4 The history of wine in Prgue nd the role of Chrles IV in developing viticulture Wine is sid to be the drink of Kings. In the Czech Republic nd in Prgue, this is doubly true, becuse the spred of wine here ws lrgely due to the Czech King nd Holy Romn Emperor Chrles IV ( ). The origins of viticulture in Prgue It my hve been Prince Wencesls himself, the first of the Czech territoril ptrons who ruled in the 10 th century who founded the vineyrds by Prgue Cstle. Lore hs it he cultivted nd pressed wine himself. Indeed, the vineyrd spreding over the hillside in the close vicinity of the once Royl residence is nmed in his honour. No wonder tht Sint Wencesls hs become the ptron of winemkers. It would seem, however, tht the first grpe growers in our lnds were the ncient Celts. Grpe growing ws fostered especilly by the newly founded religious institutions nd monsteries, since the middle ges sw wine used primrily for missl purposes. Only in the 13 th century did notble ristocrtic fmilies tke to wine nd it ws t bout this time tht viticulture ws dopted by cities, too. The golden ge of wine under Chrles IV. With the reign of Chrles IV, the Kingdom of Bohemi sw viticulture rrive onto the Czech lndscpe. This glorious rrivl ws not just question of the number of vineyrds, but lso of the qulity of the grpes nd their processing. The King hd welth of experience from Frnce nd Itly. Shortly fter his scension to the throne he hd high-qulity vines plnted round Mělník nd Krlštejn Cstle. His efforts culminted in the yer 1358, when he issued his edicts. Czech wine mking thus got its cler-cut mndte. He lso ordered the clering of wooded slopes conducive to the cultivtion of vines in Prgue s vicinity. Although it my seem incredible to us now, it seems tht by the end of Chrles reign there were some 700 hectres of vineyrds in the environs of Prgue. The Edict on the founding of vineyrds The first edict ws issued by Chrles IV on 16 Februry 1358 on the Fridy fter Quinqugesim (the Sundy before the beginning of Lent). The edict not only lid down the estblishing nd letting of vineyrds in nd round Prgue, but lso kept in mind those who would cre to evde their duty. Stocking ws to begin within 14 dys of the issuing of the edict, nd the key thing ws to gin exemption from ll levies for 12 yers. Everyone who owns such hill is to commence such undertking within fourteen dys from the dte of the issue of this edict. Chrles edict ws lso quite prticulr bout prohibitions nd penlties: No-one shll hrm the vineyrds, whether of noble or common birth. Anyone cught by dy cusing hrm to the grpes or vines, on foot or on horsebck, or mking tril through the vineyrd shll forfeit their right hnd, unless they py 20 threescore (Czech Groschen) to the vinemster. Anyone cught by night, shll lose his hed nd his worldly goods shll fll to the vinemster. The burgeoning of vrieties nd vineyrds The originl vine grown here ws exclusively white nd quite cidic. Newly plnted out on Bohemin vineyrds were grpes from Frnce, chiefly from Burgundy or Chmpgne, from Austri, Hungry, but lso from Croti or Itly. The big news ws grpe clled rouč (pron. [roch]) probbly from the French rouge red wine. It ws precisely during Chrles IV reign tht red wine vrieties were introduced. Prgue nd its surroundings were suddenly full of vineyrds. They stretched through Košíře nd Motol up to Jinonice. Not surprisingly, Prgue s Vinohrdy district got its nme from the extensive vineyrds once plnted on the slopes round the New Town of Prgue, including Žižkov nd Nusle. There were vineyrds t tody s Grébovk prk, see pg. 22, but lso in Dejvice nd Troj. Hnd in hnd with the extension of vineyrds, Chrles IV set bout regulting the wine trde in He mde sure tht Czech nd Morvin vintners received preference. So it ws tht during the period from St Gll s dy (16 October) to St George s dy (24 April) no wine could be imported from Austri, from Wllchi (tody s Romni), etc. The restrictions encompssed missl wine. Prgue pprently becme self-sufficient with its own production, nd the Royl Court ws supplied predominntly with Czech nd Morvin wines. The Vineyrd Regultions of Prgue by Włdysłw Jgiełło The golden ge of wine in the Czech Lnds continued with the successors of Chrles IV. Włdysłw Jgiełło s reign during the 15 th 16 th centuries brought in severl chnges tht were to protect the vineyrds nd the qulity of Bohemin wines. All the vineyrds hd to be logged in lnd registries nd without lnd registry entry the wine could not be sold. Notbly enough, inspection of wine qulity nd grde ws brought in for the first time, under the decree tht fter St Gll in ll the towns of Prgue wine shll be verified nd if it were so found tht ny re flsified 6 The history of wine in Prgue The history of wine in Prgue 7

6 or spoilt by sulphur or ny other things hrmful nd injurious to people s helth such shll be withdrwn nd broken up. In the yer 1515, the Monrch issued similr viticulture decree for Prgue. In ll some twenty-one rticles lid out the reltionships between the vineyrd owners, the vintners nd vineyrd hnds. Among the most interesting rules we find tht lbourers shll be positioned fr enough prt so s not to elbow ech other while working, or tht during the treding of grpes no women shll hve ccess to the wine-press house. No one ws to crry off stkes from the vineyrds. No one ws to leve for lunch or dinner until the senior vintner blew his trumpet. The time of Rudolf, the reforms of Joseph II nd the 19 th century During the 16 th century the cultivtion of vineyrds cme more nd more under the control of towns. Vineyrds grew in number nd this gve rise to confusion of registers nd ccounts, in prticulr when it cme to pyments into the royl coffers. Hence even Emperor Rudolf II, wine lover himself, issued very detiled instruction in the yer 1590 comprising of 36 rticles bout wine mking. They concerned imports nd the export of domestic wines, fortifying nd diluting nd other such mtters. The Emperor ordered, inter li, tht the wine be kept s grown. Anyone not complying would hve their wine seized. In Prgue there ws significnt surplus production of wine during Rudolf s time which led the Emperor to protect wine-producers ginst unfir trders. Despite the dmge done to the vineyrds during the Thirty Yers Wr, enough of them still remined. This is pprent from the records of the lte 17 th century inventory of vineyrds, including their size nd worth. Then cme the reforms of Joseph II. These brought curtiling of forced lbour duties, nturlly to the disdvntge of the vineyrd owners, but in the yer 1784 cme the permit for ech to be llowed to sell nd serve food, wine nd fruit juice from their own production. This ws n idel bsis for developing the wine business. Nevertheless, the 19 th century sw more nd more decline in vineyrd crege. Mtters were most certinly not helped by the Npoleonic wrs, the bnkruptcy of the monrchy, the complete bolition of forced lbour in 1848 nor the ever greter choice of options of how to work the lnd. Thus, viticulture ws to fde into the bckground, though not forever. The renissnce of viticulture wsn t too long in coming. Czech wines nd getting to know them The Czech Republic is known s beer prdise, but for over thousnd yers grpes hve been grown here nd mde into wine worthy of note. The following prgrphs will let you know where our wines come from, wht vrieties re most populr nd the mening of the different ctegory nmes to be found on the lbels in wine-shops nd other stores. The geogrphicl regions Bohemi nd Morvi Currently there re 43.5 thousnd cres of vineyrds in the Czech Republic. For comprison, this is mere two-thirds of the re tken up by vineyrds in Burgundy, only one of the mny French wine regions. Overll we produce some 550 thousnd hectolitres of wine nnully (the equivlent of 73 million bottles), which is not enough to stisfy even hlf of the domestic demnd. This is one of the resons why exports re few nd you re unlikely to find Czech wine vilble brod. In Prgue you will come cross brod rnge of high qulity Czech wines, which mkes it fine plce to strt discovering wht they re ll bout. The wine-growing regions in the Czech Republic brodly divide into two min units Bohemi nd Morvi. Bohemi, with Prgue t its centre, is the lesser of the two, nd the locl vineyrds belong mong the most northerly nywhere in Europe. You cn find severl vineyrds in Prgue itself! Red more bout Prgue s vintge pst on pge 4. Most of the vineyrds these dys re locted in Morvi, specificlly the south-estern prt of the country north of Vienn. The Morvi wine country is divided into four sub-res the Mikulov, Slovcko, Velké Pvlovice nd Znojmo res ech with specific terroir conditions best suited to different vrieties. 7 Vrieties of white nd red wines Nerly four-fifths of the wines mde in the Czech Republic re white wines. Despite the northerly loction of the vineyrds, this is lso the home of some excellent red nd exceptionl rosé wines. The Czech Republic offers wide rnge of vrieties to choose from. Single vriety wines re much more common thn cuvée, blends of multiple vrieties, lthough these re on the increse. The following list provides the most common vrieties found in our vineyrds, with dditionl tips bout vrieties which while less bundnt re no less interesting. Veltlínské zelené (Grüner Veltliner) ws mde fmous in Austri nd in the Czech Republic it hs ll it tkes to provide gret refreshing white wine with its typicl peppery note. Look prticulrly for dry wines from the Znojmo re. Müller Thurgu offers rther uncomplicted nd esily drinkble white wine, but this is trditionl vriety in the Czech Republic nd one of the most widely seen, virtully ll over the country. A plesnt, lush wine with Musct tones tht you cn find, for exmple, from the Mělník re north of Prgue. Ryzlink rýnský (Rhine Riesling) is world fmous vriety, noble grpe yielding some of the country s finest wines, very populr with domestic vintners. Try out riesling from round Znojmo; in Slovcko one noted loction is Bltnice pod Svtým Antonínkem, lthough the best exmples my well be from Bohemi. Don t miss out on the Rýňk from round Mělník! Ryzlink vlšský (Welschriesling) hs wht it tkes to be one of the minsty vrieties grown in our vineyrds. Especilly the terroir of Plv (ner Mikulov) produces some of the best white wines to be found here. Welschriesling knows how to be light nd esily drinkble, but just s much to be honeyed, rich nd complex. It works very well in both dry nd sweet versions. Suvignon blnc is world renowned vriety tht lso plys n importnt role in Morvi; our most populr Suvignons come from the Znojmo region nd re covered by the VOC Znojmo certifiction of origin. These wines re mde in different styles, but you cn be sure to expect fresh expression, sometimes with tones of herbs, blckcurrnt or elderflower. Plv, hybrid creted by crossing Müller Thurgu nd Trminer red, bers the nme of this stunningly beutiful protected lndscpe zone ner Mikulov. 8 View from St Wencesls Vineyrd the Czech Republic, it is one of the novelty vrieties which is to be found nowhere else, except for Slovki. This romtic vriety gives rise to spectculr wines similr to the Trminer, often mde in sweeter form; very populr mong domestic consumers. Svtovvřinecké (St Lwrence) is our most widespred blue grpe vriety nd cn give rise to seductively romtic, fruity, spicy wines, rnging from the plyfully ccessible to the rre nd refined. It comes in ll mnner of qulity, nd it pys to tke dvice. Aprt from Morvi where it is to be found round Bořetice in the Velké Pvlovice re, it gives excellent results even in Bohemi, with for exmple - the Črodějnice ( Witch ) vineyrd ner Mělník yielding superb wines yer in, yer out. Frnkovk (Blufränkisch) is nother of the mjor Austrin vrieties here estblished, but it suffered some setbcks under the previous regime nd deserves more cre. When properly prepred it brings juicy clssic red, much benefiting from geing in ok cskets. Frnkovk from Dolní Kounice hs rel nme to it, nd excellent wines come from the Bořetice nd the Rkvice environs. Zweigeltrebe, hybrid of Svtovvřinecké nd Frnkovk is the most widespred vriety in Austri, but on our territory lso gives excellent wines, redolent of berries, softer, esy drinking. Most of it comes from the Velké Pvlovice nd Slovcko res, with some excellent wines from round Velké Bílovice. Rulndské modré (Pinot Noir) is minsty globl vriety with some of the finest wines coming from Burgundy, Oregon, nd Cliforni, but in the Czech Republic its trdition goes bck centuries. Outstnding Burgundy wines re to be found in Bohemi in the vicinity of Mělník nd Žernoseky, while in Morvi the wines tht excel re from Bořetice in the Velké Pvlovice subregion. Styles vry mrkedly, from the lighter strwberry-fruity wines to the more complex structured wines redolent of ripe stonefruit, ged in wood nd the potentil for ging. Modrý portugl (Bluer Portugieser) typiclly offers lighter, strightforwrd fruity red to quench thirst nd esy drinking. It is grown throughout the whole of Morvi nd Bohemi, nd wines from the Velké Pvlovice re re certinly worth smpling. André is one of the specility vrieties of Morvin red tht cme bout from the hybridiztion of Frnkovk nd Svtovřinecké in Velké Pvlovice; compred to Zweigeltrebe provides fuller, more structured wines, especilly from older vineyrds, in the plce of origin of the vriety. Also worth tste re the scented Morvin Musct nd Aurelius vrieties; the red Cbernet Morvi my lso be intriguing. All these re unique vrieties cultivted directly in the Czech Republic. 9 Mny fmed interntionl vrieties hve lso found their home here. Among bottled wines we often encounter fruity Chrdonny, often the slightly sweetish Rulndské šedé (Pinot Gris) or the frgrnt Gewűrztrminer. Among reds, both Cbernet Suvignon nd Merlot re sometimes grown, of which the ltter tends to be the more successful. These re mostly interesting for comprison purposes, s locl mnifesttion of populr world vrieties; smpling is recommended. Wine Ctegories In the Czech Republic you cn find virtully ll types of wines from the dry to the sweet, still or sprkling, non-lcoholic or strong fortified wines. The most common re the still wines, which come in different ctegories clssed by plce of origin nd must weight (sugr content) in the grpe juice t the time of hrvest. Stolní vín (Vin de Tble, Tble wines) usully without stted vintge or vriety re typiclly sfe to ignore. Vín zemsk (Vin de Pys, Provennce wines, i.e. Morvin territoril wine, Bohemin territoril wine) lwys come from declred wine-growing region nd from pproved vrieties, but hve not been officilly grded nd verified. Prdoxiclly, this mens we my esily find mong the bsic simple wines top clss product tht the winemker decided not to hve clssified for economic resons (for exmple if it is very smll btch) or becuse the clssifiction nd ttributive ctegories do not suit them. Territoril wines cn be nd usully re mrked with the yer nd vriety. Víno jkostní (Appelltion d Origine, Prädiktswein, Qulity wine) is the entry level for officilly clssified wines, consisting of domesticlly grown grpes from pproved vrieties from one wine region, with certin minimum sucrose content nd, conversely cpped mximum vineyrd yield. Typiclly, this kind of wine mkes for esy drinking. Next up from the qulity wines come qulity wines with specil ttributes. Kbinetní vín (Kbinett) re typiclly light, usully dry, refreshing wines, more often white or rosé thn red. Pozdní sběr (Spätlese, Vendge trdive, Lte hrvest) is one of the essentil ctegories, giving wine more full-flvoured nd concentrted. More often dry or medium dry, occsionlly sweeter, with less lcohol. Lte hrvest white wines cn be idelly blnced, nd we need not lwys look to their higher rnks. Výběr z hroznů (Auslese) is selection of grpes even more ripe nd more concentrted, typiclly wine with higher lcohol content s well s higher residul sugr. 10 A view from Vyšehrd Výběry z bobulí (Beerenuslese) re selections of berries from grpes with high sugr content, very mture, nd usully rich, full-bodied, concentrted, typiclly semi-sweet to sweet wine. Slmov vín (Strw wines) re creted from grpes desiccted for severl months on strw or reed beds or suspended in wellventilted re, which leds to wter evporting from the grpes mking ll their other constituents very concentrted. You cn nticipte some very sweet, fncy, romtic wines. Výběr z cibéb (Trockenbeerenuslese), botrytic wine, is very sweet, concentrted nd rich. The effect here is chieved by collecting the grpes ffected by noble rot nd shrivelled into risins. Ledové víno (Eiswein); Ice wine is specility of northern wine producers nd we re proud to produce it in our country. The grpes re hrvested t tempertures of -7 C or lower nd pressed while still frozen; thnks to the frozen wter content the juice is very concentrted nd the wines sweet nd gorgeous. Not every yer is fvourble, nd the right conditions re becoming incresingly rre. Šumiv perliv vín; Sprkling nd semi-sprkling wines re becoming incresingly populr nd especilly those prepred by the clssicl fermenttion in the bottle method re worth trying. Víno originlní certifikce (VOC); Wine of Certified Origin is prllel system for wines clssified by the sweetness ( Bx) of the grpes. VOC wine should lwys come from vriety typicl of its re nd reflecting the chrcter of the region s much s possible. The listing rules of the individul VOC nd the clssifiction of the wines re set by the locl winemkers ssocition. It is definitely worth trying Veltlínské zelené or Ryzlink rýnský from VOC Znojmo or Ryzlink vlšský from VOC Plv. Svtomrtinské (St Mrtin) is comprble to the French Beujolis Nouveu, lwys ppering on 11 th November nd offering foretste of the ltest seson s white, red nd rosé wines. It is widely vilble in resturnts with the trditionl specilly prepred St Mrtin fest menu. These re fresh nd lighter wines for drinking quickly, best before the end of the yer. Burčk [boor-chlk] (known s Sturm in Austri, in Germny s Federweißer) is very populr drink of the vintge seson in the Czech Republic. 11 How to buy Czech wine If you decide to purchse some locl wines, we recommend tht you go to wine-shop, or specilized outlet. In wine-shop you will get help from knowledgeble stff, nd wht s more, you will hve the gurntee of qulity product. By contrst, in ordinry convenience stores nd supermrkets the selection of locl wines is usully confined to the lower qulity clss. There re exceptions, such s the products of Znovín Znojmo or the Hbnské cellrs. If you still just wnt to pick wine in the supermrket or n ordinry grocery store, we recommend few steps to help with your purchse: Check the importer, s mentioned on the bck lbel, s well s where the wine ws bottled. Even wines in the sections lbelled s Czech, from domestic wineries ccording to the front lbel, my be in fct be imports from Hungry, Itly, Moldov nd other countries. This is not to sy these re necessrily bd wines, but they re certinly not locl. In prctice, you cn find rnge of wines crrying unified lbel on the upper prt of the neck of the bottle Vín z Morvy, vín z Čech being from Morvi nd Bohemi respectively s mrque of origin. For now, this lbelling is purely voluntry nd is not used by ll Bohemin nd Morvin wineries. Wines from Morvi, wines from Bohemi logo Py ttention to the sugr content of the wine, i.e. whether the wine is dry or sweet. The wine vrieties most often served brod s dry wines (such s Chrdonny, Grüner Veltliner, Pinot Gris), cn be found in their Bohemin nd Morvin versions s medium dry or even semi-sweet. This lso pplies to rosé nd even some red wines. In wine-shop you might come cross Czech fvourite csk wine, clled sudové. This is wine drwn from 50 litre brrels, typiclly into bring-your-own continers or plstic bottles.
