Snior Vic Prsidnt of Oprations Chris Alladin sits down to tll us th four stps to a prfct panini and what nw itms w can look forward to in April. Each dough is mad daily by a tam of artisan bakrs, thn lft to rst for a full 24 hours bfor baking. Thn th brad is bakd, coold and passd to th kitchn whr th chfs start to bring th paninis aliv. Th nxt stp is sprads. This oftn-ovrlookd layr is ssntial to th full panini xprinc, Chris assurs m. That s why th chfs handcraft ach sprad, from hummus to aioli to psto. Th sprads ar paird with spcific brads to complmnt th sugars and salts in th dough. And thr ar no clumps of sauc hr: ach sprad is smoothd out from dg to dg so you can tast it in vry bit, says Chris. For dinnr mayb that s authntic Italian prosciutto with smoky Applwood chddar or tuna with frsh clry, scallions, Worcstrshir sauc and sharp chddar. With 15 diffrnt flavours of paninis, thr ar a lot of fillings to b had. And whil all that maks for an xcllnt sandwich, th ral magic dosn t happn until th sandwich is grilld, says Chris, a full toothy grin rupting on his fac. In a larg mixing bowl, bat th granulatd sugar and margarin on slow spd for on minut. Turn th mixr up to th third spd and bat until light and fluffy. In a small mixing bowl, add th ggs and vanilla and mix togthr with a fork. With th mixr on low, slowly add th gg mixtur into th buttr mixtur until combind. In a mdium mixing bowl, add th pastry flour, brad flour, baking powdr, baking soda and salt. Stir togthr. With th mixr on low, add th dry ingrdints into th wt ingrdints until combind. Add th sour cram and dicd pinappls and stir togthr. 1¾ cup granulatd sugar ½ tsp salt 1 cup margarin 1¾ cup sour cram 3 ggs 2 cups 1 tsp vanilla xtract pinappl, dicd in quartr-inch pics 2 cups pastry flour 5 1 cup brad flour pinappl rings, cord and slicd half an inch thick 2 tsp baking powdr 1 cup brown sugar 1½ tsp baking soda C A L G A RY Gras a 10-inch springform pan.
