1 Aldo s family is coming from a very poor origin; at the age of 14 years dismayed by a difficult life due from the fact that his father had a terrible accident he that left him invalid and therefore couldn t support his family economically, he decides to attend the State Hotel Institute nearby in order to seek a better job elsewhere outside Italy eventually. So he went, occasionally working part time himself in order to pay the expenses as a waiter where he was off studying the first year of his school, Aldo was already at one of the hotels of that time (1974) being one of the most famous of Italy, called Villa Cortine Palace Hotel ( residence of Soprano singer Maria Callas of Sirmione and in his second year at the age of 15 years he was already alone serving cocktails to the rich noble German tourists at 16 years of age Aldo see the time of Germany and went to Hamburg at the Hotel Kempinsky Atlantik (the one which was the set of James Bond film The Spy who loved me) At 17 teen Aldo graduated at his Hotel School and continued his experiences abroad between France and Spain On his return he was seen himself for one year at the famous and unique historic Hotel of the world and luxury 5 star Hotel in Verona as an assistant barman, called Hotel Due Torri Baglioni At that time he joined the Bartender association called Aibes and assumed the position of second Barman From 1979 to 1981 : as military he joined the Police academy He worked during these three years as part time Chef de Rang in the larger hotels in the Milan jet set, including the Principe di Savoia Hotel and The Excelsior Hotel Gallia, Commented [m1]: E c 1982 : as Chef de Rang at the Savini Galleria Vittorio Emanuele owned by a entrepreneurial restaurateur from Tuscany who taught him a lot, eventually he awarded Aldo as Restaurant manager in his major location near Via Monte Napoleone street, called Alfio Cavour Via Senato As director has served the finest jet set of the Lombard capital not least the late President of the Italian Republic, Mr Sandro Pertini Many other important jet set and famous personalities were the famous Russian pianist Vadimir Horowitz, world number one, and son in law of Toscanini Orchestra director
2 Other like Liza Minelli to the great Frank Sinatra and many other Italian artists While at Savini s and Alfio, outlets, Aldo joined a European bartender competition called The Marathone Drinks and went part time in different locations in Europe to compete with his cocktails In 1983 was awarded 1st Barman of Europe and RAI 1 the State television got a hint of this well acclaimed experience Restaurant director Alfo Cavour Milan Pricesss Criuses P&O For the next three years Aldo career saw him abroad again on the very famous Love Boat Her joined on the large cruise ship and worked as dining room captain from 1986 to 1988 Aldo sailing on this ship saw him around the world more than then 5 times, touching the Alaska, Australia, Japan, China and Canada USA Latin America From 1989 until 2000 Joined UK land with his new fiancée in remote rural Wales (U,.K.) and opened his first 100% true Italian restaurant and a deli Aldo s Restaurant featured here in 1996 After two years he decided to have an extra activity by adding a small Italian wine merchant portfolio and to serve local Eateries Besides these activities he dedicated himself to promote British national network by creating a link between Welsh and Italian artisan rural food life So by 1993 Aldo career in Wales made his famous locally, by least the Italian Trade commissions
3 awarded him in may occasions since of his hard work given to promote true authentic artisan products in 1996 the famous British newspaper The Independent on Sunday rewards his Italian Restaurant Seguendo di Stagioni one 20 best of Britain The Good Food Guide National guides a rewarded his restaurant Country restaurant of the year, while the Tatler, the magazine in vogue at the time rewarded Seguendo di Stagioni one of the three Italian restaurants with the most truthful wine list made in Italy Between the stove and the wines Aldo has travelled for 12 years throughout the British national territory and was fond of much to his second country of Wales He ha managed to learn a bit of the indigenous language too He had time to discover and fell in love to some sad tragic period too, being the II WW concentration camps in Wales, as he got deeply attached to the few Italian survivors, by then very old man and women. They were taken prisoner by the British forces during the battles in Africa and these men after the war decide to remain in Wales as they fell in love with local farmer s daughters Lecturing at Vinitaly in 2011 Due to the loss of a new born baby, Aldo closed his Restaurant and decided to stay employed in Wales alone while his wife was coping with the loss of her baby 1999 Opening a new Deli in Carmarthen Restaurant manager as he spent the last two as GM for two important Italian restaurants, one in Swansea, Valentino on Wind Street and one in Cardiff, Giovanni on ther Hayes, and with an exciting activity 2001 he decide to move back with his new second family to his native town of Verona 2001 Restaurant director La Terrazza, Lazise del Garda, Verona, summer season 2002, 2003 Marketing and wine consultant manager Istituto ENOLOGICO ITALIANO, importer, exporter of fine Italian and foreign wines baesd in Verona Today Aldo expertise is introduced back in Italy as a professional wine export manager for Italian wineries as well as Italian food consultant
4 2004 he opened his the oeno-cultural association Non Solo Vino and a little later Aldo started a new commercial enterprise Wine company selling wines abroad again, maturing high skills in terms of old world cuisine and wines as self employed wine consultant with Tenuta Sant Antonio, Veronese Amarone producer, as export director dealing with 20 different countries abroad as export director for Ca Maiol, producer of Lugana in Lake Garda dealing with Canada, USA, Brasil and UK March November 2016 Beviamo International, Houston TX as marketing manager, also self chef consultant in Italian Houston eateries In fact for the next 7 years Aldo will move his area of work away exploring the global wine business from Canada to Brasil, USA and the Far east markets from home again and finally in 2010 besides his Consultancy Network Non Solo Vino & Co, he opened a small wine boutique in San Bonifacio From 2012 to today he has committed socially besides his financial work as a human rights activist in favor to those who suffer and live in very poor conditions of both economic and social degradation. From 2013 to today Aldo s career in the food and wine business sees him back in US, developing strength and support in the Restaurant /catering quality business, helping traders to mature in the old world of fine cuisine and wines, creating events, wine dinner and training staff towards fine dining experiences
5 describing some Italian wines on RADIO Aldo has appeared in many TV and Radio spots talking about Italian fine dining and cuisine as well as wines, few times in Canadian Radio Stations during the BC Wine Festivals Aldo s career seems to be very intrigues and diverted by lots of happening, yet if you meet him he is a modest as he has ever been His philosophy is : true ideals in life are the bread and butter of our soul
