrel aging required for great oloroso certainly gives it aromas, which might include toffee, walnuts, prunes, cherries, orange rind, spices, chocolate, and myriad other delectable, dessert-like characteristics. Sherry is also defined by its solera process of aging. Solera is a system of graduated blending whereby a portion of Sherry is drawn from an old barrel, which is subsequently filled from a barrel of younger Sherry. Barrels of younger and younger Sherries cascade downward so that old and new Sherries are gently and systematically blended together. Sherries can be designated as Twelve Year Old. Fifteen Year Old, VOS or VORS (see glossary), and are Carbon-14 tested to verify their minimum average age. We know of no other similarly rigorous testing in other wine regions of the world. -10-

13 THE EBRO RIVER VALLEY Rioja s most important river isn t the diminutive, namesake Rio Oja, but the Ebro. Snaking between the Sierra Cantábrica and the Sierra Demanda, the Ebro and its tributaries have helped carve out vineyards that have been celebrated for at least two centuries. Rioja has traditionally carried Spain s reputation for high quality wine, at least until the late twentieth century s explosion of new regions and grapes. There are three sub-regions Rioja Alavesa, Rioja Alta, and Rioja Baja and while many describe their distinct differences, the notion of a hierarchy between them is out of touch with reality. So too the fashion with grapes: Tempranillo is king, certainly, but Garnacha, Mazuelo (Carineña), Graciano and increasing numbers of other indigenous grapes are generating new ideas and styles in the region. There are reds, whites and rosés here, but the reds account for the greater part of its fame. Aging classifications have, until recently, been the primary means for separating one wine from another: Joven ( young ) wines are for early drinking. Crianza wines are aged for two years (one of those in barrel) and are for early or mid-term enjoyment. Reserva wines (three years aging, with one of those years in barrel) can be age-worthy or offer serious immediate consumption. Gran Reserva wines have been regarded as the region s pinnacle; they are at least five years old and generally ready to drink. But they can age for years too; their long barrel aging often renders them gentle and complex, rather than big and rich. Today many top names are often eschewing long barrel times, and some of these Tempranillo based wines could stand in for Napa Cabernet in intensity and weight. If Rioja has been the traditional area of quality, Navarra has generally been known for quantity. International grapes such as Cabernet, Syrah and Merlot are being planted; while the DO s historic Garnacha vineyards are ripped out. Many see that as a pity, but Navarra is still transitioning to excellence. Some other areas are already proven even if lesser known such as the limestone-rich DOs of Campo de Borja, Calatayud, Cariñena and Somontano. Juicy Garnacha is the primary driver. -11-

14 THE ISLANDS Piedad Sancho-Mata/ ICEX The Balearics The islands of Mallorca and Minorca offer an increasing number of small production wines from indigenous and international grape varieties; they re good wines, only a handful are now available in the Canadian market. The Canaries Though far away and off the coast of Africa, the Canaries are part of Spain and part of Spanish (and American) history. The Canaries were an important port on the long voyage to America, and it was from here that Columbus took sugarcane to transplant into the Americas to create rum. Spain s highest mountain is on Tenerife, the largest of the Canary Islands, and most of the island s vineyards are grown on these fertile, volcanic soils. There are a number of DOs on these islands, and most are very interesting, but only a few wines are available in the Canadian market. Here s hoping that will soon change! -12-

16 AIRÉN White. This variety covers the most surface area of any variety in Spain. Originally from La Mancha and cultivated throughout central Spain, it is the principal variety in DOs La Mancha and Valdepeñas. This vigorous and high-yield vine ripens late and is characterized by large and compact clusters. It is used to make young wines that are pale yellow and dry with fruity aromas. Wines are expansive and full-bodied on the palate. ALARIJE White. From Extremadura and extremely prolific in the Cañamero area, this variety has extended throughout different regions of Spain. It is highly fertile and ripens early. It is ideal for naturally balancing the acidity found in other varieties. Young wines are crisp and pale yellow with aromatic notes of apple and pear. Also called: Malvasía, Subirat, Malvasía Riojana. ALBARIÑO White. Considered native to Galicia, it is mainly found in DOs Rías Baíxas, Ribeira Sacra, Valdeorras. Clusters are small, ripen early and are reasonably hearty. Its production is limited by low yield and limited plantings. Wines are high quality with notable acidity, ample aromas and floral notes. ALBARÍN White. Cultivated in Asturias, its fruit is yellowish-green in colour. Its flavor is reminiscent of Moscatel and its crisp acidity makes it extremely interesting for fruity young wines. Also called: Raposo, Blanco Verdin. ALBILLO White. Medium-sized clusters with fruit that is yellow with brown speckles. These wines are characterized by balanced acidity and alcohol levels as well as fruity aromas and a hearty structure. Also called: Albillo, Mayor, Doradilla, Turruntés. ALBILLO REAL White. Preferred variety in DO Vinos de Madrid. Clusters are small, golden and ripen early. It is low yield. Though not very aromatic, it does have delicate notes of honey. When harvested late this variety lends a silkiness and structure to wines. These thin-skinned grapes are also highly valued as table grapes. Also called: Albillo de Madrid, Blanco del país, Castellano. ALCAÑÓN White. Cultivated in DO Somontano. Clusters are large and extremely loose with medium-sized fruit. The resulting wines are rich in alcohol and low in acidity. It is an interesting variety for blending with others. BABOSO Red. Cultivated in the Canary Islands in DOs Abona, El Hierro, Gran Canaria, La Gomera, La Palma, Lanzarote, Valle de Güimar, Tacoronte- Acentejo, Valle de la Orotava and Ycoden-Daute-Isora. 17 ripening. Wines have a significant alcohol content and acidity. Also called: Bastardo Negro, Verdejo Negro, Bruñal. BABOSO BLANCO White. Cultivated in the Canary Islands but originally from mainland Spain. Found in DOs Abona, El Hierro, La Palma, Tacoronte-Acentejo, Valle de la Orotava and Ycoden-Daute-Isora. Wines are light with floral and herbaceous notes. Also called: Bastardo Blanco, Calagraño, Baladí Verdejo. BEBA White. Used for making wine and as a table grape. Principal variety in DO Ribera del Guadiana. Its clusters are large and very compact. The resulting wines are crisp and fruity. Also called: Eva, Montúa. BERMEJUELO White. From the Canary Islands. Preferred variety in DOs Abona, El Hierro, La Palma, Tacoronte-Acentejo, Valle de la Orotava and Ycoden-Daute- Isora. Wines are crisp with notable acidity and aromas of tropical fruit. Also called: Marmajuelo. BOBAL Red. From the Levante region (eastern Spain). Preferred variety in DOs Utiel-Requena, Manchuela, Riber del Júcar and Valencia. Small and compact clusters. Medium-late ripening. It produces dense and complex wines with aromas of black fruit and flowers. It is potent and balanced on the palate. Also called: Aprovechón, Requena, Moravia. BRANCELLAO Red. Originally from Galicia. Preferred variety in DOs Rias Baixas, Ribera Sacra, Ribeiro and Valdeorras. The wines are used for blending and have outstanding acidity and deep colour intensity. Also called: Albarello CABERNET FRANC Red. Originally from France. Medium-sized clusters. Wines have medium colour intensity and are light and pleasant with moderate acidity. Grown primarily in Catalonia. CABERNET SAUVIGNON Red. From the French region of Bordeaux. Widely cultivated in temperate areas all over the world, it has adapted very well to Spain and is found in nearly all the DOs, including Vinos de Pago. The grapes are small with a particular astringent flavour and dense tannins. The resulting wines are very deeply coloured with complex aromas characterized by fruit, floral and green vegetal notes and an elegant structure that makes them highly suitable for aging. CALLET Red. Native to the Balearic Islands. Found in DOs Binissalem and Pla i Llevant. This is a vigorous, high-yield vine that is resistant to frost. Medium- -15-

18 sized, compact clusters and large, round grapes. Wines are medium-hued with aromas of plum preserves and red fruits and medium-bodied with moderate alcohol content and soft tannins. They are long lasting and linger on the palate. CARRASQUÍN Red. Cultivated in Asturias. This early ripening variety produces mediumbodied wines that are ruby red in colour. Aromas of spices and black and red fruit. Well-balanced acidity and structure. CASTELLANA Red. Cultivated in the Canary Islands. Authorized under DO Ycoden- Daute-Isora. CAYETANA BLANCA White. From Andalusia. Principal variety in DO Ribera del Guadiana. Large and fairly compact clusters. It is found mainly in Extremadura. High-yield. Also called: Blanco Jaén, Marisancha, Pardina* (the Pardina is currently being researched). CAÍÑO BLANCO White. Cultivated in Galicia. Found in DOs Rias Baixas and Monterrei. Small, compact clusters that bud early. Very limited plantings. CAÍÑO TINTO Red. Native to Galicia. Found in DOs Rías Baixas, Monterrei, Ribeira Sacra and Ribeiro. This late-ripening grape is low-yield and has medium-sized, loose clusters. This variety produces deeply coloured wines that have low alcohol content and marked acidity. Also called: Caiño del Pais, Cachón. CENCIBEL Red. The name given to Tempranillo in certain regions in the centre and south of Spain. See Tempranillo. CHARDONNAY White. French variety from Burgundy. Cultivated in several regions of Spain. Including in DO Vinos de Pago wines. Characterized by its small grapes, it is a highly aromatic and fruity variety. In cool climates, wines are lightbodied, with high acidity and notes of apple and green plum. This grape is suitable for oak aging through which it acquires toasted and nutty aromas while gaining complexity and structure. CHENÍN BLANC White. French variety from the Loire Valley, found in DOs Alella and Somontano. Its clusters are medium-sized and compact. Greenish-yellow fruit. Aromas of hazelnuts, honey and fruit preserves. Balanced acidity on the palate. Used to make light and fruity wines. -16-

19 DOÑA BLANCA White. From Extremadura, its vineyards are found along the entire Via de la Plata (Silver Route) from southern to northern Spain. Wines are elegant and aromatic with excellent acidity. Also called: Cigüente, Malvasía Castellana. ESPADEIRO Red. From Galicia. Used in red wines made in DO Rias Baixas. Wines are cherry coloured with fruity and spiced aromas and marked acidity. Wines have a distinctive personality. FERRÓN Red. From Galicia. Small clusters. Like other noble Galician grape varieties it has limited plantings. Wines are acidic and have low alcohol content. Used for blending with other varieties like Merenzao or Brancellao. Found in DO Ribeiro. FOGONEU Red. Found exclusively in the Balearic Islands. Cultivated in DO Pla i Llevant. Very high-yield with mid-season ripening. Wines have a deep, intense hue and are very aromatic. Notes of ripe fruit. FORASTERA BLANCA White. Widely cultivated in the Canary Islands and considered the principal variety in DO La Gomera. Its clusters are medium-sized and relatively loose. The fruit is small, round and yellowish-green in colour. It is ideal for making young white wines. Early harvest and a gentle cold press produce aromas of rockrose and white flowers. Also called: Forastera Gomera, Gomera blanca, Forastera, Doradilla FORCALLAT Red. From the Levante region (eastern Spain). Cultivated in DO Valencia. Its clusters are large and compact with cherry coloured grapes. Possessing light colour intensity, it is frequently used to make rosé wines. Aromas of plum compote and strawberry tones. Very pleasant on the palate due to its crisp acidity and bitter finish. Also called: Forcayat, Planta Forcayá. GARNACHA Red. The main production areas for this variety are Madrid, Toledo, La Rioja, Tarragona, Navarra and Zaragoza, although it is present in a large number of Spanish DOs: Campo de Borja, Cariñena, Jumilla, Navarra, Penedés, Mentrida, Vinos de Madrid, Rioja and Priorato. It is the third most cultivated red grape variety in Spain and possibly originates in Aragón. The clusters are medium-sized and compact with violet-red fruit and thin skin. Intense vermillion in colour with aromas of fruit preserves and good acidity which makes it suitable for oak aging, resulting in mineral wines with balsamic undertones. Widely cultivated in Aragón and Catalonia. Clusters are mediumsized, with small, yellow fruit. Wines have a golden hue and floral aromas. The wines are apt also for blending with other varieties, contributing acidity. Also called: Grenache Blanc in France, Alicante blanca, Garnacha gris. GARNACHA PELUDA Red. Planted in Aragón, Catalonia and La Rioja. The clusters are mediumsized and compact with thick skin and covered with the fuzz that gives it its name, Fuzzy Garnacha. It s an aromatic variety with delicate and sweet tannins. The vine s late ripening results in a low phenol content making it suitable for young wines or short-term aging in oak barrels. Well-balanced with aromas of strawberries and red fruits. These are vibrant wines. GARNACHA TINTORERA Red. Widely cultivated in La Mancha, it is considered a principal variety of DOs Alicante, Almansa, Jumilla, Bullas and Yecla. Clusters are mediumsized and short with round fruit that is blue-black in colour. It has a high phenol content, thanks to the deeply hued skins and pulp. Wines are robust with dense tannins and a bitter finish. Acidity and alcohol are balanced. Wines made from Garnacha Tintorera are dense with resinous and ripe fruit aromas. They are blended with lighter-bodied wines to give them colour. Also called: Alicante, Negral, Moratón, Tinto Basto, Alicante Henri Bouschet (in France). GARRIDO FINO White. From Andalusia. Large, compact clusters and large fruit. Low alcohol content and balanced acidity. At times light on the palate with minimal structure. GEWÜRZTRAMINER White variety originally from Central Europe. In Spain it is mainly cultivated in Aragón and Catalonia. The grapes have a characteristic pink colour, intense aromas and citrus notes. In cooler climates it attains notable sugar levels. The wines are dry with floral aromas that are reminiscent of roses and fruit such as litchis and passion fruit. Quality, sweet wines are made from grapes affected by noble rot and late harvest yields spectacular results. GODELLO White. From Galicia, it is related to Castile-Leon s Verdejo. Found in DOs Ribeira Sacra and Valdeorras. Clusters are small, tight and dense. The fruit is small and intensely green in colour. A high-quality, extremely aromatic grape. Wines are elegant and delicate with notable acidity and sweetness, pale in colour and perfumed by aromas of citrus fruits and apples. Also called: Verdeja. -18-

21 GRACIANO Red. Mainly found in La Rioja and Navarre. Cultivated in DOs Dominio de Valdepusa, La Mancha, Rioja, Navarra and Ribera del Guadiana. It has good acidity and low alcohol content. Frequently blended with other varieties, lending crispness and longevity. Wines have purple-hues with blue tones, aromas of red fruit and faint bitterness. Also called: Graciana, Morrastel in France. HONDARRIBI BELTZA Red. Cultivated exclusively in Basque Country. Found in DOs Chacolí de Alava-Arabako Txakolina, Chacolí de Vizcaya-Bizkaiko Txakolina and Chacolí de Guetaria-Getariako Txakolina. Late budding. Clusters are small and loose with deep crimson-blue coloured fruits that are medium-sized and round. Wines have low alcohol content but a high acidity level. They are characterized by aromas of both trees and wild fruits. HONDARRIBI ZURI White. Cultivated in Basque Country. The clusters are small and compact. Principal variety in DOs Chacolí de Alava-Arabako Txakolina, Chacolí de Vizcaya-Bizkaiko Txakolina and Chacolí de Guetaria-Getariako Txakolina. The grapes are small to medium-sized. Wines have aromas of citrus fruit, plants and flowers and well-defined acidity. JAÉN TINTA Red. This variety is only produced in Extremadura. Found in DO Ribera del Guadiana. Small, compact clusters and high-yield. Grapes are mediumsized and round with meaty pulp and a very significant total acid content. Wines are soft, crisp and aromatic; acidity is well-balanced and colour intensity is medium. Also called: Calagraño Negro, Morisca Negra. JUAN GARCÍA Red. Originates and principal variety in DO Arribes del Duero. It has extended to Galicia and Castilla-Leon. The clusters are medium-sized and compact with deep crimson, bluish fruit. Low alcohol content and good acidity. Low phenol content results in young wines that are produced using carbonic maceration. Also called: Mouratón, Negreda. LISTÁN NEGRO Red. Originates and cultivated exclusively in the Canary Islands. Found in DOs Abona, El Hierro, Gran Canaria, La Gomera, La Palma, Lanzarote, Valle de Güimar, Tacoronte-Acentejo, Valle de la Orotava and Ycoden-Daute- Isora. Mid-season budding with medium-sized clusters. Used to make both young and aged wines. Young wines made using carbonic maceration are aromatic and very fruity. They have a marked alcohol intensity and balanced acidity. Notable aromas of black fruit, volcanic soil and mineral notes. Wines have delicate and soft tannins. Also called: Almuñeco, Forestera de Tegueste, Forastero negro, Listán morado, Mollar cano. -19-

22 LISTÁN DE HUELVA White. From Andalusia. Late budding and large fruit. Medium alcohol and acidity levels. Primary aromas of white flowers. Frequently blended with other, sturdier varieties resulting in crisp and fruity wines. Also used to make traditional fortified wines that are subject to the criaderas (nurseries) and soleras (floors) aging process. Also called: Listán Blanca (in the Canary Islands Listán Blanco is the name of a variety that is the same as Palomino Fino), Castellano. LOUREIRA White. From Galicia. Found in DOs Monterrei, Rias Baixas, Ribeira Sacra and Ribeiro. The clusters are compact and the fruit round and mediumsmall. Loureiro wines have a green hue and aromas reminiscent of laurel. They are light on the palate with good acidity and low alcohol content. Also called: Marqués, Loureiro Blanco. MACABEO White. Possibly from Aragón, though it is cultivated throughout Spain. Principal variety in DOs Cava, Calatayud, Conca de Barberà, Costers del Segre, Navarra, Penedès, Rioja, Somontano, Tarragona and Terra Alta. Large and compact clusters and medium-sized fruit. Wines are delicate and pale yellow in colour with tinges of green. Low acidity and plant aromas. It is usually blended with more aromatic varieties and together with Xarello and Parellada it forms the base for Cava. Wines made using this variety in La Rioja are frequently barrel fermented. Also called: Viura. MALBEC Red. Originally from France, it is cultivated in central Spain and DO Ribera del Duero. Clusters are medium-sized and loose and the fruit is small. Wines have bold tannins and colour and are crisp and intense on the palate. MALVAR White. Found in DO Vinos de Madrid. Early ripening and large clusters. Wines are aromatic, greenish in colour and give off aromas of bitter almond. They are silky and bold on the palate. These wines have a distinctive personality and form part of the Sobremadre wines which are found exclusively in Madrid. MALVASÍA ROSADA Red. From the Canary Islands, it is similar to Malvasía blanco. Its clusters are medium-sized and relatively loose. Medium-sized, round and pink fruit. It is usually used for blending. MALVASÍA VOLCÁNICA White. According to molecular studies, it might be the result of a spontaneous cross between Malvasia Aromática and Bermejuela from the Canary Islands. Found in DOs Abona, El Hierro, Gran Canaria, La Gomera, La Palma, Lanzarote, Valle de Güimar, Tacoronte-Acentejo, Valle de la -20-

23 Orotava and Ycoden-Daute-Isora. This early budding vine makes highalcohol, golden-hued young wines and liquor wines. MALVASÍA DE SITGES White. Native to Sitges. Due to the characteristic nature of local vegetation, it is harvested late. Its elevated alcohol and acidity levels and proximity to the sea, result in a sweet wine with a high alcohol content. MANTO NEGRO Red. Found only in the Balearic Islands, this is the preferred variety in DOs Binissalem-Mallorca and Pla i Bages. The clusters are medium and compact and the grapes are small and round. Wines have good alcohol content and give off characteristic notes of black fruit and blue flowers. Mediumbodied, they are soft and light on the palate. MATURANA Red. From La Rioja Alavesa. An almost extinct variety found in DOCa Rioja. Clusters are small, cylindrical and relatively loose with medium-sized, round grapes that are blue-black in colour. Wines have a deep, intense colour matter and low acidity. These wines are a beautiful vermillion colour and give off aromas of dairy as well as notes of blue flowers. They are pleasantly structured on the palate. MATURANA BLANCA White. Found in La Rioja. An almost extinct variety in DOCa Rioja. Clusters are small, compact and bright green in colour. Wines are aromatic. When ripe, it gives off lemony aromas. Has good acidity and alcohol content and its low glycerol levels amplify the sour and bitter sensations that linger on the palate. MAZUELA Red. Extensively cultivated in Aragón, La Rioja and Catalonia and also found in DOCa Rioja. Clusters are large and compact. The fruit is medium-sized, round and blue-black in color. Abundant tannins make it highly suitable for aging as does its notable acidity level. Also called: Cariñena, Mazuelo, Samsó and Carignan in France MENCÍA Red. Principal variety in DOs Bierzo and Ribeira Sacra. Characterized by small, compact clusters and thick-skinned fruit. It is an aromatic variety with notes of red fruit, minerals and slate. Of medium acidity, it is good for making young wines, those with short aging periods and carbonic maceration wines that are spicy on the nose and smooth on the palate. The rosé wines are aromatic, fruity, light and soft. MERENZAO Red. Its origins are likely the Cantabrian coast. Found in DO Ribeira Sacra. Small and compact clusters, medium-sized, blue grapes. 24 tones, high acidity and potent aromas of minerals, spices and fruits of the forest. Also called: María Ardoña, Verdejo Negro. MERLOT Red. From the French region of Bordeaux. Extensively cultivated throughout Spain, it can be found in the following Pagos: Dominio de Valdepusa, Finca Elez and Guijoso. Small clusters and sweet and fruity tannins. Wines are aromatic and intensely ruby coloured with medium alcohol content. They are soft and fine on the palate and are used to add softness, elegance and balance to wines. MERSEGUERA White. Originally from Valencia and found in DOs Alicante, Utiel-Requena, Valencia and Yecla. The clusters are medium-sized and relatively loose with medium, yellowish-green grapes. White wines are pale with herbaceous notes, nutty undertones and medium acidity. In hot climates it is used to make semi-sweet wines. Also called: Blanqueta, Verema blanco. MOLL White. From the Balearic Islands. Main variety in Binissalem and Pla i Llevant. Wines are light with floral and tropical fruit notes. Alcohol and acidity levels are balanced on the palate. Also called: Prensal blanco. MONASTRELL Red. From Valencia. Clusters are medium and compact. Fruit is mediumsized, round and blue-gray in colour. Medium colour intensity and balanced acidity and alcohol levels. A very sweet grape variety with aromas of ripe, almost dried grapes and an intense and fruity flavor. Barrel aging serves to sweeten the tannins. It is also used for carbonic maceration. The liquor wine Fondillón from Alicante, is made using this variety. Also called: Alcayata, Monastrel, Morastel, Morastell, Mourvedré in France, Mataro in Australia. MORAVÍA DULCE Red. Extensively cultivated in Castilla-La Mancha. This is a high-yield variety with large compact clusters and blue-black fruit. Used for blending with other grapes like Garnacha. Wines are tinted with violet tones. Also called: Moscatel Negro, Brujidera. MOSCATEL DE ALEJANDRÍA White. Of exceptional sensory quality with particular emphasis on its aromatic intensity and versatility in the making of both white and sparkling wines as well as a large range of liquor wines. Main variety in PDOs Málaga and Valencia. MOSCATEL DE GRANO MENUDO White. This is perhaps one of the oldest varieties in Spain. Extensively cultivated in Castilla-La Mancha, Navarre and Catalonia, its clusters are cylindrical and compact. Grapes are small and sweet and can range in -22-

25 colour from yellow to mahogany. Wines made from this variety are highly aromatic with an elevated alcohol content making them suitable for dry, sweet, mistelas (fortified must) and liquor wines. When the grapes are dried, the resulting wines are luscious with a liquor-like quality. Also called: Moscatel Blanco, Morisco, Moscatel Romano, Muscat. NEGRAMOLL Red. Cultivated in the Canary Islands. Principal variety in DO Tacoronte- Acentejo. This is a high-yield vine. Clusters are small and compact. Fruit is medium and black in colour. Used to make light wines which are of good quality when young. Frequently used for blending with other varieties. PALOMINO White. Planted along the entire Via de la Plata (Silver Route) to Galicia. Clusters are of medium-high compactness with round, medium fruit that have fine skin and a yellowish-green colour. The fruit is juicy, fragile, sweet and flavourful with only faintly tinted juice. Preferred variety in DOs Jerez- Xérès-Sherry y Manzanilla-Sanlúcar de Barrameda. Also called: Listán, Jerez, Palomilla. PALOMINO FINO White. The most traditional variety in the Marco de Jerez. Used for producing Sherry wines fortified with holandas (base alcohol also used for brandies) and aged through a system of criaderas (nurseries) and soleras (floors). Preferred variety in DOs Jerez-Xérès-Sherry y Manzanilla-Sanlúcar de Barrameda. Also called: Listán Blanco de Canarias, Jerezana Fina. PARDILLO White. Found almost exclusively in Castilla-La Mancha. Preferred variety in DO La Manchuela. The clusters are medium-small in size and very compact. The grapes are medium-sized and have a greenish hue. The variety lends acidity to wines and is frequently used for blending with other grapes to naturally enhance a wine s acidity. Its strong resistance to oxidation makes it suitable for aging in oak barrels. Also called: Verdoncho and Marisancho. PARELLADA White. From Catalonia. Its clusters are large and compact. It has a low alcohol content and high acidity level. The wines are crisp, light and silky on the palate with significant citrus notes. It is blended with other varieties to make Cavas, as well as young wines. Also called: Montonés. PARRELETA Red. From Aragón. Clusters are medium-sized and very compact with medium, round grapes that are blue-black. Elevated colour and acidity. Its main characteristics are its hardiness and balsamic nature with notes of spices and fruits of the forest. Wines are suitable for aging. Main variety in DO Somontano. Also called: Ribote. -23-

26 PEDRO XIMÉNEZ White. The origins of this variety are unknown and controversial but it is widely cultivated in Jerez. Very extensive planting throughout Andalusia. Main variety in DOs Jerez-Xérès-Sherry y Manzanilla-Sanlúcar de Barrameda, Malaga, Sierra de Málaga and Montilla Moriles. The clusters are large and not very compact with small or medium-sized round grapes. Wines are made using dried grapes, resulting in sweet wines with ample dry extract that are mahogany coloured and aromatically complex, leaving an agreeable sensation of softness and sweetness on the palate. Also cultivated in New World countries such as Argentina, Chile and New Zealand. PETIT VERDOT Red. From Bordeaux, France. Found in various regions of Spain and particularly Catalonia and Castilla La-Mancha. Very intense aromas of spices and graphite. Contributes aromas, colour, acidity and elegance to wines. PICAPOLL Red. Cultivated in Catalonia. Mid-season ripening and good yield lead to medium-bodied wines with aromas of red fruit and pomegranate. Wines linger on the palate and are softly tannic. PINOT NOIR Red. Originally from the French region of Burgundy. In Spain it is grown mainly in Catalonia. The clusters are small. Young wines have aromas of red fruit including raspberries, strawberries and currants and violets, as well as soft tannins, resulting in medium-bodied wines that transmit refined and subtle sensations on the palate. Wines are soft, crisp, fruity and delicate. An elegant variety. PLANTA FINA DE PEDRALBA White. From the Levante (eastern Spain). Principal variety in DOs Valencia and Alicante. It has an extremely large cluster. Wines have aromas of apples and herbs with an average acidity. PLANTA NOVA White. Originally from Castellón. The clusters are large and conical with medium-sized fruit. The wines have minimal aromas with notes of green and citrus fruit. Used to make young wines. It is typically blended with other varieties. Also called: Tardana, Pansa Nova. PRIETO PICUDO Red. Extensively cultivated in Castilla-Leon. Found in D.O Tierra de Leon. It is easily distinguished by its tightly bunched clusters, pine nut-shaped fruit and dark, bluish-black skin. It has a high aromatic intensity and the wines have aromas of fruits of the forest, strawberries and floral undertones that linger on the palate. High acidity and good alcohol content. The wines are crisp and fruity. Also used to make an effervescent, semi-sparkling wine with sharp aromas and a creamy mouth feel. -24-

27 RIESLING White. Originally from Central Europe and used to make the most prestigious wines of Alsace, Mosel and the Rhine. In Spain it is grown mainly in Catalonia and D.O Somontano. Of small size, yellow colour and low production. Riesling grapes that have been affected by noble rot are used to make dessert wines. These wines are notable for their special honeyed and smoky notes and suitability for aging. In the Catalan region of Penedès, a special wine called Vi de gel is produced in the style of the ice wines of Germany. ROMÉ Red. Variety native to Andalusia. The clusters are medium-sized and not very compact. Wines typically possess good alcoholic content but can be lacking in acidity. They tend to be intense in colour with aromatic undertones of plants and red fruit, becoming expressive and creamy when aged in oak. RUBI-CABERNET Red. From California also found in South Africa and Australia. It is a cross between Cariñena and Cabernet Sauvignon. In Spain it is cultivated in the Canary Islands. Used for young wines with aromas of red fruit. RUFETE Red. Cultivated in Castilla-Leon. Found in DO Arribes. Clusters are small and compact and alcohol and acidity are well-balanced. Wines are complex with aromas of spices, herbs and fruits of the forest, yielding wonderful results when aged in barrels. SABRO White. Originally from the Canary Islands. Early ripening and small fruit. Produces wines with good alcoholic content and acidity. Has honeyed aromas and is crisp on the palate. It is ideal for making naturally sweet wines. SAUVIGNON BLANC White. Originally from the Bordeaux region of France. Primarily cultivated in DO Rueda and DO Penedès. Produces elegant, dry and acidic wines with fruity aromas. Suitable for late harvest wines. SOUSÓN Red. Authorized variety in DOs Monterrei, Rias Baixas, Ribera Sacra, Ribeiro and Valdeorras in Galicia. Its wines give off aromas of fruits of the forest and blackberry. Excellent acidity. SUMOLL Red. Probably originated in Catalonia, although it is also found in the Canary Islands. Clusters are large and compact, with medium-sized grapes. Wines have good acidity with medium-intense colouring. Also used for making delicate rosés and sparkling wines. -25-

28 SYRAH Red. From the French Rhône, its cultivation extends throughout Spain also forming part of the Vinos de Pago. Clusters are compact and the grapes are small with an intense boysenberry flavour. The wines are pleasant and flavourful with intense colour, noteworthy acidity and aromas of violets and ripe black fruit. TEMPRANILLO Red. Originally from the area that lies between La Rioja and Burgos. Found in the following DOs: Almansa, Calatayud, Campo de Borja, Cariñena, Cigales, Conca de Barberá, Costers del Segre, Jumilla, La Mancha, Méntrida, Navarra, Penedés, DOCa La Rioja, Ribera del Duero, Somontano, Valdepeñas and Vinos de Madrid. The clusters are large, round and compact with thick skin. This versatile variety is the most prestigious in Spain and considered the most characteristic Spanish grape variety. Its wines are structured, rich in alcohol and capable of aging well due to minimal oxidation. Characteristically ruby red in colour with deep aromas of forest berries, boysenberry and current. Fruity on the palate with undertones of blackberries, tobacco, vanilla and leather. Well-balanced. Also called: Aragonés, Cencibel, Tinta de Madrid, Tinta del País, Tinto fino, Ull de Lebre, Tinta Roriz (Portugal). TINTA DE TORO Red. This grape is officially certified as a native variety with its own name and well-defined agronomic and ampelographic characteristics. Principal variety in DO Toro. Produces red wines with a distinctive personality that are structured, crisp and intense. Deeply coloured, their broad and balanced expressivity lingers on the palate. The variety s most notable trait is the astringency of its tannins. TORRONTÉS White. Principally cultivated in nearly all of the DOs in Galicia and the Canary Islands. Its clusters are medium-sized, elongated and loose and the grapes are medium-large. When harvested early, the wines have good acidity and are crisp with hints of ripe apples. Also called: Gual, Boal. TREIXADURA White. From Galicia. Preferred variety in DOs Monterrei, Rías Baixas, Ribeira Sacra and Ribeiro. The grapes are medium-sized with large and compact clusters. Its flavour is reminiscent of apples. Has high acidity and ripens well. Very tolerant of drying and therefore used to make sweet wines know as tostados (toasted) which are golden-coloured and full-bodied with complex aromas of raisins and dates and a succulent and lingering palate. TREPAT Red. Principally cultivated in Catalonia. The clusters are medium-sized and compact. The alcoholic content is moderate and acidity is high. Used to produce base wines for making light, faintly coloured rosé Cavas. -26-

29 VERDEJO White. Originally from the area of Rueda. Cultivated in Castilla-Leon, it is the principal variety in DO Rueda. Clusters are small as are the grapes. Single-variety Verdejo wines are vibrant greenish-yellow in colour and highly aromatic with good body, luscious and soft. Possesses good acidity and a characteristic, bitter finish. Also called: Verdello, Verdeja and de Gallo Blanco. VERDIL White. Originates in the Levante (eastern Spain). Found in DOs Alicante and Valencia. The clusters are large. Produces straw-yellow coloured wines with good acidity, although its alcoholic content is typically not very high. Has aromas reminiscent of lemon and produces light and crisp wines. Used for both young and sparkling wines. VIJARIEGO White. Found in all the DOs in the Canary Islands. Clusters are large. Typically low alcohol content with balanced acidity leads to crisp, delicate wines with aromas of mountain plants and desert flowers which are slightly effervescent and succulent. VIJARIEGO NEGRO Red. From the Canary Islands. The clusters are relatively loose. The wines have a good alcoholic content and heavy tannic overtones which make them potent with complex notes of volcanic ash and powder. VIOGNIER White. French grape originally from the Rhône. In Spain it is found in hot climates like Andalusia, Castilla-La Mancha, Murcia and the Balearic Islands. This grape has the ability to age elegantly. The wines are fine, complex and very aromatic with notes of flowers and fruit including apples and mango. XARELLO White. Its origin is likely Catalonia. Clusters are medium-sized and tight with small fruit. Lends body and structure to Cava. Xarello wines are aromatic, with notes of honey and raisins in addition to well-balanced, sweet and silky. High alcohol content and good acidity. ZALEMA White. Found in Andalusia: in D.O Condado de Huelva. Clusters are compact with large fruit. We are perhaps most famous for our Cava Kripta, made from 60+ year old vines, with extended ageing and bottled in a handmade amphora-shaped bottle. 35 TABLE #42 Alvaro Palacios comes from a prestigious wine family from La Rioja and founded his own winery in 1989 in the Mediterranean wine region of Priorat, south of Barcelona in the province of Tarragona. Together with respected winemaker René Barbier and a few others, they ventured on what has been called the Gratallops Project, named after the scenic Priorat village where the wines are made. 39 Baron De Ley TABLE #28 Following the planting of the first vines in the Monastery Estate in 1985, including 70 hectares of Tempranillo, 10 of Graciano and 10 of experimental varieties, the market s excellent initial response in the 90s encouraged the cellar s founders to take the project further. Thus, this first estate vineyard was followed by more vineyards and plantations, such as Monte Araoz and Monte Jiménez in Mendavia, the incorporation of 100 hectares of old vines in Cenicero (Rioja Alta). More recently projects such as the Los Almendros estate in Ausejo and the Carboneras vineyard, can be found situated at an altitude of 850 m above sea level. It was founded in 1898, after the Carlist war, by Mr. Saturnino Daroca who started out by planting and producing wines of high quality of La Rioja. While the family has only been bottling wine since 2002, they have been growing and selling grapes for a number of years. The name of the vineyard is Fuente Elvira and the soil, which consists of gravel and sand over a red clay sub-soil, has some of the most highly regarded soils in the Rueda district. 65 Bodegas TABLE #15 Bodegas Piqueras was founded in 1915 in the town of Almansa by Luis Piqueras. At that time the production of the small cellar was aimed at the local market, with no other expectations than to sell some hectolitres of wine per year. In the 50 s, the cellar went through a series of enlargements to suit the increasing market of red wines sold in bulk to different areas of Spain, including Rioja. The winery bottled its first bottle of wine in 1961 and when the regulated designated area of wine production of Almansa was established, in 1975, the winery was the first in the region to invest in 100 oak barrels containing 300 litres. 72 TABLE #36 The winery can be traced back to 1885, when an ancestor of the Prada family, José Ramón Gay-oso, planted the first Godello vines on the high, slate hillsides of the Sil valley. Gayoso expand-ed small parcels of vines, or Pezas, carefully choosing the best sites in and around the village of Portela de Valderroas. In subsequent years many of these parcels were sold to other growers, leaving only the Pedrouzos estate within the family. 78 TABLE #36 Losada Vinos de Finca Losada is in El Bierzo, near the village of Pieros on the famous Camino de Santiago de Compostela. Working exclusively with Mencia grapes from old plantings, Losada s vineyards are a series of small parcels of traditionally bushtrained vines planted in slate and clay soils. Minimum intervention is done in the vineyards, in respect to area traditions, the environment, the workers and the people who enjoy their wines. That is, no chemical herbicides or pesticides are used. The modern winery by Jesús Manzanares, uses gravity to move wine through the production process rather than pumps. The design also incorporates environmental features for both heat/cooling and light, including locating the ageing cellar, production area, and bottling line underground. Solar panels generate power for much of the production. The wines are made under the direction of Amancio Fernández, one of a handful of pioneers who share responsibil-ity for the development of the Bierzo region. 79 FINCA TABLE #43 The thinking behind Finca Moncloa is based on recovering the almost forgotten tradition of red wine-making in the province of Cadiz and rescuing an almost extinct grape variety, Tintilla de Rota, with an eye to becoming the reference for Andalusian red wines. Since 1972, González Byass has been testing white and red grape varieties on experimental plots of land. In 2001, the González family purchased 12 hectares near Arcos de la Frontera for planting red grapes. 83 TABLE #26 Pierola Group was founded in 1996 by Carlos Bujanda de Pierola and his family, traditional vineyard producers in Moreda de Alava (Rioja Alavesa). It is a 100% family owned winery, medium size facility with a Kg capacity and a Pago Terroir facility. A few years after it was founded, the family built a new winery in Valcavado de Roa (Ribera del Duero) named Traslascuestas focusing on quality wine production only. The vineyards are located between 2800 and 3000 feet above sea level, making them amongst the highest in Spain. The soil is chalky and gypsum on the higher slopes and the area s continental climate has short and hot summers and very cold winters. We are producing wine using sustainable practices including natural geothermal energy. 87 Bodega Marques de TABLE #31 Starting in 1858 the Hurtado de Amezaga family emerged from among the rural winemakers of Rioja to create the first winery for crafting and aging red wines in the Bordeaux technique. By 1862 they were the first to commercially bottle their wines under the name Rioja, long before Rioja became an official Spanish wine region. Our vineyards (100 Ha), are located at an altitude between 550 and 750 m. These vineyards have been cultivated using traditional technologies of our forefathers such as the exclusive use of natural fertilizers and very limited production. We mainly produce the wine with autochthonous grapes, white and red Garnacha, Cariñena and Vidadillo. The wines, marketed under the brands Menguante and Gran Viu, show the unique characteristics of our land and our climate. 100 Cheese from Spain: TRADITIONS AND TRENDS The cutting edge cuisine of Spain is based on a pantry of heirloom foods of exquisite quality, including unique and iconic cheeses. Spain has over 100 indigenous cheeses, reflecting the country s diverse geography and ancient agricultural traditions. Did you know? Every corner has its own specialty, from fresh to cured, fermented and blue-veined. One essential characteristic is the type of milk used in production. Depending on the area, time of the year, climate and tradition, Spanish cheeses are made from cow s milk, sheep s milk, goat s milk, or of a mixture of two or all three. Cow s milk cheese is generally found in the North, along the Cantabrian coast, from Galicia to the Basque Country and along the Pyrenees mountains bordering the region of Aragon to Catalonia. Sheep s milk cheese is found in the interior, from Cantabria and the Basque Country in the North to the flat lands of Castilla Leon, Castilla La Mancha, Aragon and Extremadura. And finally goat s milk cheeses are found mostly along the Mediterranean coast from Catalonia to Andalusia as well as in Extremadura. The Canary and Balearic Islands mainly produce goat s milk cheese although cow s milk and mixed milk cheeses are also made there. Mixed milk cheeses are found throughout Spain with the local milk predominating. Quality cheese production is subject to rigorous regulations and there are currently 27 cheeses with Denominations of Origin (DO) in Spain. -98-

102 MAHÓN PDO PROMOTIONAL CHEESE PROGRAM 2016 Featured cheeses: Cheese made from whole milk from Friesian, Menorcan and/or Brown Swiss cows. This type of Spanish cheese is creamy with a nutty finish. MURCIA AL VINO PDO Made from Murcian goat s milk. After formed, it s macerated in red wine during ripening to give the rind the characteristic colour and aroma. SHEEP S MILK CHEESE WITH BLACK OLIVES Sheep s Milk cheese with black olives. The ripening of these olives leaves a profound aroma which, together with the milk cheese, leaves a unique and complex flavour. VALDEÓN PGI A blue cheese usually made from cow and goat s milk and sometimes with sheep s milk in addition to or instead of the goat s milk. Intense flavour, slightly lactic, salty and a little spicy-hot. MANCHEGO PDO Solely made of milk from La Manchega sheep milk & aged for 3,6,9 or 12 months. Aromatic, rich flavour with a mild nuttiness. IBERICO WITH ROSEMARY Mixed cow s milk, goat s milk and sheep s milk cheese which is coated with fresh local Spanish rosemary and then aged. The rosemary layer does not soak into the cheese but it gives a powerful and unique aroma. SAN SIMON DA COSTA PDO Traditional Galician cheese that has maintained all the ancestral manufacturing techniques intact. This delicious cow s cheese is made in the shape of a pear and then matured for at least sixty days. It is sometimes smoked with birch wood giving a smoky taste profile. Its flavour is mild, a little bit spicy and oily. GARROTXA Garrotxa is a traditional Catalan goat s milk cheese. Garrotxa is described as having a powdery gray or grayish-blue rind, a firm texture, an ivorycolored interior with an earthy flavour. TORTA DE CAÑAREJAL A rich and creamy sheep s milk cheese aged for at least two years. Its flavour is often described as powerful but mild with subtle aromas of rosemary, thyme, lavender or oregano. IBERIC CURED Cheese made with a blend of pasteurized milk from cow, goat and sheep which provides a mild flavour

104 SPANISH GOAT CHEESE AND TOMATO TOASTS Ingredients 1 cup of Spanish olive oil 1 sprig of thyme 1 sprig of rosemary 4 crushed garlic cloves 16 cherry tomatoes 8 ounces of fresh goat cheese Fleur de sel 1/3 cup of coarsely chopped fresh basil Toasts 16 slices of baguette, 1 cm thick 1 tbsp. olive oil Salt Preparation Heat the oven to 350º F. Brush the bread with olive oil, salt and toast in the pre-heated oven. In a medium skillet, heat the oil, thyme, rosemary and garlic over medium heat and let it simmer for 3 minutes. Add the tomatoes, lower the heat and let it cook for 5 to 6 minutes or until the skins of the tomatoes burst. Let it cool to room temperature. Spread each toast with goat cheese, place one tomato on top, ½ tablespoon of the olive oil from the skillet, a pinch of fleur de sel and a sprinkle of the fresh chopped basil. 105 CHORIZO IBÉRICO STUFFED DATES Ingredients 8 Medjool dates, whole, pitted 3.5 ounces chorizo Ibérico, sliced and cut in half 1-2 tbsp butter ½ cup natural yogurt 10% M.F. 2 tbsp. strong mustard Zest and juice from an orange Fleur de sel to taste Preparation In a bowl, mix the yogurt, mustard, zest and juice from the orange. Salt to taste. Stuff each date with a piece of chorizo, put it in the palm of your hand and apply light pressure so that it closes up. In a medium sized skillet, melt the butter over medium heat. Add the dates and cook each side for 3 approx. minutes. Garnish the dates with the yogurt dressing and enjoy. Suggested wine pairing Tempranillo, Garnacha, Monastrell -103-

106 ZAMORANO CHEESE WITH CARAMELIZED ONION Ingredients 1 Spanish onion 2 tbsp. of Spanish olive oil Salt 4 tbsp. brown sugar 2 tbsp. of white wine vinegar 4 slices of baguette, 1 cm thick 1.75 ounces Zamorano cheese, or any cheese from Spain Preparation Peel the onion, cut it in half and then slice it finely. Pour 2 tbsp. of Spanish olive oil into a saucepan and heat it gently. Add the onion and let it cook slowly for about 3-4 minutes. Add a pinch of salt. Keep the onion on the heat until it becomes translucent. Add the brown sugar and cook for 15 minutes and then pour in the vinegar. Increase the heat to medium and let it reduce for 5 minutes. Remove from the heat and let the caramelized onion cool. Prepare four slices of bread and toast them lightly. Place a thin slice of Zamorano cheese on each slice and top with some of the caramelized onion. Suggested wine pairing Cariñena, Mencía -104-

107 SPANISH OMELETTE WITH SOBRASADA IBERICO Ingredients 5 medium-sized yellow potatoes, thinly sliced 1 Spanish onions, thinly sliced 1 cup of chopped sobrasada 8 tbsp. of Spanish olive oil 6 eggs Salt Preparation In medium sized non-stick skillet, heat 8 tbsp. of olive oil over medium heat, add the potatoes and the onions seasoning with salt and cook for about 20 to 25 minutes. Five minutes before the cooking finishes, add the sobrasada. Make sure the potatoes are tender, if not, continue to cook. Remove potatoes mixture from the skillet and drain well. Keep approx. 1 tbsp of olive oil in the skillet. While the potato mixture cools a bit, in another bowl, beat the eggs and then add to the potato mixture. In the same non-stick skillet, heat the olive oil and pour in the potato and egg mixture. Cook over low-medium heat for about 10 minutes. The tortilla must be cooked but slightly runny (when you shake the skillet, the tortilla should move as a whole and be a golden brown colour on the bottom). Place a large round plate over the tortilla and flip the pan over so that the tortilla is cooked side up on the plate. Then, gently slide the tortilla back into the pan and cook over low-medium heat for 5 minutes (or until the other side is cooked). Cut into wedges and serve at room temperature. 108 SERRANO HAM, VALDEÓN BLUE CHEESE WITH ARUGULA SALAD AND WALNUT VINAIGRETTE Ingredients for Vinaigrette 4 tbsp. Spanish extra virgin olive oil 6 tbsp. walnut oil 2 ounces shallots, finely chopped 1 pinch of salt 1 pinch of black pepper 4 tbsp. shelled walnuts, chopped 4 tbsp. white wine vinegar Ingredients for salad 2-3 cups baby arugula leaves 6.5 ounces Serrano ham 3 ounces Valdeón blue cheese chopped in small cubes Preparation Start by preparing the walnut vinaigrette. Place a medium sized skillet on medium heat and add the walnut oil, the Spanish extra virgin olive oil, shallots, salt and pepper. Cook for about 5 minutes until soft without coloring the shallots. Remove from the heat and then add the Spanish walnuts and vinegar. Arrange the baby arugula leaves on a serving plate. Place the Serrano ham slices on top and the Valdeón cheese cubes. Drizzle the vinaigrette over the salad. Serve immediately. Suggested wine pairing Cava, Amontillado -106-
