A traditionally made cheddar which is left to mature for 12 months. This results in an intensity and complexity of flavour which has made a multi award winning cheese. Milk from their own herd of Fresian cows is used to make this full fat rinded modern British hard cheese to a 17th Century recipe. A mild tasting cheese with lots of flavour and a nutty finish. It is a mould ripened Colommier type cheese that has a unique flavour with a beautifully creamy texture. SHARPHAM ELMHIRST (CUPV) CODE: 9168 SIZE: 250g UNIT: each PRICE: 4.67 Made on the Sharpham estate in Totnes Devon, this is the only soft cheese in the UK to be made using unpasteurised Jersey milk and then cream enriched. It is referred to as a triple cream mould ripened cheese. It has a light texture and a delicate flavour if eaten young. If left to mature it becomes richer and full-bodied. It is made using Ayrshire cow s milk and has been matured for at least 4 months to give a sweet and smooth, medium flavoured blue cheese. It is a semi-hard cheese, matured for 6-8 weeks giving a youthful cheese with a rich creamy texture. A thin natural rind forms during the maturation process. The result is a cheese with a creamy texture but with a lower fat content. Vinny comes from the old English word Vinex meaning mould. Dorset Red has an enticing amber coloured body and is encased in a rich red rind which gradually develops as it smokes over natural oak chippings at a local smokery. SMOKED WOOLSERY TRUCKLE (GPV) CODE: 9164 SIZE: 300g UNIT: each PRICE: 4.56 It is a firm goat s cheese which is handmade from pasteurised goat s milk and is gently smoked for 10 hours naturally with oak wood to give the cheese a naturally golden rind and genuinely delicious taste. Inside it has a firm yet moist texture which is smooth and creamy with a mild smoky flavour which does not overpower the taste of the cheese. WOOLSERY TRUCKLE (GPV) CODE: 9213 SIZE: 1kg UNIT: kg PRICE: This lovely fresh tasting goat s milk cheese is made by Annette Lee at Sydling St Nicholas near Dorchester. Woolsery is a lightly pressed cheese with a natural rind, it is moist open textured, with a distinctive goatee taste tinged with almonds and pine nuts. WOOKEY HOLE CAVE AGED CHEDDAR (CPV) CODE: 9203 SIZE: 2kg UNIT: kg PRICE: Ford Farm has revived the ancient practice of maturing cheese in caves creating a wonderful strong earthy cheddar in the process. Young cheeses are wrapped in cloth and taken deep into the nearby Wookey Hole caves, where the constant temperature and humidity provides the perfect maturing conditions. As it ages it takes on some of the flavour and atmosphere of the caves, which gives it that delicious moist earthiness. It is a semi-hard washed rind cheese which has a semi firm texture in the centre finishing with lemony undertones and sweet nuts.
