5 The flavour profile of many sparkling wines relies on how they are fermented. Methode traditionnelle, for example, undertakes a second fermentation after bottling. The rest of the yeast cells (Lees) lends the wine the classic, creamy rich, brioche and biscuit flavours. Pét-Nat on the other hand, completes its first fermentation in the bottle, resulting in bright, interesting flavours and the wines maybe slightly cloudy due to no filtration, fining or preservatives added.

7 If you re after that cold, crisp glass of white wine but want to try something different to your usual Sauvignon Blanc, then we may have just the thing! Albariño is a white grape varietal that is native to the Rías Baixas region of Spain. Its s dry, crisp and refreshingly citrussy with a subtle saltiness.

9 Monastero Suore Cistercensi Trappiste 90 minutes or so north of Rome, in Vitorchiano of the Lazio district there is a monastery where you will find the Sisters of the Cistercian order. They are cloistered nuns, meaning they never leave the covent or the monastery. It is here at this quiet religious outpost, eighty women of the religious order, work vineyards, gardens and orchards organically, producing two honest and gracious wines. Their vineyards plant four local grape varieties Malvasia, Verdicchio, Grechetto and Trebbiano. The Coenobium (Meaning monastery in Latin) is a stunning wine, aromatic and refreshing - expect flavours of zippy citrus, wild herbs, dry hay and ripe white orchard fruits, whilst harmonised by a beautiful mineral line donated from the volcanic soils beneath the vineyard. The grapes are left on skins for some time, giving the wine depth and texture.

11 Chardonnay is very much a wine makers grape and vintner techniques can have a big impact on the final style of the wine. Our Washington State chardonnay features aromas of ripe baked stonefruit, soft vanilla and a creamy, patisserie like baking spice note from oak ageing a deliciously rich chardonnay. Another style of Chardonnay would be one of our French examples the famed Mâcon-Villages, with textural stonefruits, light honeysuckle florals and a beautiful nutty aroma of hazlenut and almonds. A very elegant yet full wine that retains the beautiful minerality of which the region of Burgundy is famed.

13 Old vine is a term usually given to vines of 30 years age or more, but the definition does depend on the location. As the vines get older therefore gaining thicker trunks and deeper roots, nutrients become more available to vine. As they age, they become less vigorous and therefore produce less foliage, meaning a better balance of fruit and growth. The lower yield of fruit, usually means better quality and complexity of the grape. Our old vine chenin blanc by Raats is an exquisite wine, all the way from Stellenbosch, South Africa. Sourced from three vineyards; characterized by their complex soils, it expresses rich aromas of white peach, apples and quince with a hint of aromatic spices alongside an intense mineral edge.

15 Orange wine is an increasingly popular style of wine,with more and more people giving in to curiosity and becoming converts! It is, essentially, a white wine made in a similar process to a red, where the grapes are left in contact with skins, thus imparting the orange hue. The results are unique and can be quite varied, with slightly oxidative and rich savory qualities. We find our orange wines are best enjoyed with food.

17 The Grenache grape is typically known for its bright, juicy flavours of ripe red fruit, candied plums, warm spice and jam. It is often seen as a component in both many well known Spanish blends and in wines of the infamous Southern Rhone in France. Our Australian version, Like Raindrops by Jauma, is a blend of Grenache from different vineyard sites over the McLaren Vale and is a beautiful expression of the style. Look out for a velvet texture, fine tannins and pretty flavours of crushed berries, red fruit compote and exotic florals.

19 New Zealand arguably produces some of the finest Pinot Noir in the world, and each region showcases its own unique expression. Canterbury and the Waipara valley offer wines with rich dark berry flavours and spicy, earthy notes. Central Otago Pinot Noir often show sweet, softer red fruit characteristics, whilst Martinborough s offerings are usually more savoury and are focused around darker fruits and long fine tannins.

21 We love Syrah here at Egmont Street, and we appreciate each unique expression of it! Kicking off with the cooler climate of Martinborough, our Dry River Aramanth Syrah is very elegant, with brooding aromas of violet, black pepper and dark berries highlighted by a complex streak of minerality. Further north we have Hawkes Bay s very own De La Terre Syrah, based in Havelock North. Here we have a more plush, rounded character with richer fruit notes and toasted herb aromas. Across the ditch in Australia, our friends grow Syrah as Shiraz, with a much warmer climate donating larger flavours of jam, bright red berries and spices.

23 Barbaresco is an Italian wine made with the Nebbiolo grape, also notably used in the wonderful Barolo wines. Barbaresco is produced in the Piedmont area in northwest Italy and ours is sourced from fruit over the three villages, Barbaresco, Treiso and Neive. The typical style of a Barberesco has bouquets of rose and violets with flavours of cherry, truffle and smoke. An equisite representative of opulant, premium classic Italian red wine, and this reputed producer is top of its class.

25 Vino Visciole is a traditional Italian dessert wine, flavoured with cherries. The sour cherries are macerated in the wine with around 10% of the kernels, which imparts a delicious marzipan aroma, before undergoing a second fermentation to harmonise and balance the flavours.
