3 Cellar One - Barbera d Alba DOC Grape Varieties: The DOC classification of Barbera d Alba is reserved for red wines obtained from the Barbera varietal. Area of Origin: Produced exclusively in the Govone area of Piedmont. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Hot, dry summers and salty breezes off the Gulf of Genoa allow for an ideal maturation while the soils, being once submerged by the sea, are calcium rich, clayey, sandy and of sedimentary composition. Vinification: During September and October, grapes are harvested manually to preserve their integrity until pressing. Maceration lasts 8 to 10 days in stainless-steel vats before drawing off and bottling. Aging: After fermentation, the wine is stabilized in stainless-steel vats allowing all impurities still present to filter down before bottling. Characteristics: Ruby-red with purple highlights. Bouquet of fresh berry fruits. Dry delicate flavor with slight tannin overtones. Food & Wine Pairing: A perfect accompaniment to white and red meat based dishes, wild game and cheeses. Cellar One - Barbera d Alba DOC Superiore Grape Variety: Barbera d Alba is reserved for red wines obtained from the Barbera varietal. Area of Origin: Piedmont, produced exclusively in the Govone area. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Vinification: September and October, the grapes are harvested manually after reaching optimum maturation. Maceration is 12 to 15 days at controlled temperatures allowing the characteristic aromas to be released. Aging: After 2 weeks of fermentation the wine is drawn off, subsequently passes into 580gal. wooden barrels where it is aged to balance the body and strength of this wine and add a touch of spice. It is put on the market after a further 6 months of bottle-ageing. Characteristics: Ruby-red color with orange highlights, tending to garnet with aging. Bouquet of berry fruits with woody notes. Dry, delicate flavor with slight tannins and a touch of spice. Serving Suggestion: Open 1 hour before serving at a temperature of 64 F. Food & Wine Pairing: A perfect accompaniment to all meat dishes, wild game and aged cheeses. Alcohol Cont. 13.5%vol. Cellar One - Brachetto DOC Piemonte Type: Sparkling Red Wine. Grape Varieties: The Brachetto DOC Piemonte is reserved for those wines derived from and containing no less than 85% Brachetto grapes. The remaining 15% is drawn from other non aromatic grape varieties of similar color cultivated in the region of Piedmont. Area of Origin: Piedmont, exclusively in the Provinces of Asti, Alessandria and Cuneo. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Hot, dry summers and salty breezes off the Gulf of Genoa allow for an ideal maturation while the soils, being once submerged by the sea, are calcium rich, clayey, sandy and of sedimentary composition. Vinification: When the grapes are fully ripened, in late August and early September, they are harvested by hand and then crushed. After it is drawn off, the Charmat Method is used for the second fermentation, before being bottled ready for sale. Characteristics: Ruby-red tending to pink. Delicate musk bouquet with a mildly sweet and delicate flavor. Wine & Food Pairing: A fresh low-alcohol wine, Brachetto is ideal as an aperitif and dessert wine. A perfect accompaniment to fruit-based pastries, fresh fruit salad, dried fruits, nuts and figs. Serving Suggestions: Serve chilled at around 45 to 50 F. Alcohol Cont. 6.5%vol.

4 Cellar One - Moscato d Asti DOCG Type: Sparkling White Wine. Grape Varieties: The white Moscato grape varietal is used exclusively in the production of the Moscato d Asti originating in the Asti region. Area of Origin: Piedmont, in the area of Santo Stefano Belbo. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Hot, dry summers and salty breezes off the Gulf of Genoa allow for an ideal maturation while the soils, being once submerged by the sea, are calcium rich, clayey, sandy and of sedimentary composition. Vinification: When the grapes are fully ripened, in late August and early September, they are harvested by hand and then crushed. Alcohol Cont. 5.5%vol. Cellar One - Dolcetto d Alba DOC Grape Varieties: The DOC classification of Dolcetto d Alba is reserved for red wines obtained from the Dolcetto varietal. Area of Origin: The grapes are cultivated exclusively in the Alban and Neive areas of Piedmont. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Hot, dry summers and salty breezes off the Gulf of Genoa allow for an ideal maturation while the soils, being once submerged by the sea, are calcium rich, clayey, sandy and of sedimentary composition. Vinification: During September and October the grapes are harvested manually. After de-stemming and crushing, maceration continues over 7 days in stainless-steel vats. The wine is put on the market after a short period of bottle aging. Characteristics: Ruby-red color, fruity bouquet, dry with a slight pleasant bitterness, resulting in a perfectly balanced flavor. Food & Wine Pairing: An exceptional accompaniment to meat and vegetable entrées, salami, pasta and risotto, white meats and soft cheeses. Serving Suggestions: Serve at a temperature around 60 to 65 F to release its natural aromatic qualities. Cellar One - Gavi DOC Grape Varieties: The DOC classification Gavi is reserved for white wines obtained exclusively from vineyards which cultivate the Cortese di Gavi grape varietal. Area of Origin: The lower Piedmont region: Bosio, Capriata d Orba, Carrosio, Francavilla Bisio, Gavi, Novi Ligure, Parodi Ligure, Pasturana, San Cristoforo, Serravalle Scrivia and Tassarolo. Climate & Terrain: South-facing hills from 500 to 1000ft ASL. Hot, dry summers and salty breezes off the Gulf of Genoa allow for an ideal maturation while the soils, being once submerged by the sea, are calcium rich, clayey, sandy and of sedimentary composition. Vinification: In August and September, grapes are harvested by hand and brought to the cellar for crushing. The skins are then separated and the remaining must is cooled to allow fruit particles to settle. Fermentation is in stainless-steel vats at a temperature of 70 F. Aging: In stainless-steel vats for 4 to 5 months after which the wine is bottled ready for sale. Characteristics: Straw-yellow color, well defined yet delicate bouquet. Dry, pleasantly refreshing and well-balanced flavor. Wine & Food Pairing: A perfect accompaniment to surf and turf dishes, pasta, fish stews, fried vegetables and white meats. Exceptional with herbed goat s cheese. Serving Suggestion: Serve at a temperature of 45 to 55 F.

5 Cellar One - Barbaresco DOCG Grape Varieties: 100% Nebbiolo. Area of Origin: Piedmont. Climate & Terrain: The vines are grown in the Barbaresco areas of Neive at altitude levels of 650 to 980ft ASL. The soil is clayey, sandy and calcareous. Vinification: The vines are pruned using the Guyot method and fermentation is 15 days in stainlesssteel vats at controlled temperatures of 80 to 95 F. Aging: The wine is aged for 2 years in oak barrels then bottle aged for another year. Characteristics: Vibrant ruby-red color tending to garnet with orange reflections. A gentle floral and fruity bouquet with slight woody aromas. A well structured dry, full-bodied and wellbalanced flavor. Food & Wine Pairing: A perfect accompaniment to meals including beef, wild game and aged cheeses. Serving Suggestions: Open 1 to 2 hours before serving in balloon-shaped glasses at a temperature of 64.4 F. Alcohol Cont. 13.5%vol. Cellar One - Barolo DOCG Grape Varieties: 100% Nebbiolo. Area of Origin: Piedmont. Climate & Terrain: The vines are grown in the Barolo area at altitude levels of 950 to 1580ft ASL. The soil is clayey and calcareous. Vinification: The vines are pruned using the Guyot method and fermentation is 15 days in stainlesssteel vats at controlled temperatures of 80 to 87 F. Aging: The wine is aged for 3 years in oak barrels then bottle aged for another year. Characteristics: Vibrant red color tending to garnet with orange reflections. A floral, fruity bouquet with slight woody and tobacco aromas. A robust dry, full-bodied lingering flavor with a perfect balance of acidity and tannins. Food & Wine Pairing: A perfect accompaniment to hearty beef and lamb dishes, pasta and risotto with rich creamy sauces, wild game, poultry and aged cheeses. 6 Vicario - Soave Classico DOC Single Vineyard Grape Varieties: Garganega. Climate & Terrain: Rolling volcanic hills and valleys in the Monteforte d Alpone zone at an altitude of 330 to 490ft ASL. To obtain Vicario, the pergolas with the best exposure (south east) are chosen, and the grapes are vinified separately about mid-october depending on the ripeness of the grapes. Vinification: The grapes are gently crushed and the must is cold settled and fermented in stainless-steel vats at controlled temperatures of around 64 F. Some of the must is also fermented in barrels where it rests for about 6 months before the two are combined. Characteristics: Intense yellow color with greenish rays. A full and complex bouquet with violet and elderberry aromas and a slight hint of oak. Full-bodied and lively flavor with good length and a slight almond finish. Wine & Food Pairing: A perfect accompaniment to entrées of fish, shellfish, white meat and soft cheeses. Serving Suggestions: Serve in tulip-shaped goblets at a temperature of 54 F. Vigneto di Castellaro - Soave Superiore DOCG Classico Single Vineyard Grape Varieties: Garganega. Climate & Terrain: The vineyards are situated in the Soave Classico zone in the Veneto. It consists of gentle rolling hills ranging from 330 to 490ft ASL. and is covered with vine pergolas facing the Sun to the south east. The soil is of volcanic origin and is rich in minerals and drains well. Vinification: Depending on the ripeness, the grapes are vinified separately around mid-october and processed in a discontinued lung; a soft-press, state-of-the-art piece of equipment which allows the juice to stay in contact with the fresh skins for a short but significant amount of time. Aging: The must is placed in small barriques and in larger barrels of 400gal. for fermentation in oak where it rests for approximately 12 months. Characteristics: Intense yellow color with golden highlights. A full and complex bouquet with a slight hint of oak. Full-bodied and lively with good length and a slight almond finish. Wine & Food Pairing: A perfect accompaniment to entrées of fish, shellfish, white meat and soft cheeses. Serving Suggestions: Serve in tulip-shaped goblets at a temperature of 54 F. Terre di Monteforte - Soave DOC Grape Varieties: 100% Garganega. Climate & Terrain: The vines are grown in volcanic soils situated in the hilly areas of the Montecchia di Crosara and Roncà districts of Monteforte d Alpone, at altitudes of 330 to 490ft ASL. The climate is typical of the Mediterranean with cold, wet winters and hot summers. Vinification: The grapes are harvested in late September to early October and soft pressed using intermittent lung presses and static decanting. The must is fermented in stainless-steel vats at a controlled temperature of 60 F. Characteristics: Clear, bright straw-yellow color. Notable violet and almond bouquet. Vibrant and pleasing flavor with a characteristic almond finish. Wine & Food Pairing: Perfect as an aperitif and a great accompaniment to entrées, first courses and fish dishes. 7 Terre di Monteforte - Valpolicella Superiore DOC Grape Varieties: Corvina, Rondinella and Molinara. Climate & Terrain: Situated in the hills of the Illasi Valley and Cazzano di Tramigna. Vinification: The grapes are crushed around mid-october, de-stemmed and fermented on skins in small steel containers with continuous pressing followed by some oak ageing. Characteristics: Semi-intense ruby-red color. Distinctive, pleasing bouquet with hints of delicate cherry blossom and vanilla. Dry, full-bodied and well-balanced flavor. Wine & Food Pairing: A perfect accompaniment to rich entrées, roasts, braised and grilled red meat and aged cheeses. Serving Suggestions: Serve in typical Burgundy goblets at a temperature of 61 to 64 F. Terre di Monteforte - Valpolicella Ripasso DOC Grape Varieties: 85% Corvina and 15% Rondinella. Climate & Terrain: The vines are grown in basalt rich calcareous soil in the hilly areas of Val d Illasi and Cazzano di Tramigna at altitudes between 820 to 1800ft ASL. The climate is typically Mediterranean with cold, wet winters and hot summers. Vinification: The ancient Ripasso technique is used to make this wine; an initial fermentation in October followed by a second fermentation on Recioto skins in March, with ageing in wood. The fermentation temperatures are between 68 and 71 F. Characteristics: An intense ruby-red color. Characteristic and intense bouquet. A dry, harmonious, pleasant and subtle flavor with good body. Wine & Food Pairing: Perfect with rich sauces, roasts, braised and grilled meats and aged cheeses. Serving Suggestions: Open one hour before serving in balloon-shaped glasses at a temperature of 60 to 64 F. Alcohol Cont. 14%vol. Terre di Monteforte - Amarone della Valpolicella DOCG Grape Varieties: 70% Corvina, 15% Corvinone and 15% Rondinella. Climate & Terrain: The vines are grown in basalt rich calcareous soil in the hilly areas of Val d Illasi and Cazzano di Tramigna at altitudes between 820 to 1800ft ASL. The climate is typically Mediterranean with cold, wet winters and hot summers. Vinification: This is the most famous red wine of Verona. The best grapes are picked by hand at the beginning of October. Towards the end of January, after drying naturally in fruttai (fruit storage rooms), the grapes are crushed and left to ferment in steel tanks at controlled temperatures of 68 to 71 F. Aging: The wine is aged partly in Slavonia oak barrels and partly in barriques. The wine is bottle-aged for a further six months before being put on the market. Characteristics: Intense deep clear ruby-red color, tending to garnet. A complex bouquet with hints of red and blackcurrant, cocoa and spices. Rich, full-bodied and sophisticated flavor, soft, warm and appealing with excellent length. Wine & Food Pairing: An easy wine to drink on its own, also a perfect accompaniment to roasts, rich meat dishes, game and aged cheeses. 8 Terre di Monteforte Pinot Grigio IGT Type: Still white wine. Grape Varieties: 100% Pinot Grigio. Area of Origin: Upper Val d Alpone, Veneto. Climate & Terrain: Rolling volcanic hills and foothills of the Upper Val d Alpone. The climate is typical of the Mediterranean with cold, wet winters and hot summers. Vinification: The selected grapes are harvested when they are very ripe, gently pressed and fermented slowly in stainless-steel at a controlled temperature of 64 F. avoiding any skin contact. Characteristics: Straw-yellow color with golden highlights. Characteristic bouquet with slight mineral notes and ripe peach and pear. On the palate, full-bodied and rich, with good balance. Wine & Food Pairing: Refreshing as an aperitif and a perfect accompaniment to white meat, seafood and pasta with light fish sauces. Serving Suggestions: Serve at a temperature of 46 to 50 F. La Corte - Veneto Bianco IGT Grape Varieties: 70% Garganega, 30% Chardonnay. Climate & Terrain: The hilly areas of Monteforte d Alpone in the Veneto region. The vines grow in volcanic soils at an altitude of 492ft ASL. Vinification: The selected grapes are harvested late September and early October. After pressing and removal of the stalks, the grapes are fermented in steel vats at a controlled temperature of 60 F. The wine is then drawn off, refined in steel containers then bottled. Aging: Bottle-aged for a minimum of one month. Characteristics: Straw-yellow color, floral and fruity aromas reminiscent of cherry and sweet apple blossom, dry, fresh and lively flavor, persistent with a very nice finish. Wine & Food Pairing: Refreshing as an aperitif and is a perfect accompaniment to white meat and vegetable dishes, shellfish appetizers, fish, seafood dishes and young cheeses. Serving Suggestions: Serve at a temperature of 50 F. Alcohol Cont. 12%vol. La Corte - Veneto Rosso IGT Grape Varieties: 50% Merlot, 30% Corvina, 20% Corvinone. Climate & Terrain: In the hills of Montecchia di Crosara in the Veneto region. The vines are grown in volcanic soil at an altitude of 492ft ASL. Vinification: The selected grapes are harvested late September and early October. After pressing and removal of the stalks, the grapes are fermented in steel vats at a controlled temperature of 75 F. The wine is drawn off, refined in steel containers then bottled. Aging: Bottle-aged for a minimum of one month. Characteristics: Ruby-red color, aromas of forest fruits and cherries, smooth, full-bodied and wellbalanced flavor with savory notes and a pleasant finish. 9 Golden Boar - Toscana White IGT Grape Varieties: 80% Trebbiano, 20% Chardonnay. Area of Origin: Maremma, Tuscany. Climate & Terrain: Hilly areas extending from Scansano up towards Pitigliano, historically the area most suited to white wines. The vines are grown at an average altitude of 656ft ASL. in volcanic and sandy soil. Vinification: The grapes are hand-picked from mid-august to mid-september and are immediately protected from oxidation by CO2. The fermentation is for 2 weeks, and is carried out separately for each grape variety in 3963gal. stainless-steel tanks at a controlled temperature of 59 F. Aging: 3 months of fining on noble lees. The blend is produced in January and the wine is bottled by March, aged for 2 months and put on the market in May. Characteristics: Straw-yellow color with golden highlights. Bouquet of floral notes with hints of whitefleshed fruit (peach). Refreshing and well-balanced flavor, the right balance of acidity and good length. Wine & Food Pairing: An ideal accompaniment to white meat and fish and perfect as an aperitif. Serving Suggestions: Serve in wine glasses suited to young wines at a maximum temperature of 50 F. Golden Boar - Toscana Red IGT Grape Varieties: 90% Sangiovese, 5% Ciliegiolo, 5% Alicante Area of Origin: Maremma, Tuscany. Climate & Terrain: From the coast up to Scansano, historically the most suited hilly areas of the Maremma.The vines grow in naturally sandy and muddy soil at an average altitude of 5,905ft ASL. Vinification: The Ciliegiolo and Alicante grapes mature early and are harvested early September. Fermentation takes place, separately, in 3963gal. stainless-steel tanks at a controlled temperature of 81 F. Aging: The maceration is 1 week, followed by 2 months of fining on noble lees. The blend is produced in January and the wine is bottled by April, it is left to age for 2 months and then put on the market in June. Characteristics: Bright ruby color with purple highlights. Rich bouquet of red berries with a hint of violets. Full-bodied, well-rounded flavor, refreshing and inviting to drink with the perfect balance of tannin. Wine & Food Pairing: An ideal accompaniment to all dishes particularly meat, perfect with pasta preferably served with rich meat sauces. The vines grow in naturally sandy and muddy soil at an average altitude of 590ft ASL. Vinification: Late September the grapes are harvested and fermentation is carried out in 3963gal. stainless-steel vats at a controlled temperature of 81 F. 10 Golden Boar - Morellino di Scansano DOCG Riserva Grape Varieties: 90% Sangiovese, 10% Merlot. Area of Origin: Maremma, Tuscany. Climate & Terrain: The vines grow in the hilly areas of Scansano, one of the best DOCG producing areas of Tuscany, at an altitude of 722ft ASL, in naturally sandy and muddy soil with lime rich substrates. Vinification: The Sangiovese are harvested in early October, while the Merlot grapes are harvested at the beginning of September. Fermentation takes place separately in 3963gal. stainless-steel vats at a controlled temperature of 86 F. Aging: Maceration is 10 days, followed by 2 months of fining on noble lees. In January the 2 grape varieties are blended and then left to rest for 12 months in 66gal. French oak barrels. The wine is bottled and aged for a further 6 months and marketed in January of the following year. Characteristics: Deep ruby color tending to garnet with aging. Rich bouquet of berries with hints of spice, tobacco and chocolate. Generous full-bodied and elegant flavor, warm and caressing, soft tannins with a lingering finish. Wine & Food Pairing: An ideal accompaniment to red meat especially game, exceptional with cold meats and aged cheeses. Serving Suggestions: Serve in red wine glasses at a temperature of 64 F. Roggiano - Morellino di Scansano DOCG Grape Varieties: 100% Sangiovese. (mainly the Morellino clone) Area of Origin: Maremma, Tuscany. Climate & Terrain: From the coast up to Scansano, historically the most suited hilly areas of the Maremma. The vines grow in naturally sandy and muddy soil at an average altitude of 590ft ASL. Vinification: The ripening of the Sangiovese grapes is earlier than other areas in Tuscany. The best grapes are harvested in late September and fermentation is carried out in stainlesssteel vats at controlled temperatures. Refining is in bottles for a minimum of three months. Characteristics: Deep ruby-red color. Fruity scents follow one another and intertwine with floral tones of cherry, violet, fruits of the forest and plum together with spicy accents.
