We ve been through a lot together; the property beginnings in March of 2006, two plus years of renovations and the exciting opening of the winery park this year. And it s only the beginning. We re embarking on a whole new way of enjoying life with wine, food and adventure and you re the First to join us. 4 RENOVATION UPDATE Winter 2010 RENOVATION UPDATE A wet and wild Pool & Park Celebration The skies were gray and spirits were high on Friday, October 22nd when the longawaited Francis Ford Coppola Pool and Park literally opened its gates for business. Curious and excited visitors flocked onto the property in droves, sporting raincoats, umbrellas and open attitudes of appreciation as they viewed Francis Coppola s latest, greatest production. The swimming pools are the centerpiece of our new park that also features an outdoor Pool Cafe, private changing cabines, an outdoor performance pavilion, four bocce courts and a weather-permitting, children s lending library in a tee pee. All ages are welcome to come celebrate. The biggest draw for guests (despite the weather) were the two swimming pools located in the center of the park. Totaling 3,600 square feet and reaching a depth of 7 feet, the pools were a sight to see, connected by a swim-through water bridge to frolic in or swim beneath. The surrounding sun deck, equipped with small tables and chaise lounge chairs holding colorful, striped umbrellas, no doubt conjured up visions of hot sun, 90 degree heat and cool, refreshing beverages. Still, the first one in to test the waters on opening day was Wine Family member Adele Moody (see photo)! Adele Moody

5 A SEASON TO REMEMBER Harvest Update from Corey Beck, Francis Coppola Winery s Director of Winemaking AND THE GIANTS WIN THE WORLD SERIES!!!!!!! What a way to put an end to the 2010 harvest. Harvest time always brings the production team closer, but add the Giants playoff run into the mix and it made for a remarkable bond. There was nothing better walking through the cellar each morning after a Giant victory and seeing the cellar crew just glowing. Couple the smiles with freshly fermenting must and it s the recipe for a great harvest. Many times you ve heard from myself or our viticulturist, Lise that our growing season has been crazy, well this year we really mean it. Winter started off with above average rain fall and then proceeded into Spring the second coldest May on record in Sonoma County. May is a significant month because it s when berry set is taking place and any disturbance sends the vines into a frenzy. The cool spring led to a smaller crop size and put growers in a bad mood early in the season. As we moved into July the cooler weather continued and we were wondering if summer was ever going to happen. The cooler weather was in many ways comparable to summers in Bordeaux where the grapes aren t too stressed and are able to obtain more acid because of the cooler temperatures. We also noticed the berries weren t losing weight and where filling out because there was no dehydration, so this put the growers in a good mood. Now that summer was ending all we needed was heat and then everyone would be in a good mood. Typically we start picking Sauvignon Blanc the last week of August but this year we didn t start until September 10th. It was a funny feeling having Labor Day off, something that hasn t happened since we bought the winery in Now we re into the last week of September and praying for heat because we have Cabernet Sauvignon still at 19 Brix, which is a long way from home. Be careful what you wish for because on September 27th we hit 112F in Dry Creek, which was cooler than the record setting day of 113F in LA. For the next three weeks we averaged over 90F, just what we needed to get harvest moving. By the end of September we had crushed just over 1,000 tons and only 8,500 left to go, a daunting task. Typically we do 4500 tons in August/September and 5000 in October and it makes for a nice pace. Baseball has its Mr. October and this year it was all about the Giants and no one player, I would like to think the same about our Production team. Starting October 1st we crushed 275 tons everyday until October 31st! For those of you keeping score that s over 16,500 cases worth of wine everyday for a month. What made it really fun was that the quality was so darn good. The mild summer had really been a boon for us because we had happy healthy vines in late October with vibrant, luscious and intense fruit. Everything from Lodi Zinfandel to Alexander Valley Cabernet looks amazing in the tank and in many ways this vintage will be compared to the 1999 which was also a cooler growing season. We can t wait for our Wine Family members to get their hands on these! This was truly an October to remember, from Mother Nature blessing us with beautiful weather to the Giants bringing smiles to our faces. I would like to thank EVERYONE on the production staff for their commitment, dedication and hard work for making this another great vintage at the Francis Coppola Winery. 8 RECIPE wine/food CORNER Winter Taste Spring Flavor Neapolitan Struffoli alla Mama Coppola s Mother, Anna Pennino This is a little pastry that you absolutely must have on Christmas Day. It would look great if you put it on a big plate and placed it in the center of the table. It s deep fried and covered in honey. Italia Coppola (from Mama Coppola s Pasta Book.) Ingredients 3-4 cups all-purpose flour 3 egg yolks ¼ teaspoon baking powder 4 cups peanut or corn oil 4 cups honey 1 small bottle colored candy sprinkles 2-3 walnuts, chopped ½ cup glazed fruit Put flour in large bowl. Make a hole in the center of the four; add eggs yolks and baking powder. Mix together until no longer sticky. Add more flour if needed. Form dough into several large balls and set aside for 15 minutes. Then, break away small pieces from ball and shape into long ropes. Cut small marble-sized pieces, about ½ inch in length. Continue to make ropes and cut into marble-sized pieces until you have many. Set aside. Heat oil. Put two cups of marble-sized pieces of dough into the hot oil until light golden in color. Remove from oil with slotted spoon and place on absorbent paper towel. Continue frying dough pieces until all is used except for three ropes. Roll three ropes as you would for piecrust and cut into two-inch wide strips. Cut each strip in half. Put slit in middle of each strip and turn each end of dough into the strip. Fry in hot oil. It will look like a butterfly when fried. Remove with slotted spoon and place on absorbent paper. Melt honey in deep saucepan and cook for 3-5 minutes. Add 3 cups of fried dough pieces into hot honey. Mix pieces with honey for about one minute, and then remove with slotted spoon. Place on large platter and sprinkle with candy and diced fruit. Repeat process, layering dough pieces with sprinkled candy and fruit on platter. When done, do the same with butterfly dough, mixing with hot honey and sprinkling with candy and diced fruit. Place butterfly dough around pieces already on platter. Top with walnut pieces scattered over entire platter of Struffoli. Place platter in cool place so honey sets. Serves people.
