4 The history Originally, the young Maison aspired to reinvent traditional champagne making. The story of a young man named Charles hides behind Champagne Charles Clavem. He was from a small village called Les Riceys and was deeply in love with the champagne culture. The birth of the champagne brand was inspired by this leather craftsman. Throughout his career, Charles profession had him travel around the world and meet other renowned artisans, such as jewellers. And as he met more and more craftsmen, he built the desire to bring his passions, his skills and the expertise of several other professional individuals around a single product he loves so much: the champagne. This project remained a dream for Charles, as he never carried it out. Always passionate about the story of his life, the Champagne Charles Clavem founding team decided to pay a faithful tribute to the vision of Charles through this unique cuvée. Imagine, create and dazzle: this is their leitmotiv. Manufactured in France, with noble materials, the outstanding bottles and cases are the figment of this singular imagination! The people Ambition and rigour were the keys to materializing these prestigious objects. Over a dozen craftsmen worked for 2 years to reach this culmination point; from the research and development phase to the finalisation of the last details, often personalized. Champagne Charles Clavem was born from hundreds of hours of work. Talented designers, crafts virtuosos, responsible winemakers, have all joined their savoir-faire to the founders skills to make fantasy a reality. The incredible quality of the cuvée results from a partnership with an innovative, talented and committed winemaker, based in the heart of the Côte des Bar. He uses organic and biodynamic practices to reorient the winemaking to being more terroir-focused. This alliance could only be possible after a rigorous selection among a dozen Champagne houses. The choice was guided by the sense of respect and constant listening of this brilliant winemaker, in each step of the development of this exclusive cuvée. From respect for soil, wildlife, human beings, grapes, time... He is also very attentive to external phenomena, mechanisms, forces, employees and connoisseurs. The same thoroughness led to the selection of the twelve craftsmen contributing to the realization of the Charles Clavem bottles and cases. These exceptional craftsmen, some of which were designated Meilleurs Ouvriers de France, are all searching for the perfect gesture to create these jewels.

5 The values Legacy of time Time is a fundamental factor to reach excellence. The Charles Clavem cuvée is absolutely representative of the mastery and heritage of time. Laying in the cellars for over 10 years, it is composed exclusively of a blend of reserve wines patiently aged in oak barrels. Inspired by the Solera ageing method, this wine is also called «Réserve Perpétuelle». It is the exceptional combination of the seven Champagne grape varieties, four of which have almost disappeared. This unique wine develops timeless aromas of a great complexity. Enjoy the ultimate privilege to taste the aromas of time. Our cuvée The elaboration Blending In the Charles Clavem cuvée, all seven varieties of authorized grapes in Champagne are blended (proportions of about 1/7), 4 of which are in danger of extinction,

6 Our cuvée The elaboration Blending In the Charles Clavem cuvée, all seven varieties of authorized grapes in Champagne are blended (proportions of about 1/7), 4 of which are in danger of extinction, and represent less than 0.3% of Champagne vines: Pinot Noir, Meunier, Chardonnay, Pinot Gris, Pinot Blanc, Arbanne and Petit Meslier. Vinification Each grape variety is harvested and pressed separately. The wines are then assembled and aged together, in selected 228L barrels. This ancestral ageing process encourages the micro-oxygenation of the wine which will allow it to round up and develop more complex aromas and slightly toasted notes. After one year, the blend is added to the Solera, in 30 hl oak tanks. Solera method «The old wine educates the young, the young wine invigorates the old one». This is the principle of the Solera which consists in assembling older wines with younger ones in order to have a perfect balance between vinosity of older wines and freshness of the youngest. This Solera started in 2007 is made up of 100% reserve wines. Each year, the 7 varietal blend aged in barrels is added to the Solera. Bold approach when this technique of wine ageing is still not used much in Champagne. Dosage The dosage is very low to obtain an «Extra Brut» cuvée: 4 grams per liter. The liqueur is made up of Solera reserve wines, blended with an organic grape must concentrate.

7 The sensations Eyes A golden and shining colour with a thousand reflections that suggests great complexity and the uniqueness and gourmet character of this wine. Nose A delicate and rich nose on the candied fruit, honey and toasted notes. These are just a foretaste of the whole dimension of this exceptional Champagne. Palate In the mouth, the fineness of the bubbles is very seductive. They harmoniously blend with the roundness of the wine and give this Champagne a real depth. The candied apple and pear, almond, walnut, brioche notes, opening on light notes of wood and spices will sublimate the greatest dishes. The finish gives way to iodized mineral notes and a very pleasant freshness that invites you to enjoy once again the delight of the fineness of this great wine. This finish confers an incredible length, making you enjoy its richness during long minutes. Charles Clavem is a lively wine, evolving minute by minute, which will give you a new sensation each time you taste it. Food pairing advices Champagne Charles Clavem will sublimate your crustaceans and finest dishes. The House offers two different techniques to dress the bottles in gold or palladium: The «Nebula» collection is distinguished by an harmonious plain coat matching the shapes of the bottle. Affixed one by one with precision, each gold leaf is brought together for a touch of elegance. The «Impetus» collection offers a work of gold of another scale giving texture to the bottle.
