2 FOOD Trends I for one am definitely looking forward to springing Summer! The weather over the past few months has been crazy, fingers crossed for some dry settled days to come so we can get the BBQ s out and enjoy the longer evenings, which if you are anything like me will bring some Instagramable moments. In this month s trend update we are looking at just that, Instagramable coffees, the increased focus on recyclable cups, and a glimpse the future (maybe!) with lab grown meat, would you fancy grilling that on your BBQ??? Dr. Deirdre Moriarty Trends Expert More companies going green We know that there has been a renewed focus in food service outlets on minimising food waste, but of late food packaging has also been a hot topic with a proposed levy on disposable coffee cups to minimise their use and impact on the environment. Donut giant Dunkin Donut has outlined their commitment to move for their iconic polystyrene foam cups to a paper cup by This has come on the back of petitions and negative feedback from customers. We re all guilty of it, looking for the ultimate food porn pic for our Instagram feed but Starbucks makes it very easy for their customers to get a great coffee pic. In 2017 it was the unicorn Frappuccino, and now Starbucks has launched a colour changing cold brew. The drink features cold brew coffee, lemonade and butterfly pea flower tea which has a distinctive natural blue colour. Currently only available in South East Asia, I hope we see it in Ireland soon! It might sound more science fiction that science fact but there is a growing amount of research being done in the United States on cultured meat. In essence cultured meat would produce meat without slaughtering an animal. Starting cells are taken from a live animal and are then grown in lab conditions to create a piece of meat. To put this perspective a hamburger can be grown in 9 weeks! There are lots of questions around, texture, flavour, price and supply, but projections are that we could see cultured meat on sale in America by
