1 Community Education: Culinary Classes The Community Education program at UA Pulaski Technical College provides individuals of all ages in central Arkansas opportunities for personal and professional development through short, non-credit classes. Our website is currently under construction. Please register for classes by contacting Kristin Howell by phone at ext or by at Participants must be18 years or older. Kids between the ages of may register, but must be accompanied by an adult also registered for the classes. July and August Schedule Tuesday, July 10 Cupcakes and Buttercream Flowers From start to finish bake and ice one dozen cupcakes with Pastry Chef Jeremiah Mesker! Gain knowledge and skill exploring different icing techniques. Learn useful time saving tips making cupcake batter. Leave the class prepared to make your next buttercream bouquet! 2 Thursday, July 12 Sugar Cookie Decorating Create your own personalized cookies! In this class, Chef Lea will take you through a step-by-step journey of how to make and decorate the perfect sugar cookie. During the class you will learn tricks for cookie baking, decorating, icing preparation, and marble designs. You will leave the class with a dozen cookies and copies of the recipes. 3 Thursday, July 19 Chocolate and Wine Pairing Bake, pair, taste, enjoy! Is chocolate and wine pairing an art or science? To discover the answer to this question and more, please join Chocolate Expert Carmen Portillo, owner of Cocoa Belle Chocolates, in this interactive course where you will make a scrumptious chocolate treat. Then, you will explore how to identify, evaluate, and make the most of the unique flavors, textures, and aromas of a variety of wines and chocolates. Most important, you will leave with the confidence you need to create satisfying and oftentimes surprising chocolate and wine matches for effortless enjoyment! Age: Must be 21 years or older. This hands-on class will cover every step of croissant making including mixing, shaping, proofing, and baking. You will bake beautiful plain, chocolate-filled, and savory ham and cheese croissants. After class, you will have produced a dozen croissants to take home, plus all the recipes used to take home and impress your friends and family. Thursday, July 26 Cinnamon Rolls Your friends and family won't forget waking up to the sweet smells of butter, cinnamon, and brown sugar permeating through the house from your fresh baked cinnamon rolls! Want to know how it is done? Join Chef Chocla Lea in the kitchen to find out! During class you will learn the basic techniques of creating a sweet dough which include mixing, kneading, rolling, handshaping your rolls, and properly proofing. You will also see a demonstration on how to make pecan sticky buns. Wait until you taste these warm treats straight out of the oven! Take home a half dozen big cinnamon rolls that you bake, recipes, and the knowledge to recreate these sweet treats at home.
