Mx well wth spoon, stran nto a full quart bottle, cork and label. Always use a dark-colored bottle when mxng cocktals for a party. Ths s supposed to be a very dry cocktal. Place an attractve label on the bottle, and you wll have a bottle of cocktal that wll please your most exactng patron. PORTER SANGAREE. mxng glass. 2 spoonfuls of sugar dssolved n water. 3 or 4 lumps of ce. Fll the glass wth porter, str well, and grate nutmeg on top. BRANDY SCAFFA. Use pousse cafe glass. Take a lemon and cut off the ends, peel off the whole rnd, and place t nsde of a wne glass ; rub a slce of lemon around the edge of the glass, dp the glass n powdered sugar, fol- then take your mxng glass and mx as lows : 50 glass of chartreuse (green). Top off wth brandy, and serve. One of the pretty ones, wth a ranbow effect, whch, f properly prepared, s very attractve.

Use large hot water glass. \ spoonful of sugar. \ of a small baked apple. wne glass of apple jack. Fll the glass wth hot water, mx well wth a spoon, grate a lttle nutmeg on top, and serve wth small bar spoon. One of the best to break up a cold, f taken at ts ncepton. s BRANDY JULEP. mxng glass. 2 spoonfuls of sugar. \ wne glass of mneral water. Ths stmulant s an extremely exhlaratng one, and a great favorte wth the elte of the South, where t has been n vogue for many years. SHERRY WINE PUNCH. punch glass. or 2 dashes of raspberry syrup. J spoonful of sugar. 1-3 wne glass of seltzer water. 2 or 3 dashes of lemon juce. 1^ wne glass of sherry wne. Fll the glass wth fne ce, shake well wth shaker, dress the top wth frut n season, and serve wth straws. J spoonful of sugar dssolved n a lttle seltzer water. 2 or 3 dashes of maraschno. 2 or 3 dashes of lemon juce. Fll the glass wth fne ce. ^ wne glass of port wne. Spoon well, decorate wth frut n season, and serve wth straws. A drnk very popular wth the far sex who are very moderate drnkers, as t s sweet and very palatable. 55

Fll the glass wth mlk, shake well, stran nto a large bar glass, grate a lttle nutmeg on top, and serve wth straws. Unsurpassed as an nvgorator, not only for a short tme as many are, but t wll stand by you for a consderable perod. BRANDY SPLIT. medum thn bar glass. I pony glass of brandy. or 2 small lumps of ce. bottle of club soda. Fll up the glass, and dvde equally n two star champagne glasses. A good bracer to start a man to busness n the mornng, wth hs ppes cleaned, and courage under hs vest. 56

13 HOW TO MIX TOM AND JERRY. Take 18 strctly fresh eggs. Break the same nto two punch bowls, the whtes n one, and the yolks n the other. Then take an egg beater and beat the whtes of the eggs to a stff froth ; then add 2 spoonfuls of sugar and mx thoroughly. The yolks of the eggs are then to be beaten untl they are as thn as water, after whch mx the yolks and whtes together and add suffcent powdered sugar to have the mxture attan the consstency of a lght batter. Str the mxture from tme to tme to prevent the eggs from separatng. GIN RICKEY. sour glass. Squeeze the juce of one lme nto t. small lump of ce. wne glass of Plymouth gn. Fll the glass wth syphon seltzer, and serve wth small bar spoon. Ths drnk was devsed by the late Colonel Rckey of Kentucky, whose fame as a congenal frend and dspenser of hosptalty, as 57

14 well as a judge of appetzng edbles and lqud refreshments, s world-wde, and t s unversally conceded that for a drnk contanng an alcoholc ngredent t s the most coolng and refreshng beverage known. CLARET FLIP. mxng glass. 2 bar spoonfuls of sugar. fresh egg. ^ wne glass of claret. 2-3 glass full of shaved ce. Shake thoroughly, and stran nto a fancy bar glass, addng a lttle nutmeg on the top. BRUNSWICK. mxng glass. spoonful of powdered sugar. 1 fresh cold egg. Half fll the glass wth fne ce, fll up the balance wth mlk; sha'ke up well, stran nto a large bar glass, grate a lttle nutmeg on top, and serve wth straws. The above s a good substtute for a breakfast for persons whose appette has abandoned them and who are feversh and requre somethng strengthenng. 58

Str wth spoon, stran nto a cocktal glass, put n a cherry or olve, and serve. One that s a dear and lastng frend to the Bohemans, and probably called for more extensvely than any other mornng favorte. nto wne glass of Medford or New England RUSTY IKE. rckey glass. Squeeze the juce of one whole lme t. or 2 small lumps of ce. rum. Fll the glass wth gnger ale, and serve wth a small bar spoon. APPLE WHISKEY COCKTAIL. mxng glass. 2 dashes of gum syrup, dash of Angostura btters. 59

Ths drnk s much called for n the state of New Jersey, the home of apple jack. ^ DALY'S ROYAL FIZZ. mxng glass. fll the glass wth fne ce. 2 or 3 dashes of lemon juce. 2 or 3 da'shes of lme juce. I spoonful of powdered sugar. I pony of cream. wne glass of Tom gn. whole egg. Shake well n shaker and stran nto a fzz glass ; fll wth cold syphon seltzer, spoon well, and serve. Ths fzz was devsed by Mr. Daly a'fter exhaustve research and has been hghly commended by every one havng had the good fortune to mbbe one, and ts popularty s growng daly wherever t has been ntroduced. 6o

17 SODA COCKTAIL. mxng glass. 3 lumps of ce. 6 dashes of Angostura btters. or 2 slces of orange. Fll up the glass wth seltzer drawn from a syphon ; place a spoon on top of the glass flled wth pulverzed sugar, for the customer to put n hmself. In mxng be very careful not to let the foam run over the top of the glass. An early mornng concocton to allevate headache and settle the stomach. U. C. T. LEMONADE. mxng glass. large teaspoonful of sugar. 6 or 7 dashes of lemon juce. Fll up the glass wth ce, the balance wth water ; shake up well n a shaker, dash wth Jamaca rum, and serve wth straws. Ths drnk s called for by members of the Unted Commercal Travelers' Assocaton throughout the country, and, as t was named n honor of ther assocaton, they are extremely partal to t. 6

18 CHAMPAGNE COCKTAIL. Take a lump of sugar. champagne goblet. 3 da'shes of Angostura btters. small lump of ce. Fll the goblet wth wne, str wth a spoon, twst a pece of lemon on top, and serve. \ pnt of wne s sutable for one cocktal. Ths s the cream of all mornng cocktals, and under no crcumstances should anythng but the best of mported champagne be used, and the drnk should be cecold and consumed slowly. Use star EARLY BIRD. champagne glass. Fll f full of syphon seltzer. Add 3 dashes of absnthe. Float small quantty of brandy on top, and serve. TUXEDO COCKTAIL. mxng glass. Half fll wth fne ce. 2 dashes of orange btters. 2 dashes of maraschno. 62

Str wth spoon, grate a lttle nutmeg on top, and serve. IMPERIAL COCKTAIL. mxng glass. Half fll wth fne ce. or 2 dashes of aromatc btters. dash of maraschno. ^ wne gla'ss of French vermuth. ^ wne glass of Plymouth gn. Spoon well, stran nto a cocktal glass, put n an olve, and serve. The above s very popular wth Europeans of the better class, partcularly the French, who are extremely fond of cordals of all descrptons. 64

21 FORMULA FOR MAKING A SIM- PLE SYRUP, COMMONLY CALLED "GUM." Take two pounds of rock ca'ndy or 2- pounds of loaf sugar and place n one quart of water and allow to smmer over a slow fre untl thoroughly dssolved (care should be taken not to allow t to come to a bol, as the gum n that event s apt to spol) ; flter through a clean pece of cheese cloth, and your gum s ready for use. HOT MILK PUNCH. mxng glass. teaspoonful of sugar. wne glass of brandy (Hennessey). ^ wne glass of St. Crox rum. Fll the glass wth hot mlk, str well wth spoon whle fllng; grate a lttle nutmeg on top, a'nd serve. lttle RHINE WINE PUNCH. punch glass. large spoonful of sugar dssolved n a seltzer. 2 or 3 dashes of lemon juce. Fll up the glass wth fne shaved ce, the 65

A great favorte wth representatves of Germany n foregn countres who wsh to show ther afflaton for the Fatherland. PORT WINE COCKTAIL. mxng glass. Half fll wth fne ce. 2 dashes of aromatc btters. dash of benedctne. wne glass of port wne. Spoon well, stran nto a cocktal glass, twst a pece of ora'nge peel on top; and serve. Another weak one, but very benefcal, and wll not result n a headache. COFFEE COBBLER. Use extra large bar glass. 6 or 7 lumps of ce. spoonful of sugar. Mx together a pony of cream and a pony of brandy; pour nto the bar glass, then fll the glass wth black coffee, spoon well, and serve. 66

Use mxng glass. Pony glass of claret. Pony glass of Rhne wne. Add shaved ce a'nd shake well, add 4 dashes of creme de menthe ; pour nto thn bar glass and fll wth club soda. Ths s one of the mld, tart drnks most favorably consdered at the Hampshre Hotel, whch s almost exclusvely patronzed by young lades from the varous semnares of New Engla'nd. ABSINTHE COCKTAIL. "Amercan Style." mxng glass. Fll wth fne ce. 2 dashes of gum syrup. 1 dash of Angostura btters. 67

Use extra large bar glass. 6 or 7 lumps of cracked ce. spoonful of powdered sugar. Juce of one whole lemon. Fll the glass wth black tea, add a dash of Jamaca rum, spoon well, and serve. Ths makes a delghtful accompanment wth a lght noonday lunch, and should be served thoroughly cold. OYSTER COCKTAIL. medum wne glass. 3 dashes of catsup. 2 medum-szed oysters. Salt and pepper to season ; one dash of lme juce, and serve. 68
