2 History Kim Baker discovered the CoralTree orchard in the Horowhenua in 1989 and, with great conviction and foresight, converted it to a sustainable, certified-organic, heritage-apple orchard. With quality fruit, and an understanding of the extensive health benefits of apple cider vinegar, Kim began creating his own brew using an ageold and entirely natural fermentation process. The result is an apple cider vinegar that is second to none. The heritage apples are also harvested juiced and bottled directly pure and simple fruit juice.

4 Process Organic apples flourish in the fertile Horowhenua region of our orchard and are harvested and juiced only when truly sun-ripened. Fermentation of the apple juice occurs in our workroom near the banks of sunny Otaki s river. Naturally occurring yeasts convert the full fruit sugars of the apple juice to apple cider. Further natural processes then convert the apple cider into apple cider vinegar. Our apple cider vinegar and pure fruit juice is bottled in clear, stable glass vessels through which the natural sediment is visible.

5 Philosophy We are simply bottling what the cycle of life already produces: fermentation of the apple juice to cider, then vinegar, is an entirely natural process. We value the vinegar cycle as one of the many natural cycles that are paramount to all life. We also value self-sustaining systems. We practice organic horticulture within the orchard; our heritage-apple orchard is naturally more resilient; and we promote our Apple Cider Vinegar as beneficial for constitutional wellbeing. Our overall wellbeing depends upon our internal, balanced, wellbeing.
