2 Orin Swift Papillon Imperial Rioja Gran Reserva 2001 The wine casts a dark shade of crimson with a tinge of magenta on the rim of the glass. Classic aromas of currant, cassis, and plum are instantly present along with soft French oak notes and some cedar box accents. Rich and opulent, flavors of Bing cherry, ripe blackberry, mocha, espresso, and black licorice welcome the palate. The density and concentration is succeeded with round and silky tannins providing an incredibly long finish. (60% Cabernet Sauvignon, 37% Merlot, 2% Petit Verdot, 1% Malbec) The 2001 arrived in the US earlier in July and sold out within a week. It already has more than a decade of age on the wine, and with just 50 cases imported it will be the target for many top restaurants in the country. The finish is crisp and slightly tannic with touches of Danish pastries and almond. $850 Style Vintner Tasting Notes Bottle Chardonnay Yalumba (Un- Oaked) Kendal Jackson Pale straw green in color, the 2011 Yalumba Y Series Unwooded Chardonnay offers enticing aromas of white peach, grapefruit and nougat a complex interplay showing balance between ripe fruit and complexity. The palate is distinctly medium bodied with layers of white peach and nougat flavors, racy acidity and a persistent finish. Beautifully integrated tropical flavors such as pineapple, mango, and papaya with citrus notes that explode in your mouth. These flavors delicately intertwine with aromas of vanilla and honey to create depth and balance throughout. A hint of toasted oak and butter rounds out the long, lingering finish. $34 $37

On the palate, the wine is balanced, opening with bright acidity and refreshing Meyer lemon citrus flavors, followed by a juicy mid-palate, and a long finish. $26 $42 Riesling Urban Not an estate wine, but it gathers some of the trademark flavors of the Mosel (apple/peach notes, chalky minerals, limey tang) in a tasty package. This lush, medium-bodied riesling has a spritzy tartness. There are hints of ripe pineapple, but it's just a tiny bit off dry, and the lingering fruit flavors. $34 Franciscan Pale straw, with aromas of lime, grapefruit peel, and lychee, and notes of honeysuckle and lemongrass. Very aromatic and inviting. Bright, round flavors bursting with fresh fruit, juicy lime, lychee, and Meyer lemon. Clean mouthfeel with refreshing minerality and a long finish of lime zest, vanilla, and grapefruit. Fresh, crisp and highly aromatic, the warmer climate Alexander Valley fruit gives this wine ripe peach and pineapple character, while the ocean cooled Russian River Valley fruit offers zesty citrus notes of lemon and slightly herbaceous qualities. The palate is rich with tannins and stoney minerals and ripe berry notes that are rounded off by plum and ripe black cherry. The finish has hints of black pepper, red currant and dried violet. $40 Cabernet Sauvignon Primus A deep, dark opaque red. Aromas of ripe black berry fruit with a subtle hint of toasty oak. Flavors of red and black berry fruit flavors with hints of dried plums, fresh acidity and a long finish with fine, elegant tannins. $52 Bennett Lane The wine is inky, deep dark ruby red in color, with aromas of cocoa, black cherry, deep dark roses and ripe purple plums. 6 Malbec The Show The Show Malbec is a delicious wine with flavors of blackberry, cranberry, white pepper and spice, with toasty vanilla and violets. The wine has smooth tannins, a velvety texture and a long, lingering finish. $34 Merlot Irony This medium-bodied wine has aromas of cherry, currant and plum with hints of vanilla and cedar. Flavors of blackberry, licorice and sweet oak compliment this wine's bright acidity and structure. $36 Pinot Noir Bogle The nose is floral with notes of violets and strawberries and aa touch of green tea. The palate is vibrant with layers of cherry fruit, yet balanced by comforting leather and pipe tobacco. The palate is velvety and rich with dark fruit notes underlined with a sweet oak character, mocha and cola. A rich and supple wine with a succulent finish. $52 Big Red Monster In the nose, Big Red Monster exhibits aromas of ripe plum, cherries and raspberries with a hint of rhubarb. In the mouth these aromas carry over in the flavors with added nuances of chocolate and spice. Fruit forward, but finishes dry and lightly spicy. $40 Other Reds & Red Blends Haymen & Hill Meritage Aromas of smoked meats, tobacco and cigar box spice. Very smooth with inviting red fruits, creamy vanilla and spice. The finish is juicy and full of plush tannins. Leather and black cherries linger throughout. A great value for such a quality meritage. $40 The Prisoner The wine has a deep ruby red hue that is framed in rich crimson. Aromas of black cherry and plum, surrounded by roasted coffee beans and vanilla oak accents. The entry is powerful and lush with flavors of bing cherry, blueberry and cocoa. Soft and velvety tannins round out the finish making this wine approachable and inviting. $90

7 Saint Hilaire Brut Saint-Hilaire Brut displays aromatic flavours of peach, pear and green apple skins with a wonderful, full, creamy mouthfeel. Think non vintage Champagne for a fraction of the cost! $40 Champagne & Sparkling Wines Haton Veuve Clicquot Brut Haton s Réserve is 30% Chardonnay, 35% Pinot Noir and 35% Pinot Meunier. Some older reserves are added giving the wine a gold color with tiny bubbles; notes of toast, almond and honey carrying through a long, rich finish. This is close to vintage brut at a bargain price. One of the most familiar of Champagnes, the Yellow Label is finely made a fruity while structured wine. It has both fresh and fragrant fruit as well as richness, a soft, creamy texture and bright acidity. There is no sense in bottle aging here drink this wine because of its crispness. $65 $75 Veuve Clicquot Rose Bright salmon pink colour with mousse of fine bubbles; light intensity of red fruit, floral and fresh baked bread aromas; dry with balanced acidity and creamy texture, red berry and citrus flavors. $125

The palate has vibrant red fruit flavors and floral notes, then deepens with hints of blood orange and blueberry jam. The finish brings on slight tobacco notes. $18 La Crema Pinot Noir Cherry Pie, cocoa and black tea aromas. Pomegranate, plum and orange zest flavors. All in all broad, concentrated, and lingering wines. $20 Sake Northern Skies Happy Bride It has just enough body to support the spare lines of its structure, making it the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Kamoizumi KomeKome is sake's equivalent of an offdry Riesling Kabinett. Mildly sweet, pleasantly tart, and showing enough acidity to keep it balanced, this is a delectable companion to Thai food, spicy curries, and an array of dessert tarts and custards. $18 $40

11 Apple Brandy Apple brandy can be made anywhere, but is most common in the United States. It is often produced from edible styles of apples, opposed to the inedible variants used by its brother spirit Calvados. The spirit usually carries through much more of the flavors typically associated with edible apples due to this fact. The first style of apple brandy produced in the U.S. was Applejack. It was made using a process known as ice distillation, in which the cider would be exposed to sub-freezing temperatures and some of the water would crystallize and separate out. This would concentrate the color, flavor and alcohol strength. Modern distillation practices have phased out ice distillation. Apple Brandy

12 Clear Creek Distillery 8 Year Pomme $10 This eight year apple brandy is the product of Oregon apples, fermented and then distilled in German-made pot stills. The nose is a nice blend apple, black currant and anise. The palate is surprisingly hot, given the age, with rich cinnamon notes reminiscent of rich apple pie. The heat dissipates quickly, leaving a rich apple cinnamon not lingering. Germain-Robin Apple Brandy $10 The aromas at the beginning are reminiscent of cognac, but give way to hints of fall apples, pear and vanilla. The taste is dominated by dry pear and creamy apple notes with a touch of citrus and a spicy oaky vanilla finish. Germain-Robin Apple Brandy X.O. $13 The nose is of freshly peeled apples with fleeting vegetal notes and touches of cinnamon, nutmeg and vanilla. Flavors of apple dominate the palate with touches of pear and orange with a finish of applesauce and candied apples. Laird s Applejack $5 Some caramel, apple, a little spice. Lacks the complexity of its older unblended siblings. Finish is hot. Laird s Bottled in Bond $6.50 Quite refreshing despite the alcohol "kick." Caramel and toffee notes with a big backbone of apple. A fine Brandy. Laird s 12 Year $14 Caramel, baked toffee and apple, vanilla, nutmeg notes to it, lingering notes of tobacco, crystallized ginger. Medium length finish. Much smoother than it's younger brothers. Armagnac Armagnac is a distinctive type of brandy produced only in the southwestern region of France, known as Armagnac. It is distilled once, typically through a column still which imparts a lighter, more fragrant body to the spirit. This is followed by aging in French oak

13 barrels, which softens the light body and imparts more complex flavors and a bronze hue. Armagnac is sold under several classifications, mostly referring to the age of the constituent brandies. Armagnac is also allowed to be sold under vintages. When Armagnacs of different ages have been blended, the age on the bottle refers to the youngest component. A three-star, or VS, Armagnac is a mix of several Armagnacs that have seen at least two years of aging in wood. For VSOP, the aging is at least four years, and for XO, at least six. Hors d'âge means the youngest component in the blend is at least ten years old. Older and better Armagnacs are often sold as vintages, with the bottles containing Armagnac from a single year, the year being noted on the bottle. Armagnac Clés des Ducs V.S.O.P. $8 Clés des Ducs VSOP is a warm and round eau de vie. With aromas of fresh fruit, spices and oak wood, it possesses the complexity and richness of an aged Armagnac. Clés des Ducs Napoleon $12 This Armagnac, composed of older eau de vie, is more complex and mellow, with richness and depth coming from its interactions with the oak in which it ages. This Napoleon has a weighted average blend of 11 years. Clés des Ducs X.O. $17.50 This is the culmination of the cellar master's blending skill. Various vintages of the oldest Armagnac are aged to perfection and blended to produce this jewel. The result is an Armagnac that will thrill every connoisseur, because of its complexity depth, aromas and taste. This X.O. has a weighted average blend of 15 years. Delord Napoleon $7 Rich, sweet fruit character on the palate, spicy and soft with candied fruit and walnut notes. Fruit driven brandy with an elegant, sophisiticated quality that almost makes you wish it was a little earthier and Armagnac-like. Big, chewy finish. Domaine d'espérance Blanche $13

14 Expressive aromas of stone fruit, pear and gentian root are accented by just a hint of raspberry on the nose. Elegant floral notes open up to a touch of bitter almond, cherry, and honeysuckle on the tongue with a dry spice that fades out on the finish. Armagnac Domaine d'espérance 5 Year $17 An enticing nose of dried fruit, caramel, spicy vanilla and black peppercorn gives way to a lively, medium-bodied palate boasting flavors of toffee, espresso, almond, tobacco leaf and pine. Notes of raisin and spicy oak linger through the clean, assertive finish. Domaine d'espérance 10 Year $25 This ten year is oaky but floral on the nose, with a touch of vanilla and chocolate. It imparts flavors of caramel and roasted pineapple, with a light lingering smoky tobacco-like finish. Domaine d'espérance Year $35 Aged for fourteen years, the nose of this armagnac is full of spice, oak, and a hint of a cornlike sweetness. Dry spice notes, specifically clove and black pepper, dominate until an underlying tawny port-like finish begins to take over. Domaine d'espérance Year $35 Aged for eighteen years, the nose of this Armagnac is full of sappy wine, powdery spices and toasted oak. The palate is very fruit forward with plum, cassis and brandied cherry notes that fade into a fairly oaky finish. Domaine d'espérance Year $35 Matured for nineteen years, it brings a compelling nose of raisin, plum, apricot, and sweet spice. Complex, well-integrated notes of dried fruit, coffee, hazelnut, vanilla, and oak emerge on the palate and linger through the long, mellow finish. Calvados

15 Calvados is a specific type of brandy made exclusively from distilled apple based cider. It can be made from upwards of one hundred different types of apples, all precariously blended together to form the flavor the distiller desires. Calvados must be aged in French oak for a minimum of two years, but is often aged much longer. Younger Calvados is very light and fruity, but they develop more deep Cognac-like notes with age. Calvados Christian Drouin Selection $10 A much younger Calvados with a very bright and lively bouquet. Although dryer and less complex than others, it provides a nice entry point into the world of Calvados. Christian Drouin Pays d Auge $30 Freshly crushed apple pulp attacks the nose when inhaling this beauty. Groult actually ages the cider for 6 months prior to distillation from 100% apples.

16 Christian Drouin 1968 Vintage $50 The vintage refers to the date of distillation. Very rare and very lovely, this Calvados shows notes of baked apples and apricots with a surprising freshness and liveliness for such an aged product. The palate shows vanilla and integrated oak and the finish is almost minty fresh. La Pommière Selection $10 Deep green apple and ripe bartlet pear notes, a touch of almond, a soft mouthfeel, and a pleasingly long finish that combines the richness and complexity of good Cognac with fresh, green apple flavors. Noble Dame Non-Vintage $12 Bright, brilliant, spicy ripe apple aromas. Textbook purity of fruit on the attack with a lively and lovely dance of fruit and spice flavors set in a soft texture on the follow up. Tart and lively on the finish. Roger Groult Reserve $7.50 The Roger Groult family distillery can be found in the hills of the Pays d'auge, where they've been making their Calvados for 5 generations! Distilled twice in traditional direct-fired stills, this Calvados was aged for 3 years. Calvados Roger Groult 8 Year $11 Roger Groult produces Calvados in Pays d'auge, France, using over 30 varieties of apple for a complex, intriguing flavor profile. Groult's 8 year old expression is matured in old French oak asks. Alongside the ripe, intense apple notes on the nose, you'll fine hints of rancio, raisins, cinnamon spice and a subtle nuttiness. Roger Groult 12 Year $17 12 year old Calvados Pays d'auge from the Roger Groult range. XO Calvados must be aged at least 6 years, resulting in rich, elegant floral notes on the nose and palate, along with chewy notes of hazelnut and a touch of mint. Roger Groult Venerable $20 A premium expression of Calvados from Roger Groult in Pays d'auge. Using Calvados which has aged for at least 18 years. This well aged expression features excellent oak-y notes alongside the mouth-filling fruit and gingerbread flavours. Roger Groult Xo Age d or $32

17 Groult's exceptional XO is a blend some very old estate Calvados distilled throughout the 20th century. One of the best values in Calvados considering the average age is around 30 years and it contains eau-de-vie over 80 years old. Roger Groult Doyen d Age $42 The Doyen d age is a blend with an average age of at least 70 years! Concentrated, rich and velvety its heady mix of baked apples, smoke, orange blossoms, tobacco and vanilla. Cognac Cognac is a specific type of brandy produced in one of the six Cognac regions of France, and is named after the town of Cognac. Regulations on Cognac are very strict, allowing only nine different grapes to be used in the process and each variety is only allowed to make up a certain portion of the final brandy. The wines made from these grapes are extremely dry, acidic and thin which makes them near undrinkable, but perfect for distillation. The designations of Cognac refer to the youngest brandy used in the blend; a V.S. indicating the youngest brandy being two years of age, a V.S.O.P. indicating at least four years of age from the youngest brandy, and an X.O. indicates at least six years of age from the youngest brandy. The average age from all of the brandys mixed typically is much higher than the minimum age denoted by the designation on the bottle. Younger Cognacs are typically more fruit oriented, with older ones giving way to flavors of nuts, vanilla and tobacco. Cognac Camus V.S. Elegance $8

A wide spectrum of flavors develop on the palate, where fresh and candied fruit notes (apricot, citrus fruit) intermingle with touches of honey, chocolate, almond and hazelnut. It reveals intense sweet pastry aromas alongside notes of cinnamon, dried fruit, old port and violet. A hint of almond emerges in the long-lasting finish. Comandon V.S.O.P. $10 Aromas of vanilla, dried fruits, spices & hints of caramel. Dark amber with shades of copper. This VSOP has an intense oak taste with well-balanced fruits combined with a rather round finish. Comandon X.O. $35 Aromas of almond, chocolate, slight leather, wild flowers & mature fruits. 19 Lots of young grape-y aromas come through on the nose here, with a Hawaiian Fruit punch quality on the soft palate. Any wood and spicy aromas are hard to uncover with all this fruit in the way. Courvoisier 12 Year Vintage $12 This Borderies eaux-de-vie develops a certain floral and spicy note after 12 years of ageing. The nose has notes of violets, orange blossoms, followed by ginger. The palate has Hints of vanilla, fine almonds and some raisin. Courvoisier Napoleon $14 The nose starts off with sandalwood, dried apricots and mushroom notes. The palate allows these to develop even further into a candied apricot note followed by earthy Portobello mushrooms and a distinct, light oak finish. The finish is extremely smooth, and lingering. Grape Brandy Brandy, or Brandywine, was initially a spirit made from distilling wine. The style has evolved over time, allowing brandy to be made from several different types of fruit instead of a being solely grape based. Originally made from wine, this spirit was known as the spirit of wine, or wine rectified. Aging is typically done in some type of oak casks. Some younger brandies may have caramel coloring added. There are several sub-types such as Armagnac, Calvados and Cognac which are all highly regulated and region specific.

Asbach 3 Year $10 This brandy is a deep golden colour and has aromas of honey, floral notes, grapes, and toasty oak on the nose. The palate is soft, mellow and smooth. There are grape, plum and nutty flavours leading to a lingering, balanced finish. Asbach 8 Year $12 Nice amber color with a hint of copper. Vanilla fills the nose with hints of cocoa and fine wood. The palate has a rather dry taste of dried fruits but is then followed by a subtle sweetness. Peppery finish accompanied by chocolate and coffee. Clear Creek Distillery Oregon Brandy $10 This Brandy is distilled from fine Oregon wines: Chardonnay, Pinot Noir, Muscat and Pinot Meunier. It is then aged in old and new French (Limousin) Oak. The result is a naturally amber colored brandy with a nice nose and clean finish and a very rich, full taste. Clear Creek Distillery Marc Brandy $10 This is the classic Alsatian marc. In the progression from floral to earthy the marc is a fairly big jump. The Gewürz nose is good but a little woodier than the Muscat. There is a little more jolt in the initial taste, but the finish is clean, not hot.

Germain-Robin Year Muscat $25 Notes typically associated with muscat wine dominate the nose of this brandy, leaving no doubt as to the grape used. Bold, spicy and bright forward notes dominate with a subtle, smokey oak finish. Germain-Robin Grape Brandy Year Semillon $25 Dry stonefruit nose with sweet, fat stonefruit and waxy honeycomb across the palate. The finish is full of warm baking spices and just a touch of vanilla.

Navazos Palazzi Fino Cask $20 The pale-colored Brandy de Jerez Solera Gran Reserva, a single barrel of Spanish Brandy aged in a Fino sherry cask, is laced with smoke, orange peel, pear, almond, flint and white stone fruits. Sweet spices, a hint of American oak and bright saline notes appear on the vibrant, dry, bracing finish. Navazos Palazzi Oloroso Cask $20 This Spanish brandy is an extremely rare gem. Aged for two years in Spanish oak, followed by four and a half years in a very old Oloroso sherry cask. The nose on this is pure, dry sherry with tons of dried fruit notes and some wood. The palate continues along the same lines with a dry wine feel, with some sweeter grape juice notes in the back. The finish has prunes and dried apricots. One of 720 half bottles ever produced. Grape Brandy Oscalis Rare Alambic $15 This blending of several varietals uses the precocious Pinot Noir as the base with Semillon and Colombard to provide structure and body. Consisting of mostly youthful ~6 year brandies, the Rare Alambic starts floral and fades into a rich fruit finish. Vecchia Romagna Etichetta Nera $6 This young Italian brandy is made from Trebbiano grapes, also known as Ugni Blanc, the main grape used for Cognac. The nose is full of dried apricot, vanilla and honey. The palate is strong, but somewhat dry with flavors of coffee beans, cinnamon, honey and a spicy finish. Vecchia Romagna 10 Year $10 This older Italian brandy starts with notes of dark red fruits and currant jam that are followed by hints of vanilla and French oak on the nose. The palate is moderately spicy with a rich molasses that fades into hints of blood orange and vanilla on the finish.

27 Grappa Grappa is a style of brandy made from pomace (the left over skin and pulp from the winemaking process). It originated from peasants being given the pomace at the end of work for their own uses, or the vineyard distilling it and using it as partial payment to their workers. There are no age requirements on grappa, with the majority being unaged and retaining most of the notes from the particular grape used. Grappa is also commonly identified by the grape pomace from which it was made due to the fact each batch would follow making a particular wine. It is primarily taken as a digestif after a meal to aid in the digestion. Grappa Clear Creek Distillery Pinot Noir $13 This grappa is made from pomace from Lemelson winery. The result is a very clean grappa with good pinot noir character, a good jolt when you taste it, and a very clean finish.

28 Inga Barolo $13 Very clean nose, with characteristics of the grape from which it is produced. Dry and robust on the palate with hints of iris. Inga Dolcetto $13 Fruity, dry and floral on the nose with cherry pit-like bitterness and a slightly tannic finish. Inga Gavi di Gavi $13 Very dry and slightly astringent nose, with savoy notes of bitter almond. Inga Moscato $13 Notes of peach and apricot and a touch of sage on the nose. Very aromatic on the palate, typical of the grape, with hints of rose. Inga Pinot Noir $13 A touch of blackcurrant and some wildberries on the nose. Silky smooth on the palate with hints of wildberries, blackberries and blackcurrant. Inga Prosecco $13 Floral and fruity nose, typical of the grape. Bright fruit dominates the palate with hints of baked apple. Other Fruit This describes any type of brandy produced from a fruit other than apples or grapes. They may be aged or unaged. Clear Creek Distillery Eau de Vie de Poire $15 This classic pear brandy is made with fresh Bartlett pears grown in the Hood River Valley and distilled in German-made pot stills. The nose is overwhelming with pear and a slight hint of cantaloupe. The taste is just like fresh pears, with just a hint of citrus at the end and a crisp short finish.

Laurent Cazottes Reine Claude $20 The Reine Claude, also known as a greengage plum, dominates both the nose and palate of this Eau de Vie. Notes of honey, fresh citrus and a distinct pear tartness are present on the nose, followed by green grape notes on the palate.

30 Pisco Pisco is a style of brandy produced exclusively in the winemaking regions of Peru and Chile. It was developed by Spanish Settlers in the 16th century out of need to concentrate alcohol volume in order to transport it to remote locations. Peruvian Pisco is produced only using copper pot stills and from actual wine as opposed to a column still or from a pomace. Peruvian Pisco in particular is never diluted after distillation, and is bottled at the same proof as distilled. There are several different designations for Pisco; Puro (pure) is distilled from wine made from a single style of grape, Aromáticas (aromatic) are made from specifically Muscat or Muscat derived grapes, Acholado (multivarietal) is made from several different varieties of grapes. Pisco must be aged for a minimum of three months in vessels of glass, stainless steel or any other material which does not alter its physical, chemical or organic properties I.e. wood. Pisco Barsol Quebranta $10 The nose has subtle aromas and flavors of hay, banana, bakers pastry and ripe dark berry fruit balanced with delicate citrus notes, apricot blossom with pecan and dark chocolate notes, that evolve into a seductively long and elegant finish. Campo de Encanto Quebranta $12 100% Uva Pura. Gold medal winner at Peru's national pisco festival This impressive little pisco comes from sustainably farmed grapes of the Quebranta variety. Also known as Palomino Negro, Pais or Mission, this varietal is perfectly

31 suited for the creation of incredibly complex distillates. It is distilled once and nothing (not even water) is added before bottling. Quantities are very limited for this unique and special Pisco. Campo de Encanto Moscatel $12 A highly-aromatic and wonderfully fragrant single vineyard Muscat expression of Pisco from local Bay Area boys Campo de Encanto. Working with their contacts in Peru, they've assembled one of the most exciting lineups of pisco the world has ever known. This limited edition version showcases what each grape brings to the party. In the case of Moscatel, it's a ton of fruity flavor! Madeira Madeira is a fortified Portuguese wine made in the Madeira Islands. Madeira is produced in a variety of styles ranging from dry wines which can be consumed on their own as an aperitif, to sweet wines more usually consumed with dessert. To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavor of the wine. This was discovered by the wine producers of Madeira when an unsold shipment of wine returned to the islands after a round trip. Today, Madeira is noted for its unique winemaking process which involves heating the wine up to temperatures as high as 60 C (140 F) for an extended period of time and deliberately exposing the wine to some levels of oxidation.

The Rare Wine Company New York $25 Very dark orange brown color with ruby lights and yellow meniscus; appealing, praline, toffee nose; very tasty, praline, vaguely saline, toffee palate with good acidity and a long finish. The Rare Wine Company New Orleans $25 Inviting nose of bitter nutskin, honey and floral scents. Excellent attack, with burnt sugar, fruit cake and assorted nut flavors. Vinhos Barbeito 3 Year $12 The nose has a nutty, slightly fish oil character, with a dry, wax and straw note. 33 Pineau des Charentes Pineau is an odd spirit made from a blend of wine or unfermented grape juice and at least one year old cognac. It is only produced in the Charentes region of France by several small producers, and most is typically consumed in the region itself. There are a wide variety of types that can be made from white, or red wine and are aged anywhere from a few months to several decades in Cognac casks. Longer aging brings forth darker, more Cognac-like flavors. Paul-Marie & Fils Vieux Pineau $20 The nose starts with notes of dark, dried fruits such as raisins, plum and cherries. The palate carries these through, along with distinct oaky notes and a healthy dose of vanilla. Pierre Ferrand Pineau $10 The nose starts with honey and tilleul, mixed with fresh fruit such as fig and peach. The palate starts with deep honey and almond notes and finished with a touch of vanilla. Asbach A & A $8 This German version of Pineau combines auslese Riesling with Asbach brandy. The nose brings forth notes of both auslese and brandy. The palate has a sweet assortment of both fresh and dried fruits with hints of oak. Pommeau

34 Pommeau is another odd spirit made from a blend of hard cider and at least one year old Calvados. It is only produced in Normandy, France by a variety of small producers, and is most typically consumed in the region itself. It can be aged anywhere from a few months in Calvados barrels, to several years. Longer aging brings forth darker, nuttier flavors typically found in Calvados. Aperitif Normand Pommeau Du Domaine De Semainville $15 Pommeau is a French aperitif made from a combination of apple cider, and Calvados. As one would expect, baked apple is one of the main notes, followed by smoke, licorice and toffee. Port Wine Port wine, or Vinho do Porto, is a fortified wine made exclusively in the Douro Valley in the northern portion of Portugal. It is typically a sweet, red wine often served as a dessert wine, but it can also be dry, semi-dry, or even a white wine base. The two most prominent types of Port wine are Ruby and Tawny. Ruby Ports are the youngest style, and they are very sweet and fruit forward; they typically do not improve with age after being bottled. Tawny Ports are wines, made from red grapes that are aged in wooden barrels exposing them to gradual oxidation and evaporation. As a result, they gradually mellow to a golden-brown color. The exposure to oxygen

35 imparts "nutty" flavors to the wine. These are typically labeled to indicate the youngest wine used in the blend. Port Wine Barbeito Malvasia 10 Year Tawny $8 Although Malvasia (or Malmsey) is the sweetest style of Madeira that Barbeito produces, it's always incredibly delicate. The 10 year old Malvasia is remarkably fresh with aromas and of creamy toffee and nuts followed by notes of orange citrus, hazlenut, and a dusting of chocolate. Barao De Vilar 10 Year Tawny $15 Deep gold/brown color and is ripe and almost sweet (but with just enough dryness).
