1 WINE LIST Note to our guests On the 1st of April 2010, the Indonesian Government replaced the luxury tax on imported alcoholic beverages with an excise tax. The old luxury import tax cost consumers between 40% and 150% of the declared value of the alcohol beverage. The new increased excise tax varies between 140% and 600% depending on the type and cost of the beverage of choice. Unfortunately and understandably this new tax leaves everyone frustrated and in some cases very upset. This new tax does not just affect imported alcoholic beverage; it has also been applied to all locally produced alcohol-wines, beers, etc. This increase in tax is being seriously protested by alcoholic beverage producers, hotels, restaurants, and the national tourism sector. We are hoping that the voices of reason will eventually prevail and that this situation will be rectified in the foreseeable future. We at Munduk Moding Plantation Nature Resort and Spa try to manage this situation as best as we can and apologize for the s that must be charged in order to pay the exorbitant excise tax. We hope this will not leave you with a bad impression of Bali. Thank you for your understanding. 1

3 Two Islands Cabernet Australia/Bali 2016 Cabernet/Merlot 300 Australia 2014 Shiraz 350 Cab/Australia 2014 Shiraz-Cabernet 350 Italy (Toscana) 2015 Sangiovese 390 A full bodies red, vinified in Bali on French oak from Australian grapes; a wonderful complement to strongly flavoured Balinese and Indonesian meat dishes as well as red meats and hard cheeses JJ McWilliam s Shiraz Medium bodied, plum and cherry fruit with spicy vanilla, fresh and balanced; best paired with grilled meats and vegetable dishes JJ McWilliam s Shiraz Soft and medium bodied, flavours of red cherries and forest berries with fine tannins; matches very well with meat dishes and medium spicy Balinese and Indonesian meat dishes Costello di Gabbiano Chianti DOCG Full body, round and silky tannins, depth of red fruit, tones of wood. 4 Fleurie Georges Duboeuf France (Burgundy) 2014 Gamay 430 France 2015 Grenache/Syrah 450 France 2013 Grenache/Syrah/ 670 Mourvèdre/Cinsault Classic light bodied Fleurie with fresh cherry fruits and a fragrant, floral perfume with a black currant thread on the finish, awarded 89 points by Robert Parker. A great accompaniment of grilled fish, grilled chicken dishes Cotes du Rhône Village Laveau Medium bodied and well balanced dry wine, flavours of dark plum and cherries with spicy and earthy notes. Best paired with spiced and grilled steaks; combines well with our signature Balinese and Indonesian classics Châteauneuf du Pape Tradition du Chateau Maucoil An impressive classic of great depth with lively anise, tones of tobacco and anise around a core of plum and blackberry fruit. Combines well with spicy foods and grilled meats 4

5 Sababay Reserve Chilli France (Bordeaux/ Margaux) Brilliant deep Cardinal red tones with a rich bouquet of ripe, cherries, raisins, dark chocolate, with hints of pimento and clove. A full bodied, and freshly palate with lingering flavours of berries and cedary oak. A well structured red style that will compliment saucy dark meat as well as tomato based vegetarian dishes. Château Prieuré-Lichine A velvety Grand Cru classé of one of the great Houses of Margaux which after 15 years is now perfect for drinking. Berries, forest fruit give this remarkably soft Bordeaux a warm mouth feel and supple lingering taste, Combines well with steaks and vegetable dishes as well as with after dinner cheese. 6 Château Lynch-Bages France (Bordeaux/ Pauillac) 2001 A powerful Grand Cru classé; a perfect example of an outstanding Pauillac with flavours of plum, blackcurrant, combining with leafy, vegetal, chocolate, leather and cedar notes. Soft, juicy tannins, elegant, and luscious. Pairs well with light and medium spicy meat dishes as well as with the grilled vegetables in many of our vegetarian and vegan dishes. Awarded 90 points by Robert Parker

7 White and Rose s Aga Hatten White Bali n/a Belgia 240 Bali n/a Alphonse/ Lavallee 240 South Africa 2014 Chardonay 255 Dry and fruity easy-to-drink local table-wine with lemon-lime citrus flavours. Awarded at the Asia Evie s and the Ciswa Challenge in Hong Kong. Pairs well with fish, seafood, white meats and spicy food Aga Hatten Rose This wine is Indonasian s first Table wine, displaying tropical Fruit aromas and flowery overtones. It leaves a clean and refreshing After taste on the palate. Awarded at the Asia Review And the Ciswa Challenge In Hongkong. Pairs well with Balinese dishes and grilled seafood. Cape Discovery Delicate pale straw hues of colour, with aromas of stonefruits, citrus and new oak followed by a well rounded finish on the palate. Partial malolactic fermentation and oak maturation have given this wine added complexity and roundness 7

8 Two Island Chardonnay Australia/Bali 2014 Chardonnay 300 Australia/Bali 2014 Pinot Grigio 300 Australia/Bali 2014 Riesling 300 Medium bodied classic Chardonnay which drinks very easily. Excellent accompaniment to seafood, poultry or lightly spiced Asian dishes Two Island Pinot Grigio A medium bodied, dry and fruity wine made Bali from Australian grapes with aromas of spices, caramel, peach, strawberries and cream. Pairs very well with seafood, pork dishes, salads Two Island Riesling A medium bodies dry wine made in Bali from Australian grapes. This aromatic wine offers primary fruit aromas of orchard fruits like nectarine, apricot, honey-crisp apple, and pear. Ideal pairing with seafood, light hors d œuvres and cheeses 8

9 JJ McWilliam s Chardonnay Australia 2015 Chardonnay 350 Australia 2015 Pinot Grigio 350 Fresh fruit flavours of nectarine and peach are balanced against a pleasant creamy texture. Subtle oak and clean, crisp acidity provide length and structure. Great combination with white meat and lightly spiced Asian dishes; JJ McWilliam s Pinot Grigio Dry, Fresh, crisp,juicy,slightly sweet palate with grapefruit, green apple, pear and butter flavours. Best pairing with seafood and light entrees 9

10 Champagnes/Sparkling wines Tunjung Sparkling wine Bali /na Probolinggo Biru 340 Alphonse/Lavallee 340 This brut sparkling made in the traditional méthode champenoise, has aromas of citrus peel and flowers, with a lingering scent of light creamy yeast. The aromas and flavours are further enhanced by keeping the wine on its lees for one year. A great stand alone aperitif, but pairs well with most light dishes,especially seafood. Awarded with a gold medal at the 2017 Asian ine Review in Hong Kong. Jepun Sparkling wine Bali /na Jepun Sparkling Rosé is made in the same traditional méthode champenoise style as Tunjung. It is blushed by the gentle pressing of the locally grown Alphonse-Lavallée grapes. Enhanced by lively mousse this Rosé Sparkling wine is slightly sweet and displays hints of youthful aromas and tropical fruit. Jepun is highly suitable as an accompaniment to appetizers and deserts but it is also a perfect wine to have on its own. Awarded with a gold medal at the 2017 Asian Review in Hong Kong. 10

11 Fantinel Prosecco Italy 2015 Glera France 2014 Chardonnay 360 An extra dry Prosecco which offers a great balance between Prosecco s fruit, tingly acidity, and subtle sweetness. A lovely aperitif that can be combined with medium-intensity foods on our menu (e.g. chicken, tofu, shrimp, or pork dishes) but, because of its sweet aromatics and bubbles, also matches well with spicy curries and Balinese and Indonesian dishes Champagne Fernand Lemaire Brut Fresh aromas with citrus, green apple and white flowers. Pronounced biscuit, toast and brioche add a touch of complexity. Elegant and lively with flavours of apple, lemon and yeasty notes of bread and brioche. Rounded, smooth and delicate wine, lingering on in the mouth. Excellent as aperitif, but also pairs well with salades and grilled seafood
