1 Ohio ICES Cake Talk......From the Buckeye State! A Publication of the International Cake Exploration Societé - Ohio Chapter Summer 2010 Hello everyone!!! Just a quick note. I hope you are all having a lovely, sweet summer filled with sugar inspired events. From the Rep s Desk Ohio ICES Representative Fran Beekman I am sure everyone is excited about the upcoming convention in San Diego. I cannot attend this year and am really disappointed to miss all the fun and knowledge that attendees will have. I hope that those who do attend will return with lots of demo ideas to share with our chapter and tell us about all the new cake "toys" they find. In this issue of the newsletter, you ll have an opportunity to register for our Fall classes. Those who wish to mail in the enclosed form will have a few days head start, to allow for mail time. On-line class registration will begin on Thursday, July 15. On line Day of Sharing Registration will also open at the same time, for those who wish to pay for everything at the same time. If you prefer to wait for the mail-in Day of Sharing form, it will be in the Fall issue of the newsletter. While you re browsing through the newsletter, take a look at the Fall Centerpiece Challenge - Cupcakes!!! Cupcake ideas are still a hot topic and this is a great way to try out some designs without waiting for someone to ORDER it See details inside. Be sure to catch the great message that Chef Jing Palasique sent us after his visit in April. He seems to have enjoyed his time in Ohio with us and we were just as happy to have HIM as an instructor. You ll find his note inside, too. And, remember, as you shop those end-of-season sales, or as you go through your cake toys and discover those new items that you never had a use for, the Chinese Auction Basket Builders would love to give them a good home as raffle prizes. Every little item is appreciated. Have a wonderful rest of the summer and make plans now to join us in the Fall at the September 26 th Day of Sharing. See you then.. Our Spring Chocolate Frosted Challenge Cakes were donated to the Ronald McDonald House of Greater Cleveland, where we made lots of people smile. After all, we were told they never refuse cake. Do YOU have a favorite organization that could use a sweet gift of Cupcakes this Fall? If so, contact Rep Fran Beekman (see the Centerpiece Challenge information above, on the right). What could be better than to spread the joy of cake throughout the Buckeye state? All we ask is that you or your friends take the cupcakes to the destination that you suggest. Ideally, the place you suggest would be somewhere in your neck of the woods. There are several Ronald McDonald Houses around the state as well as other deserving groups that we may not even know. Contact Fran before the end of July with your idea so that we can post the result in the next newsletter. The Fall Centerpiece Challenge. Have Fun!!! Get Creative with Cupcakes!!! For our lunch table centerpieces, we d like to see what you can do with cupcakes. Any flavor, any theme. To participate in this challenge, here s all you need to do: Bake and decorate 1 dozen standard size cupcakes (no minis or Texas muffins, please you CAN use minis on top of a standard cupcake, as a structural element in your design). Bake your cupcakes in paper liners - your choice of color and style. You may use any flavor of cake and any type of icing or filling, however, YOUR CUPCAKES MUST BE NON- PERISHABLE AND MUST HOLD UP WITHOUT REFRIGERATION. Please tell us what the flavors and fillings are and write this information on your packaging. Please keep all decorations as edible as possible. All nonedible decorations should be obvious, such as sucker sticks. These cupcakes will be donated to a worthy location after the Day of Sharing and need to be safe for consumption by strangers. Please transport the cupcakes in a container with a lid. Open boxes or other containers are very difficult to transport in a fully loaded car after the Day of Sharing. Finally, call or OH Rep Fran Beekman (cakedeco@gmail.com or (216) ) to volunteer your cupcakes. We re looking for, at least, 10 Cupcake Artists for this challenge. 3 Meet Our Guest Instructors for September Kim Morrison, ICES CMSA (Hon)., the owner of Cakes for Occasions, Spring Mills, PA, for over 25 years was the Grand Prize Winner of the National Wedding Cake Competition in Oklahoma in both 2003 and 2004, and of the 2007 Mid-Atlantic Wedding Cake Competition. A sugar art instructor, judge and demonstrator, she is director of the Pennsylvania State Cake Show and on the board of PA ICES. Cake designer Barbara Green of Winchester, KY decorates almost as many aprons as she does cakes. I ve been painting aprons for many years. I like to wear them when I teach cake decorating classes.. She teaches at Eastern Kentucky University Community Education. She is the author of Sugar Molding and Figure Piping for Fun and Profit - Book and DVD - and is co-author with Geraldine Kidwell of the book Sugar Art. Gary Silverthorn, ICES CSA lives in Kimball, Michigan, and has been decorating cakes for over thirty years. Gary has won numerous cake competitions including Grand Prize Divisional at the Mid-Atlantic Cake Show in He also earned three gold medals at the Grand National Wedding Cake Co mpetitio n in T ulsa, including third runner-up 2006, and fifth runner-up honorable mention, He has been profiled on Food Network and was a winning competitor this past season on TLC'S "Ultimate Cake Off." 4 Ohio ICES Fall Classes - Saturday, September 25, 2010 Kim Morrison, ICES CMSA (Hon) 1:30-4:30 pm (3 hour class) Modern Extension and Bridgework One of the most beautiful and classic decorating techniques, made faster and easier, but still perfect for the most formal occasions. Also included are finishing techniques, and the method and recipe for making royal icing. Some materials and royal icing are provided. Included are creation of the center and petals, wiring, assembly, and coloring. The siding and shingles will be decorated with fondant and we will hand-mold a fondant Santa coming from the chimney. A very cute project incorporates many techniques including basic cake-sculpting and fondant molding. Includes use of tools, cake board and fondant. Barbara will show you time-tested methods for piping people and animals that bring an otherwise boring cake to life!!! 7 Fall 2010 Mini-Class Mail-in Registration continued from other side Refund Policy Requests for all refunds must be made in writing, and Postmarked (or received by , in the case of on-line registration) no later than Friday, September 10, 2010 Teachers make their travel plans and arrange for equipment and supplies, based on the number of student reservations. This is also our only way to know when a class has filled. Therefore, we reserve the right to deny any refund request that occurs after the above deadline. Each request will be individually reviewed. On-line registrations will be refunded on-line, through Paypal Refunds from Mail-in Registrations will be made after the event is over. Filled Classes and Waiting Lists Classes will be filled on a First Come basis. Registrations from ICES members, when received along with any other registrations, will be given first preference to fill remaining seats in a nearly-full class. When all seats are taken, remaining registrations will be put on a waiting list, in the order received, to be given a spot in the event of another student s cancellation. If a teacher cancels a class due to unforeseen reasons, those registrations will be refunded.
