2 Meals That Mend Ronald McDonald House Charities Alberta Northern (RMHCNA) is a place of comfort and compassion for families with ill and injured children. We work to ease the financial and emotional burdens of the families, and keeping families close drives our programming. The Meals That Mend Program provides a comforting meal for RMHCNA families when they need it the most. Meal Planning A well-balanced and nutritious meal should contain elements from each food group: fruit and vegetables, grains, milk and alternatives, and meat and alternatives. A good way to balance your meal is to picture a plate. Half of any meal should consist of vegetables and/or fruit, one quarter of lean protein and one quarter of grain products. Though we cannot control the portion sizing in a buffet style setting, we can control the options that are set in front of our families. This is where meal planning becomes a great asset. Our Executive Chef & Manager of Food Services has created this package to help you along the way. In this package you will find a banquet-inspired guide complete with ideas for meal planning and food preparation We encourage you to be creative, plan accordingly and truly enjoy the experience and the difference you will make as a volunteer for Meals That Mend. 3 Meal Suggestions Brunch Time of Commitment: 4 hours Expected Arrival Time: 9:00a.m. Expected Departure: 1:00p.m. Food Service Time: 11:00a.m. 12:00p.m. You can expect 35 guests on weekdays and between 40 and 50 guests on weekends, plus your group of volunteers. Service lasts up to one hour, after which groups package, label and refrigerate left overs. We recommend a selection or combination from the items below: Fruit Bananas Mandarin Oranges Apples Apricots Tangerines Peaches Plums Fruit (requires processing) Watermelon Cantaloupe or Honey Dew Mellon Pineapple Grapes (Seedless) Strawberries Milk Products Assorted Yogurt (individual packages are best) Cheese Sticks Cottage Cheese Grains & Pastries Oatmeal Red River Cereal Muesli (nut free) Assorted Cereal (healthy and nut free) Granola Bars/Nutrigrain Bars (nut free) Croissants Bagels (Whole Grain, Everything, Blueberry, Cinnamon Raisin) Danishes (minis are welcome) Strudels (minis are welcome) Cinnamon Buns (minis are welcome) Assorted Loaves (Lemon, Poppy seed, Apple, Banana, Blueberry) Assorted Muffins (Bran, Carrot, Fruit) Crusty Loaves (great when accompanied by assorted cheese) Beverages Assorted Fruit Juices Milk Yogurt Drinks Tip Coffee and tea are always available at the House and sponsored by our partners at McDonald s. Extras Smoked Salmon Lox Assorted Cheese (Applewood Cheddar, Greyer, Swiss, Oka, Monterey Jack, Havarti) Tip Cheese and crusty bread makes a nice addition to breakfast. Nice additions include cured meats, crackers and a selection of soft cheeses, jams and jellies. Hot Brunch A hot breakfast buffet is any combination of continental breakfast products with the addition of cooked breakfast selections. This type of breakfast often includes fruit, a small selection of baked goods, preserves as well as two or three items from below. Eggs Scrambled Eggs Tip dress up your scrambled eggs with chopped green onion, tomatoes and cheese Oven Omelette Eggs Benedict Protein Bacon Sausage Baked Ham Smoked Salmon Lox Assorted Cheese (Applewood Cheddar, Greyer, Swiss, Oka, Monterey Jack, and Havarti) Other Hash browns/tater Tots Pancakes Tip Add chocolate chips or frozen berries to the raw side of the pancake and cook them right in. French Toast Tip Dress it up with cinnamon bread or fruit compote and whipping cream Tip Brunches generally include a selection of breakfast and lunch items, though they can be solely made up of breakfast items at a lunch hour. Hot brunch items paired with fresh fruit, pastries, fresh vegetables and a selection of salads are a great compromise to adding hot lunch items. 4 Lunch Time of Commitment: 4 hours Expected Arrival Time: 10:00a.m. Expected Departure: 2:00p.m. Food Service Time: 12:00p.m. 1:00p.m. Lunch is served buffet style and you can expect 35 to 45 guests plus your group of volunteers. Service lasts up to one hour, after which groups package, label and refrigerate left overs. The following sections include menu items for lunch: Build Your Own Sandwich This option is fantastic for time-pressed volunteers. You can use a selection of sliced meats, cheeses, pickles, sandwich toppings, bread choices and salads. It s healthy and the families have the option of making personalized meals. Fresh, natural product is always best as we then have the chance to limit filler and preservatives. Here are some examples of meats you could choose: Turkey Ham Roast Beef Soprasetta Chicken Capicola Prosciutto Pepperoni Corned Beef Pastrami Salami Salads Think fresh, think flavour and think colourful. Some of the best salads hold all of these elements and many are extremely healthy as well. Examples of creative and nutritious salads include: Tomato Bocconcini Salad Fresh Bocconcini and grape tomatoes often with slivered red onion and fresh sliced basil Popular dressings: any variation of balsamic vinaigrette is a welcome accompaniment to this capresse inspired salad. Asparagus Salad Blanched asparagus can be both healthy and delicious. Serve tossed with mandarin oranges, sweet mixed bell peppers (or roasted red peppers) and red onion. Popular dressings: sweet citrus buttermilk dressing Potato Salad Potatoes cooked al dente (to the bite) and tossed with your favorite vegetables and a flavorful dressing Popular vegetable ingredients includes: Fresh carrots, green onion and sweet mixed bell peppers Quinoa Salad Quinoa is versatile and can be accompanied by many nutritional and flavorful ingredients including garlic, lemon, red onion, craisins, grape tomatoes, sunflower seeds and even feta cheese. Popular dressings: Raspberry Vinaigrette, Garlic Lemon Vinaigrette, Poppy seed Dressing or Sweet Citrus Dressing. Pasta Salad Popular vegetable ingredients include: broccoli, cauliflower, carrots, red onion and sweet mixed bell peppers Popular dressings: ranch, sour cream or mayonnaise based creamy dressings. Oil based vinaigrette style or emulsified dressings are a healthier alternative and can be quite flavorful as well. Mixed Bean Salad A mixed bean salad is a cost effective and delicious way to add a healthy accompaniment to any meal. Popular dressings: any light oil and vinegar dressing, add a Mexican inspired twist with cilantro, lime juice, fresh garlic and a little spice or sweet red pepper vinaigrette. Mixed Vegetable Salad Popular ingredients include broccoli, cauliflower, carrots, cucumber, red onion, snap peas, sweet bell peppers and grape tomatoes. 5 Dinner Time of Commitment: 4.5 hours Expected Arrival Time: 2:30p.m. Expected Departure: 7:00p.m. Food Service Time: 5:30p.m.-6:30p.m. Dinner is served buffet style and you can expect 55 to 60 guests plus your group of volunteers. Service lasts up to one hour, after which groups package, label and refrigerate left overs, A good wholesome dinner often includes a selection of 1-2 salads, 1-2 entrées, a starch or grain accompaniment, and a vegetable option. Dessert is entirely at your discretion. We have a selection of sweets available at all times through our baking program, though ice cream novelties, freezies and popsicles are always popular. Beverages again are at your discretion. Assorted fruit juices, chocolate milk or yogurt drinks are always popular. Coffee and tea are always available at the House and sponsored by our partners at McDonald s. Entrée s/protein s Pasta Mac and Cheese - Homemade Tip Add a crumb topping, crispy pancetta or bacon to dress this dish up Pasta Marinara Tip This dish does not have to be boring, dress it up with crispy pan fried Italian sausage and roasted vegetables and fresh basil Lasagna Tip Standard lasagna is always delicious but think outside the box if like.
