The vineyard is established on terraces at an altitude of about 310 meters and slate (llicorella) soils.

The goal was to develop low-production wines from its own vineyards. The company owns 20 hectares of vineyard located in Gratallops. The vineyard is established on terraces at an altitude of about 310 meters and slate (llicorella) soils. Several varieties of grapes were planted in 2004: Grenache, Carignane, Cabernet Sauvignon and Syrah for red varieties and White Grenache and Viognier for white varieties. The vineyard also has very old vines of Grenache and Carignane. The philosophy is to keep production rather small to maintain the style and unique character of the local varieties used in the blend. In 2000, he began purchasing parcels in the uninhabited hamlet of A Míllara overlooking the Miño, eventually acquiring the entire township and its surrounding slopes from hundreds of proprietary descendants. Reclaiming and restructuring the vineyard terraces A Míllara itself following strict guidelines to maintain original architecture incorporated the modern winemaking and aging facility. QUINOLA GARAGE WINE D.O. Toro Quinola After some experiences in Bordeaux and Australia, Jaime Suarez decides to export to Toro the total vinification in cask.

15 QUINOLA GARAGE WINE D.O. Toro Quinola After some experiences in Bordeaux and Australia, Jaime Suarez decides to export to Toro the total vinification in cask. His father, Chano, always linked to great wine projects (such as Mauro and Leda), supports him. Ruth de Andrés, who has studied in Bordeaux with Jaime, enthusiastic with the idea, joined the team of Quinola. Tinta de Toro is the chosen grape variety; its great structure is perfectly adapted to this method of selective extraction. All vineyards were carefully selected from the highest (800 m) and coldest area of the region: 7 has. distributed in 5 crops. Five years of severe pruning to recover the old plants give the first harvest of Quinola the sixth year. Now, the old vines are adapted to a maximum quality viticulture with yields of 1000kg/ha. In the winery, grape is selected and introduced into the barrel through the hole. Alcoholic fermentation is carried out there. Barrels are laid on a durmientes; we spin them in order to perform our particular pump-overs. For devatting, liquid is evacuated by gravity; then, we dismantle the barrel and skins are pressed on a vertical press. Malolactic fermentation continues in the barrels and, after, the ageing on the lees. Complet process takes about 19 o 20 months. Quinola obtained 94 points in The Wine Advocate, 2010.
